Claims (15)

1. Способ получения спиртных напитков, отличающийся тем, что применяют газлифтный биореактор с внутренней циркуляцией для осуществления стадии непрерывного брожения, на которой содержащее сбраживаемые сахара сусло сначала подвергают брожению с использованием клеток флокулентных дрожжей, иммобилизованных путем самоагрегации при ограничении подачи кислорода, и затем по меньшей мере частично сброженный продукт, полученный в результате непрерывного процесса, подвергают завершающей стадии периодической обработки.
2. Способ по п.1, где спиртной напиток представляет собой пиво.
3. Способ по п.2, где пиво представляет собой светлый сорт пива.
4. Способ по п.3, где пиво представляет собой лагерное пиво.
5. Способ по п.1, где пиво представляет собой Североамериканский сорт пива.
6. Способ по п.1, где дрожжи представляют собой высокофлокулентные или суперфлокулентные дрожжи.
7. Способ по п.1, где брожение представляет собой главное брожение.
8. Способ по п.1, где сусло продувают диоксидом углерода перед брожением.
9. Способ по п.1, где в качестве распыляемого газа в реакторе применяют диоксид углерода, содержащий приблизительно 3% кислорода.
10. Способ по п.1, где после окончания главного брожения применяют стадию выдерживания партии.
11. Способ по п.10, где осуществляют уменьшение концентрации диацетила.
12. Способ по п.10, где осуществляют уменьшение концентрации ацетальдегида.
13. Способ по п.10, где концентрация высших спиртов сивушных масел остается практически постоянной в течение стадии обработки, заключающейся в выдерживании партии.
14. Способ по п.1, где продукт, полученный после стадии непрерывного брожения, переносят с помощью системы трубопроводов в один или несколько резервуаров для выдерживания сусла, в которых осуществляют процесс выдерживания партий.
15. Способ по п.1, где непрерывный процесс представляет собой процесс получения дрожжей, предназначенных для последующего брожения партии на стадии выдерживания партии.
