제6도는 MALTOSE HHH(상품화된 분말결정성 베타-말토오스 수화물)의 X-선 회절 스펙트럼이다.
Claims (20)
- 말토오스 함량이 건조 고형물 중량을 기준으로 85중량 % 또는 그 이상인 고순도 말토오스로 부터 수분함량 10중량 %미만의 고농도 시럽을 제조하고 ; 50 내지 130℃범위 온도와 씨결정 존재하의 이 시럽으로부터 알파-말토오스를 결정화시키며 ; 또 건조 고형물 중량을 기준으로 알파-말토오스 이성체 함량 55중량% 또는 그 이상을 갖는 수득된 결정성 알파-말토오스를 회수하는 단계로 구성되는 결정성 알파-말토오스의 제조방법.
- 제1항에 있어서, 고농도 시럽의 수분함량범위가 2.0 내지 9.5중량 %인 결정성 알파-말토오스의 제조방법.
- 제1항에 있어서, 결정화 단계가 비교적 고압하에서 진행되는 결정성 알파-말토오스의 제조방법.
- 제1항에 있어서, 결정화 단계가 탈수건조하에서 진행되는 결정성 알파-말토오스의 제조방법.
- 제1항에 있어서, 결정화 단계가 결정화 단계와 후속숙성단계로 구성되는 결정성 알파-말토오스의 제조방법.
- 제1항에 있어서, 이 알파-말토오스가 미분쇄 형태인 결정성 알파-말토오스의 제조방법.

- 제1항에 있어서, 결정성 알파-말토오스가 CuK선에 의한 X-선 회절분석에서 우세한 회절각(2)이 12.6°,20.3°, 및 21.9°를 나타내는 결정성 알파-말토오스의 제조방법.
- 식료품에 결정성 알파-말토오스를 혼합함을 특징으로 하는 식료품의 제조방법.
- 제11항에 있어서, 결정성 알파-말토오스를 용해시키지 않고 혼합단계를 진행시키는 식료품의 제조 방법.
- 제11항에 있어서, 결정성 알파-말토오스가 건조 고형물 중량을 기준으로 55중량 %이상의 알파말토오스 이성체를 함유하는 식료품의 제조방법.
- 제11항에 있어서, 이 알파-말토오스가 건조 고형물 중량을 기준으로 말토오스 함량이 85중량 % 또는 그 이상인 고순도 말토오스 중에서 결정화되는 식료품의 제조방법.
