PROCEDIMIENTO PARA OBTENER PRODUCTOS ALCOHOLICOS FERMENTADOS. SE SOMETE UN SUBSTRATO QUE CONTIENE HIDRATOS DE CARBONO, TAL COMO CERVEZA NO FERMENTADA, A UNA FERMENTACION PRINCIPAL Y A UN PROCESO DE MADURACION. EL SUBSTRATO EN FERMENTACION SE TRATA CON UNA ENZIMA, EN UN ESTADO INMOVILIZADO, DE CONVERSION DEL ACETOLACTADO, TAL COMO UNA DESCARBOXILASA DE ACETOLACTATO RECUPERADA DEL MICROORGANISMO AEROBACTER AEROGENES, DURANTE EL PROCESO DE MADURACION. PARA LA PRODUCCION DE VINO EL PROCESO DE MADURACION COMPRENDE UNA FERMENTACION MALOLACTICA DURANTE LA CUAL SE REALIZA EL TRATAMIENTO CON LA ENZIMA DE CONVERSION DE ACETOLACTADO.
