Abstract

Раскрывается усовершенствованный способ пастеризации для пастеризации микробных клеток. Способ включает три стадии, первую стадию нагревания, вторую стадию плато, на которой клетки выдерживают при (максимальной и) постоянной температуре и третью стадию охлаждения. Обе стадии нагревания и охлаждения являются быстрыми при нагревании клеток от 40 до 80°С, в течение не более 30 мин на стадии нагревания. Скорость нагревания составляет по меньшей мере 0,5°С/мин и во время охлаждения, по меньшей мере, -0,5°С/мин. Максимальная температура на стадии плато составляет от 70 до 85°С. При представлении протокола пастеризации в виде графика зависимости времени (t, мин) от температуры (Т, °С) получают трапецию, имеющую площадь менее 13000°С∙мин. Это приводит не только к меньшим вложениям энергии (и таким образом снижению затрат), но также к лучшему качеству масла (менее окисленному), имеющему значение перекисного числа (POV) менее 1,5 и значение анизидинового числа (AnV) менее 1,0.
