Abstract
La presente invención se refiere a un procedimiento biotecnológico para la producción de un polen fermentado, que comprende la inoculación de polen con por lo menos una bacteria láctica de la especie Lactobacillus kunkeei seleccionada de Lactobacillus kunkeei PF12 (DSM 32843), PF13 (DSM 32845) y/o PL13 (DSM 32844), y la fermentación del polen inoculado con dicha bacteria láctica; el polen fermentado obtenido tiene propiedades nutricionales y organolépticas similares al polen almacenado por las abejas producido naturalmente dentro del panal de la colmena, y encuentra aplicación en el campo alimentario y nutracéutico; la invención abarca además las cepas de Lactobacillus kunkeei PF12 (DSM 32843), PF13 (DSM 32845) y/o PL13 (DSM 32844) como tales, y composiciones que comprenden estas cepas.
