本发明涉及一种食品的加工方法,尤其是涉及一种风味凤梨果酱的制作方法。
背景技术
凤梨果形美观,果肉金黄,汁多味甜、营养极为丰富。凤梨中含有丰富的柠檬酸和蛋白酶,能软化肉类,帮助消化和促进营养吸收。凤梨营养丰富,其成分包括糖类、蛋白质、脂肪、维生素A、B1、B2、蛋白质分解酵素及钙、磷、铁、有机酸类、尼克酸等,尤其以维生素C含量最高。
据专家研究表示,凤梨中所含的蛋白质分解酵素可以分解蛋白质及助消化,对于长期食用过多肉类及油腻食物的现代人来说,是一种很合适的水果。另外,凤梨的诱人香味则是来自其成分中的酸丁酯,具有刺激唾液分泌及促进食欲的功效。凤梨味甘、微酸,性微寒,有清热解暑、生津止渴、利小便的功效,可用于伤暑、身热烦渴、腹中痞闷、消化不良、小便不利、头昏眼花等症。而且在果汁中,还含有一种跟胃液相类似的酵素,可以分解蛋白,帮助消化。美味的凤梨,这种水果不仅可以减肥,而且对身体健康有着不同的功效。
凤梨通常鲜食,水分易流失,不耐贮藏,用于加工成风味凤梨果酱可实现对凤梨原料的综合利用,且便于储存,提高其经济价值。

本发明的目的是解决凤梨不耐贮藏问题,提供一种风味凤梨果酱的制作方法。
本发明解决其技术问题所采取的技术方案是:
一种风味凤梨果酱的制作方法,其特征在于:采用原料预处理→切片→预煮→打浆→精磨煮制→调味→装瓶→灭菌→成品的加工工艺流程,具体操作步骤为:
A、原料预处理:包括原料选择、除杂、清洗的一些工序,在原料选择方面,挑选的凤梨为九成熟;
B、打浆、精磨:将凤梨切片、打浆后,再用胶体磨精磨,使酱体细腻均匀;
C、煮制:将凤梨酱加热煮制,煮制过程中要不断搅拌,热至沸腾;
D、调味:加入麦芽糖、甘草液、洋甘菊粉、玫瑰酱和百香果汁,充分搅拌,混合均匀,用苹果酸调整pH为3.5;
E、装瓶:将风味凤梨果酱趁热装入已经消毒处理过的瓶内,降温至35℃;
F、灭菌:排气封口后,将瓶置于沸水中灭菌15分钟,取出冷却,即为成品。
有益效果:本发明产品呈浅黄色,清香可口,具有凤梨清甜的风味;本产品富含多种维生素,可以促进肠胃消化,具有清热解暑、生津止渴、瘦身美容的功效。易于贮藏,方便携带,一年四季皆可食用,是一种绿色健康的营养果酱。
具体实施方式
实施例1:
一种风味凤梨果酱的制作方法,具体操作步骤为:
A、原料预处理:包括原料选择、除杂、清洗的一些工序,在原料选择方面,挑选的凤梨为八成熟,不可过度成熟,以防粗纤维太多而影响风味凤梨果酱的外观和口感;将龙眼去壳和核,取其果肉,洗净沥干水;
B、打浆、精磨:将凤梨切片、打浆后,加入新鲜的龙眼肉,再用胶体磨精磨,使酱体细腻均匀;
C、煮制:将凤梨酱加热煮制,煮制过程中要不断搅拌,热至沸腾;
D、调味:加入蛋白糖、金银花粉、枸杞汁、红枣粉和苹果酸,充分搅拌,混合均匀,用苹果酸调整pH为2-3;
E、装瓶:将风味凤梨果酱趁热装入已经消毒处理过的瓶内,降温至60℃;
F、灭菌:排气封口后,将瓶置于沸水中灭菌25—30分钟,取出冷却,即为成品。

F、灭菌:排气封口后,将瓶置于沸水中灭菌25—30分钟,取出冷却,即为成品。
