Abstract

본 발명은 식품을 구조화시키거나 지방을 대체시키기위해 식품에 유용하게 가할 수 있는 식용 계면활성제의 중간상에 관한 것이다. 본 식용 계면활성제의 중간상은 완성 식품이나 인스턴트 식품에 벌크사으로서 존재하는 것이 바람직하다.

Claims (12)

  1. 식용 계면활성제의 중간상과 80 중량% 이하의 식용 오일을 함유하는 완성식품.
  2. 제2항에 있어서, 상기 중간상의 벌크 영역을 함유하는 완성 식품.
  3. 제1항 또는 제2항에 있어서, 5 용량% 이상의 중간상을 함유하는 완성 식품.
  4. 제1항, 제2항 또는 제3항중 어느 한 항에 있어서, 0.1-30 중량%의 식용 계면활성제를 함유하는 완성 식품.
  5. 제1항-제4항중 어느 한 항에 있어서, 0.1-30 중량%의 생중합체를 함유하는 완성 식품.
  6. 제1항-제5항중 어느 한 항에 있어서, 식용 계면활성제는 부분 글리세라이드, 바람직하게는 모노글리세라이드를 함유하는 완성 식품.
  7. 제1항-제6항중 어느 한 항에 있어서, 1-30 중량%의 식용 비이온 계면활성제와 0.005-10 중량%의 식용이온 계면활성제를 함유하는 완성 식품.
  8. 제1항-제7항중 어느 한 항에 있어서, 드레싱, 마요네즈, 스프레드, 휘퍼블 제품, 아이스크림 또는 기타 냉동 디저트, 치즈, 소스 및 액체 유제품으로 이루어진 군으로부터 선택되는 제품인 완성 식품.
  9. 식품에 있어서 구조화제로서의 식용 계면활성제의 중간상의 용도.
  10. 식품에 있어서 지방 대체물로서의 식용 계면활성제의 중간상의 용도.
  11. 식용 계면활성제의 중간상을 함유하는 완성 식품의 제조방법으로서, 물의 존재하에 식용 계면활성제를 계의 크라프트 온도보다 높은 온도로 가열시키는 단계를 포함하는 것을 특징으로 하는 제조방법.
