Abstract

La presente invención se refiere a mutantes de bacterias de ácido láctico que son resistentes al antibiótico D-cicloserina y/o antibióticos funcionalmente equivalentes, y que se encuentra que da una textura incrementada cuando se cultivan en leche en tanto que mantienen las otras propiedades de crecimiento de la cepa de origen. Adicionalmente la presente invención se refiere a composiciones que comprenden estos mutantes y a productos de leche fermentados con la bacteria de ácido láctico resistente a D-cicloserina y/o antibióticos funcionalmente equivalentes.
