Abstract
Изобретение относится к биотехнологическому способу производства ферментированной пыльцы, включающему инокуляцию пыльцы по меньшей мере одной лактобактерией вида Lactobacillus kunkeei, выбранной из Lactobacillus kunkeei PF12 (DSM 32843), PF13 (DSM 32845) и/или PL13 (DSM 32844) и ферментацию пыльцы, инокулированной указанной молочной бактерией. Полученная ферментированная пыльца имеет питательные и органолептические свойства, аналогичные свойствам перги, производимой естественным образом в сотах улья, и находит применение в пищевой и нутрицевтической области. Изобретение также включает Lactobacillus kunkeei PF12 (DSM 32843), PF13 (DSM 32845) и/или PL13 (DSM 32844) как таковые и композиции, включающие эти штаммы.
