技术领域
本发明涉及食品加工技术领域,具体涉及一种香蕉干及其制备方法。
背景技术
香蕉的果肉中富含糖、果胶、纤维素、多种维生素和无机盐等营养成分以及黄酮类化合物、多酚氧化酶、挥发油等多种活性成分,具有较高的营养价值和保健作用。为了解决香蕉易腐烂变质的特点,不易保存的问题,可在产地或产地附近把已成熟的无法再继续贮藏或运输的香蕉加工成熟香蕉干,不但能减少由于腐烂而造成经济损失,还能调济市场,增加收入。
香蕉片加工工艺为:将香蕉切片后采用护色剂进行护色处理,接着采用热风干燥、热泵干燥、热风干燥、微波干燥等干燥技术对香蕉片进行干燥处理得到香蕉片。目前,许多专家学者对香蕉片的干制工艺研究较多,研究的方向主要在于如何提高香蕉片的品质,提高干燥效率等,对于青香蕉的加工利用研究较少。目前对于香蕉干的产品主要是香蕉片,对于整个不切片完整的整根香蕉干的研究也较少。
青香蕉含有丰富的抗性淀粉,加工制成香蕉干具有减肥等保健作用,青香蕉干的加工工艺研究具有重大的意义。
发明内容
本发明克服了现有技术中将半熟的香蕉切取外表皮,留内表皮,由于香蕉未完全熟,其易流出具有涩味易粘结易变黑的汁液,易污染设备,同时香蕉片外观不好,香蕉干可能会存在难剥皮,同时香蕉压扁过程中,香蕉皮也易破碎等技术问题,提供可一种香蕉干及其制备方法。
为解决上述问题,本发明采取如下技术方案:
一种香蕉干的制备方法,其包括如下步骤:
(1)灭酶处理:将五成熟的香蕉洗净后,采用微波钝化酶1~3min;
(2)削皮:用刀削去香蕉部分外表皮,留部分内表皮;
(3)压制:将香蕉压制成片;
(4)预干燥:将压片的香蕉干燥至水分百分含量为15~20%;
(5)浸渍:再将预干燥后的香蕉置于风味调节液或清水中浸泡1~3min;
(6)干燥:将浸渍后的香蕉取出后置于多层翻转网带式烘干机55~65℃烘干4~5h后,晾凉包装。
其中,所述微波钝化酶的微波功率为150~200W,微波频率为900~1000MHz。
其中,所述风味调节液含有甜味剂、酸味剂、鲜味剂、香精、营养强化剂、中药保健剂的一种或多种。
为了丰富香蕉干的口感,香蕉风味调节剂可根据需要选择甜味剂、酸味剂、鲜味剂、香精、营养强化剂、中药保健剂的一种或多种复合。
其中,甜味剂可选择蔗糖、蜂蜜、乳糖、麦芽糖、山梨糖醇、麦芽糖醇、甘草素的一种或几种。
其中,酸味剂可选择柠檬酸、乳酸、酒石酸、苹果酸、偏酒石酸、醋酸的一种或多种。
其中,鲜味剂可选择谷氨酸钠、肌酸磷酸二钠、琥珀酸二钠中的一种或多种。
其中,营养强化剂可选择维生素复合剂、矿物质复合剂、氨基酸复合剂、大豆蛋白、二十二碳六烯酸(DHA)、膳食纤维、卵磷脂中一种或多种。矿物质由钙、铁、锌、硒、镁、钾、钠、铜元素中的一种或多种组成,维生素由维生素A、维生素D、维生素E、维生素C、B族维生素、叶酸、生物素中的一种或者多种组成,氨基酸可为牛磺酸、赖氨酸的或者两种。
其中,中药保健剂可根据需要选择具有某种功效(如减肥、降血压、降血脂、止咳、消炎、增强免疫力等)的中药配方制成药液添加入风味调节液以达到保健或治疗目的。
其中,所述风味调节液中水分的质量百分含量≥80%。

本发明与现有技术相比较具有以下有益效果:
(1)本发明将五成熟的香蕉制成香蕉干,其含有丰富的抗性淀粉,可作为减肥食品食用,同时可在风味调节液中添加营养强化剂以及中药保健剂制成具有某种保健作用的香蕉干,也可根据市场需求添加甜味剂、酸味剂、鲜味剂、香精等制成不同口感、不同风味的香蕉干。本发明制成的香蕉干可直接食用,也可作为食品原材料制成不同风味,不同营养价值、保健价值的产品,食用效果好,营养价值和保健价值高。
(2)本发明香蕉干将五成熟香蕉用刀削去外表皮,留部分内表皮,整根香蕉烘干,营养不流失,保留内表皮,果肉不接触空气,不易褐变,产品外观好,且内表皮防止烘干时黏连托盘,适用于网带式烘干机;本发明的香蕉干有香蕉皮内表皮保护,产品不易吸潮,易保存;产品形式新颖。
(3)本发明将半熟的香蕉切取外表皮,留内表皮,由于香蕉未完全熟,其含有鞣酸、多巴胺、多酚等易流出具有涩味易粘结易氧化变黑的汁液,易污染设备,同时会使香蕉干外观不好,本发明将整个香蕉进行微波钝化酶后,使香蕉细胞中的多酚氧化酶等酶失活,再削香蕉皮时,即使有香蕉汁液流出,由于汁液中的酶已失活,汁液遇到氧气也不会发生酶促褐变,不会导致香蕉外观变黑,制成的香蕉干颜色成淡黄色,不发黑,外观好。
(4)本发明的香蕉干的香蕉内表皮与香蕉肉是粘合在一起的,削皮后直接烘干会存在香蕉干难剥皮的技术问题,本发明将香蕉干进行预干燥后,使香蕉水分在15~20%之间,再将香蕉浸渍于清水或者香蕉风味调液中,预干燥后的香蕉遇到水分,由于香蕉内表皮和香蕉肉质构不一样,吸水率以及吸水速率不一样,香蕉内表皮首先遇水膨胀撑开,而香蕉内还处于缺水的干瘪状态,使得香蕉皮和香蕉肉分离,不粘合在一起,之后再将香蕉干干燥制成产品,香蕉干易剥离,解决了香蕉干难剥皮的技术问题。
(5)本发明香蕉干制备工艺中,将香蕉压扁前将香蕉浸渍于热水中,一方面可洗去香蕉皮流出的汁液,防止香蕉汁液污染干燥设备,另一方面,香蕉皮遇到热水会软化,再进行香蕉压扁工序时,香蕉皮不易破碎,香蕉皮完整无损,解决了香蕉压扁过程中,香蕉易破碎的问题。
具体实施方式
下面结合实施例和试验对本发明作进一步说明。
实施例1
一种香蕉干的制备方法,包括如下步骤:
(1)灭酶处理:将五成熟的香蕉洗净后,采用微波功率为200W,微波频率为900MHz的微波条件下钝化酶3min;
(2)削皮:用刀削去香蕉部分外表皮,留部分内表皮;
(3)压制:将香蕉浸渍于80℃的热水中60s后,再将香蕉压制成片;
(4)预干燥:将压片的香蕉干燥至水分百分含量为15%;
(5)浸渍:再将预干燥后的香蕉置于清水中浸泡3min;
(6)干燥:将浸渍后的香蕉取出后置于多层翻转网带式烘干机55℃烘干5h后,晾凉包装。
实施例2
一种香蕉干的制备方法,包括如下步骤:
(1)灭酶处理:将五成熟的香蕉洗净后,采用微波功率为150W,微波频率为1000MHz的微波条件下钝化酶1min;
(2)削皮:用刀削去香蕉部分外表皮,留部分内表皮;
(3)压制:将香蕉浸渍于100℃的热水中30s后,再将香蕉压制成片;
(4)预干燥:将压片的香蕉干燥至水分百分含量为20%;
(5)浸渍:再将预干燥后的香蕉置于水分的质量百分含量80%的风味调节液中浸泡1min;所述的风味调节液中含有甜味剂,所述甜味剂为蔗糖;
(6)干燥:将浸渍后的香蕉取出后置于多层翻转网带式烘干机65℃烘干4h后,晾凉包装。
实施例3
一种香蕉干的制备方法,包括如下步骤:
(1)灭酶处理:将五成熟的香蕉洗净后,采用微波功率为180W,微波频率为950MHz的微波条件下钝化酶2min;
(2)削皮:用刀削去香蕉部分外表皮,留部分内表皮;
(3)压制:将香蕉浸渍于90℃的热水中50s后,再将香蕉压制成片;
(4)预干燥:将压片的香蕉干燥至水分百分含量为18%;
(5)浸渍:再将预干燥后的香蕉置于水分的质量百分含量90%的风味调节液中浸泡2min;所述的风味调节液中含有甜味剂、营养强化剂、中药保健剂,其中,甜味剂为麦芽糖醇和蔗糖,营养强化剂由维生素复合剂、矿物质复合剂、氨基酸复合剂组成。其中矿物质由钙、铁、锌、硒、镁、钾、钠组成,维生素由维生素A、维生素D、维生素E、维生素C、B族维生素、叶酸、生物素组成,氨基酸为牛磺酸、赖氨酸;所述中药保健剂为山楂、甘草、菊花、柴胡制成的药液。
(6)干燥:将浸渍后的香蕉取出后置于多层翻转网带式烘干机60℃烘干4.5h后,晾凉包装。
实施例4
一种香蕉干的制备方法,包括如下步骤:
(1)灭酶处理:将五成熟的香蕉洗净后,采用微波功率为180W,微波频率为950MHz的微波条件下钝化酶2min;
(2)削皮:用刀削去香蕉部分外表皮,留部分内表皮;
(3)压制:将香蕉浸渍于90℃的热水中50s后,再将香蕉压制成片;
(4)预干燥:将压片的香蕉干燥至水分百分含量为18%;
(5)浸渍:再将预干燥后的香蕉置于水分的质量百分含量90%的风味调节液中浸泡2min;所述风味调节液中含有香精、营养强化剂、中药保健剂,所述香精味香蕉香精,营养强化剂由维生素复合剂,其由维生素A、维生素D、维生素E、维生素C、B族维生素、叶酸、生物素组成;所述中药保健剂为党参、茯苓、白术、荷叶制成的药液。
(6)干燥:将浸渍后的香蕉取出后置于多层翻转网带式烘干机60℃烘干4.5h后,晾凉包装。
对照组1
对照组1的香蕉干制备方法为:将五成熟的香蕉洗净后,用刀削去香蕉部分外表皮,留部分内表皮;再将香蕉压制成片;将香蕉置于多层翻转网带式烘干机55~65℃烘干4~5h后,晾凉包装。
对照组2
对照组2与实施例1香蕉干制备工艺基本相同,区别在于,对照组2的去除外表皮后不进行预干燥。
对照组3
对照组3与实施例1香蕉干制备方法基本相同,区别在于,对照组3对香蕉去除外表皮前不进行微波钝化酶处理。
对照组4
对照组4与实施例1香蕉干制备方法基本相同,区别在于,对照组4将香蕉压片前不对香蕉进行热水浸泡处理。
1、食品感官评价
挑选食品感官评价专业人员10人组成感官评定小组,参照评价标准见表1。所有待评样品随机分为10份发给评定员,逐一对样品进行感官评价,评定员每评定完一个样品后用纯净水漱口,5min后再评定下一个样品。感官评价从色泽、组织形态、口感与风味等方面对样品进行评定,食品感官评定结果取平均值,记录如下表2。

2、吸潮实验
将实施例1~实施例4以及对照组1~对照组4的香蕉干置于室内中,置于果篮中放置5d,参照GB5009.3-2016《食品安全国家标准食品中水分的测定》测回潮实验前后定香蕉干的水分百分含量,其上升幅度记录在下表3中,并对香蕉干的口感进行评定,结果如下表3.

由表2和表3可知,上述实施例1~实施例4制成的香蕉干感官评价评分高,外观好,颜色为淡黄色,香蕉干完整,不破碎,形状好,产品易剥皮,方便食用,香蕉干不易吸潮,易保存,香蕉干营养价值高,保健效果好。而对照组1将五成熟的香蕉洗净后,用刀削去香蕉部分外表皮,留部分内表皮;再将香蕉压制成片;将香蕉置于多层翻转网带式烘干机55~65℃烘干4~5h后,晾凉包装得到的香蕉干,色泽和组织状态评分差,香蕉干易吸潮。对照组2的去除外表皮后不进行预干燥,其组织状态评分差,香蕉干易吸潮。对照组3对香蕉去除外表皮前不进行微波钝化酶处理。香蕉色泽差。对照组4将香蕉压片前不对香蕉进行热水浸泡处理。香蕉组织状态评分差,香蕉皮易破,成型差,香蕉干易吸潮。以上说明本发明将五成熟的香蕉洗净后钝化酶,再用刀削去香蕉部分外表皮,留部分内表皮;再将香蕉浸渍于热水后将香蕉压制成片;再将压片的香蕉干预干燥,再浸渍,再干燥得到香蕉干,外观好,颜色为淡黄色,香蕉干完整,不破碎,形状好,产品易剥皮,方便食用,香蕉干不易吸潮,易保存,香蕉干制备工艺中还可以浸渍风味调节液,香蕉干营养价值高,保健效果好。
上述说明是针对本发明较佳可行实施例的详细说明,但实施例并非用以限定本发明的专利申请范围,凡本发明所提示的技术精神下所完成的同等变化或修饰变更,均应属于本发明所涵盖专利范围。
Claims (10)
1.一种香蕉干的制备方法,其特征在于,其包括如下步骤:
(1)灭酶处理:将五成熟的香蕉洗净后,采用微波钝化酶1~3min;
(2)削皮:用刀削去香蕉部分外表皮,留部分内表皮;
(3)压制:将香蕉压制成片;
(4)预干燥:将压片的香蕉干燥至水分百分含量为15~20%;
(5)浸渍:再将预干燥后的香蕉置于风味调节液或清水中浸泡1~3min;
(6)干燥:将浸渍后的香蕉取出后置于多层翻转网带式烘干机55~65℃烘干4~5h后,晾凉包装。
2.根据权利要求1所述的一种香蕉干的制备方法,其特征在于,所述微波钝化酶的微波功率为150~200W,微波频率为900~1000MHz。
3.根据权利要求1所述的一种香蕉干的制备方法,其特征在于,所述风味调节液含有甜味剂、酸味剂、鲜味剂、香精、营养强化剂、中药保健剂的一种或多种。
4.根据权利要求3所述的一种香蕉干的制备方法,其特征在于,所述甜味剂为蔗糖、蜂蜜、乳糖、麦芽糖、山梨糖醇、麦芽糖醇、甘草素的一种或几种。
5.根据权利要求3所述的一种香蕉干的制备方法,其特征在于,所述酸味剂为柠檬酸、乳酸、酒石酸、苹果酸、偏酒石酸、醋酸的一种或多种。
6.根据权利要求3所述的一种香蕉干的制备方法,其特征在于,所述鲜味剂为谷氨酸钠、肌酸磷酸二钠、琥珀酸二钠的一种或多种。
7.根据权利要求1所述的一种香蕉干的制备方法,其特征在于,所述营养强化剂为维生素复合剂、矿物质复合剂、氨基酸复合剂、大豆蛋白、二十二碳六烯酸、膳食纤维、卵磷脂的一种或多种。
8.根据权利要求1所述的一种香蕉干的制备方法,其特征在于,所述风味调节液中水分的质量百分含量≥80%。
9.根据权利要求1所述的一种香蕉干的制备方法,其特征在于,所述步骤(3)压制进行压制前,将香蕉浸渍于80~100℃的热水中30~60s。
10.一种权利要求1-9所述的一种香蕉干的制备方法制备的香蕉干。
