Abstract

La presente invención se relaciona con una bacteria de la especie Lactobacillus fermentum en donde la bacteria tiene la capacidad de reducir la concentración del acetaldehído producido por un cultivo iniciador durante la fermentación en un producto de leche fermentada por al menos un 50%. La invención se refiere además a composiciones que comprenden la bacteria, los métodos para producir productos de leche fermentada con el uso de la bacteria y los productos así obtenidos.
