本发明涉及一种营养粉的加工方法,尤其是涉及一种山药平菇营养保健粉的加工方法。
背景技术
平菇,属伞菌目,侧耳科,是日常食用菌中最普通的一种。平菇菌盖为贝壳状,幼时为青灰色,后变成浅灰色,老时黄色;菌柄侧生,菌面平而薄,边缘不内卷,平展,菌褶粗疏。肉质较不老,嫩滑可口,有类似牡蛎的香味,平菇以色白、白厚质嫩,味道鲜美者为佳。平菇无论食素炒还是制成荤菜,都十分鲜嫩诱人,加之价钱便宜,是百姓餐桌上的佳品。
平菇的作用:平菇性平,味甘,具有补虚、抗癌的功效,能改善人体新陈代谢,增强体质,调节大脑神经;平菇含有多糖体,对肿瘤细胞有很强的抑制作用,且具有免疫特性;平菇还有追风散寒、舒筋活络的作用,可治腰腿疼痛、手足麻木、经络不适等病症。此外,平菇对肝炎、慢性胃炎、胃及十二指溃疡、软骨病、高血压都有一定的疗效,对降低血胆固醇和 防治尿道结石也有一定效果,对女性更年期综合症也可起到调理作用。
山药具有营养滋补、诱生搅扰素、增强机体免疫力、调度内***、补气通脉、镇咳祛痰、平喘等感化,能改善冠状动脉及微轮回血流,可治疗慢性气管炎、冠芥蒂、心绞痛等。铁棍山药具有补气润肺的功用,既可切片煎汁当茶饮,又可切细煮粥喝,对虚性咳嗽及肺痨发烧患者都有很好的治疗结果。春季天气较枯燥,易伤肺津,招致阴虚,出现口干、咽干、唇焦、干咳等病症,此时进补山药最为适合,因山药是安然平静之品,为滋阴养肺之上品。
新鲜的平菇不易贮藏,加工成营养粉后食用方便,可溶性冲调性好,商品价值提高。
发明内容
本发明所要解决的技术问题是以平菇为原料,采用原料独立粉碎、打浆、混合、酶处理、均质等方法加工生产,充分保留了原料中的营养物质,方法简单,便于掌握。
本发明解决其技术问题所采取的技术方案是:一种山药平菇营养保健粉的加工方法,其特征在于:采用以下步骤:
A、平菇预处理:选择菇体饱满、无机械损伤的平菇,放入0.005%焦亚硫酸钠溶液中处理12小时,然后用清水漂洗干净;
B、打浆:将平菇进行磨浆处理,磨浆时加水量为原料的4-5倍,用160目的筛网过滤,所得滤渣再加2倍水进行二次磨浆,将两次所得浆液混合;
C、山药预处理:挑选新鲜山药经清洗,去皮切成块状;
D、打浆:将山药碎块磨浆处理,磨浆时加水量为原料的12倍,用180目的筛网过滤,所得滤渣再加3倍水进行二次磨浆,将两次所得浆液混合;
E、混合:将82重量份的平菇浆与18重量份的山药浆,混合,加入少许蜂蜜、牛奶和玫瑰香精,搅拌均匀,制得混合浆;
F、酶处理:将淀粉酶、纤维素酶以一定比例混合,按5-7%的重量比加入到混合浆中,温度控制为48℃,时间为6-7h;
G、均质:将混合液均质处理,温度为75℃,压力为8-15Mpa;
H、喷雾干燥:将均质好的混合液进行喷雾干燥,得到山药平菇营养保健粉;
I、杀菌、检验、包装后,制成成品。
所述的步骤F中一定比例为以下组份:淀粉酶为70重量份、纤维素酶为18重量份。

具体实施方式
实施例1:
一种山药平菇营养保健粉的加工方法,主要采用以下步骤:
A、平菇预处理:选择菇体饱满、无机械损伤的平菇,放入0.01%焦亚硫酸钠溶液中处理2-4小时,然后用清水漂洗干净;
B、打浆:将平菇磨浆处理,磨浆时加水量为原料的6倍,用90-100目的筛网过滤,所得滤渣再加3倍水进行二次磨浆,将两次所得浆液混合;
C、山药预处理:挑选新鲜山药经清洗,去皮切成块状;
D、打浆:将山药碎块磨浆处理,磨浆时加水量为原料的6倍,用90-100目的筛网过滤,所得滤渣再加3-4倍水进行二次磨浆,将两次所得浆液混合;
E、混合:将85重量份的平菇浆与15重量份的山药浆,混合,再加入少许甜菊糖浆、奶粉及蜂蜜,搅拌均匀,制得混合浆;
F、酶处理:将果胶酶、纤维素酶、蛋白酶以一定比例混合,按0.5%的重量比加入到混合浆中,温度控制为45℃,时间为3h;其中,蛋白酶为65-70重量份、纤维素酶为20-25重量份,果胶酶10-15重量份;
G、均质:将混合液均质处理,温度为72℃,压力为40Mpa;
H、喷雾干燥:将均质好的混合液进行喷雾干燥,得到山药平菇营养保健粉;
I、杀菌、检验、包装后,制成成品。

1.一种山药平菇营养保健粉的加工方法,其特征在于:采用以下步骤:
A、平菇预处理:选择菇体饱满、无机械损伤的平菇,放入0.005%焦亚硫酸钠溶液中处理12小时,然后用清水漂洗干净;
B、打浆:将平菇进行磨浆处理,磨浆时加水量为原料的4-5倍,用160目的筛网过滤,所得滤渣再加2倍水进行二次磨浆,将两次所得浆液混合;
C、山药预处理:挑选新鲜山药经清洗,去皮切成块状;
D、打浆:将山药碎块磨浆处理,磨浆时加水量为原料的12倍,用180目的筛网过滤,所得滤渣再加3倍水进行二次磨浆,将两次所得浆液混合;
