Abstract
견고함에 있어 버터류(및 물론 마가린류)와 같으나 저지방이고 코레스테롤이 낮거나 실질적으로 없어 빵등의 스프레딩으로 사용될수 있는 스프레드가 제공된다. 덛붙여 이 스프레드는 튀김용도에 적합하다. 이 스프레드는 저지방과 천연전분을 특정비로 조합하여 구성된다.

Claims (15)
- 약 5-30중량%의 지방, 약 50-85중량%의 물 및 약 0.5-5중량%의 천연전분으로 구성하고, 버터의 경고성과 퍼짐성을 가지며 튀김용도로 적합한 저칼로리 저지방스프레드.
- 제1항에 있어서, pH가 4. 5이하인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제2항에 있어서, pH가 약 4.0 내지 4.4인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제1항에 있어서, 상기 스프레드의 pH는 인산, 유산 또는 구연산으로 조절되는 것을 특징으로 한 저칼로리 저지방스프레드
- 제1항에 있어서, 유화제를 또한 포함하는 것을 특징으로 한 저칼로리 저지방스프레드.
- 제1항에 있어서, 조밀화제를 또한 포함하는 것을 특징으로 한 저칼로리 저지방스프레드.
- 제1항에 있어서, 상기 지방함량은 약10내지 25중량%인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제7항에 있어서, 상기 물함량은 55내지 80중량%인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제8항에 있어서, 상기 전분의 함량은 약0.5내지 5중량%인 특징으로 한 저칼로리 저지방스프레드
- 제1항에 있어서, 상기 전분은옥수수, 감자, 쌀, 보리 또는 귀리전분, 또는 이들 적어도 두개의 전분혼합물인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제1항에 있어서, 상기 전분은 쌀전분 또는 귀리전분인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제11항에 있어서, 상기 전분의 함량은 0. 5내지 3중량%인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제1항에 있어서, 상기 지방은 버터인 것을 특징으로 한 저칼로리 저지방스프레드.
- 제1항에 있어서, 상기 지방은 채소로 부터 얻은것임을 특징으로 한 저칼로리 저지방스프레드.
- 지방을 함유하는 지방상을 형성시키고, 전분을 함유하는 건조상을 형성시키고, 상기 건조상을 물과 혼합시키고, 결과의 물상을 상기 지방상과 혼합시키고, 및 이혼합물을 저온살균 및 균질화시키는 단계를 포함하여 구성되는 것을 특징으로 한 제1항 기재의 스프레드를 제조하는 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
