【発明の属する技術分野】
本発明は、厨房を有する複数のフードサービス店舗の食材管理システムに関わり、より詳細には複数の店舗を公衆通信回線もしくは専用通信回線で結んだＡＳＰ（Application Service Providerの略）センターに食材管理および代替レシピの検索を行うＡＳＰサーバ装置を設置した、食材管理システムに係わる。

【従来の技術】
従来技術による厨房を有するフードサービス店舗の食材管理システムを、図１に示す本発明によるＡＳＰ食材管理システムの第一の実施例のシステム構成図の一部を流用して説明する。従来技術によるフードサービス店舗システムは、顧客のオーダメニューを受付入力し、該オーダメニューを無線送信するＯＥ端末装置１と、店舗Ｓ内に配設された構内通信回線Ｌと、該ＯＥ端末装置１との無線送受信を行う無線中継手段Ｒ１と、構内通信回線Ｌを経由して該オーダメニューを受信登録すると共にオーダ内容を表示出力制御するＯＥＳ装置２と、厨房に設置されたキッチン端末装置３と、サービス料金の精算及び売上処理を行うＰＯＳ端末装置５とで基本構成されている。

客席係員は、ＯＥ端末装置１のオーダ入力部１１を利用して顧客からのオーダを受付入力し、すべてのオーダ入力が終わるとオーダ内容を顧客に確認する。顧客の確認が得られると正式にオーダ受付処理が始まり、まずオーダ受付伝票がプリンター部１４よりプリント出力され、次いでオーダメニューデータが無線通信手段１６により送信される。該オーダメニューデータは、無線中継手段Ｒ１および構内通信回線Ｌを経由して、ＯＥＳ装置２のＯＥ管理手段２１に送信される。ＯＥ管理手段２１は、該オーダメニューデータをマスタＤＢ手段２４に記憶すると共にキッチン端末装置３に転送する。キッチン端末装置３は該オーダメニューデータを表示出力すると共に図示していないキッチンプリンタを用いてオーダ伝票を発行する。

厨房係員は、該オーダ伝票に基づいてオーダの受付確認操作を行い、オーダメニュー品を調理する。しかしながら、調理に当たりレシピに指定された食材が在庫切れとなっていることがある。この場合、厨房から客席係員にオーダを受けられない旨の連絡を行い、再度代替メニューのオーダを求めている。これは、食材在庫管理システムが、フードサービス店舗システムとは全く独立して運用されているために、不足食材情報がオーダ業務に反映されていないことによる。代替メニューの選択に際して、メインディシュの付合せの人参の替わりに、在庫食材である赤ピーマンを当てるなどの提案を行っている。メインディシュの食材が在庫切れした場合、類似のメニューを提案したり、全てのオーダの取り消しを受けるなど、多くの機会損失、サービスの質の低下を来すと云う問題が発生している。

【発明が解決しようとする課題】
本発明は、以上に説明した問題点に鑑み、複数のフードサービス店舗を公衆通信回線もしくは専用通信回線で結んだＡＰＳセンターに設置され、食材在庫管理機能を有するＡＳＰサーバ装置が店舗毎のオーダメニューを受付けると共に食材の引当処理を行い、不足食材に対する代替レシピや代替メニューを検索可能とするＡＰＳによる食材管理方法と食材管理システムの提案を目的とする。

【課題を解決するための手段】
厨房を有するフードサービス店舗に設置され、顧客のオーダメニューを受付入力し、店舗内に配設された構内通信回線を経由して該オーダメニューを無線送信するオーダエントリー（以下ＯＥと略称する）端末装置と、前記ＯＥ端末装置からのオーダメニューを受信登録すると共に前記厨房に設置されたキッチン端末装置にオーダのメニューを表示するオーダエントリサーバ（以下ＯＥＳと略称する）装置と、サービス料金の精算及び売上処理を行うＰＯＳ端末装置とで構成されるフードサービス店舗システムにおいて、
前記ＯＥＳ装置と通信接続される公衆通信回線もしくは専用通信回線と、
ＡＳＰ（Application Service Provider）センターに設置され、
前記公衆通信回線もしくは専用通信回線を介して複数の店舗の前記ＯＥＳ装置と通信接続するＷＥＢサーバと、
店舗毎の前記オーダメニューを受付けるオーダ管理手段と全店舗のメニュー及びレシピを登録管理するマスタレシピ管理手段と、受付けたオーダメニューに基づいて食材の引当を行うと共に引当結果で不足食材がある場合オーダ管理手段へ通知する在庫管理手段とを有するＡＳＰサーバ装置と、
全店舗の前記メニュー、レシピ、食材などを記憶しているメニュー管理マスタと前記オーダメニューを記憶するオーダ管理マスタと本部や店舗毎の食材在庫数量を記憶登録する食材管理マスタとを有するＤＢ装置とで構成する食材管理システムを用いて、
前記ＡＳＰセンターに設置された前記ＤＢ装置の食材管理マスタに店舗毎の食材の在庫数を登録する段階と、前記ＯＥ端末装置を用いてオーダメニューを受付けると共に前記ＡＳＰサーバ装置のオーダ管理手段及び在庫管理手段に通知する段階と、前記在庫管理手段は通知されたオーダメニューデータに基づいて、食材の引当処理を行うと共に該当食材の引当可能数量を確認する段階と、該食材が不足の場合、オーダ管理手段が不足通知を受けて代替食材を用いる代替レシピや代替メニューを検索すると共に、検索結果を前記ＯＥＳ装置に通知する段階と、該ＯＥＳ装置が代替レシピによる代替メニューをＯＥ端末装置に転送し表示出力する段階と、該ＯＥ端末装置が代替メニューによるオーダ受付を行う段階とで構成する。

前記ＯＥＳ装置は、前記ＯＥ端末装置からのオーダメニューを受付、該オーダメニューを装置内各部や前記キッチン端末装置への通知、代替レシピの検索などを行うＯＥ管理手段と、前記オーダメニューの調理に必要な食材の引当処理および在庫管理処理を行う食材管理手段と、メニューに対応したレシピ（料理法・食材構成）、店舗内の食材在庫数などを記憶しているマスタＤＢ手段とを備え、
前記ＯＥＳ装置と通信接続される公衆通信回線もしくは専用通信回線と、
以下ＡＳＰセンターに設置され、
前記公衆通信回線もしくは専用通信回線を介して複数の店舗の前記ＯＥＳ装置と通信接続するＷＥＢサーバと、
食材の在庫管理を行う在庫管理手段を有するＡＳＰサーバ装置と、
全店舗の前記メニュー、レシピ、食材などを記憶しているメニュー管理マスタと本部や店舗毎の食材在庫数量を記憶登録する食材管理マスタとを有するＤＢ装置とで構成する食材管理システムを用いて、
前記ＯＥＳ装置のマスタＤＢ手段に該当店舗の食材在庫数を登録し前記ＡＳＰセンターに設置されたＤＢ装置の食材管理マスタに本部や店舗毎の食材在庫数を登録する段階と、前記ＯＥ端末装置を用いて、オーダメニューを受付けると共に前記ＯＥＳ装置のＯＥ管理手段及び食材管理手段に通知する段階と、前記食材管理手段が、通知されたオーダメニューデータに基づいて食材の引当処理を行うと共に該当食材の引当可能数量を確認する段階と、該食材が不足の場合、ＯＥ管理手段が不足通知を受けて代替食材を用いる代替レシピや代替メニューを検索する段階と、該ＯＥ管理手段が、代替レシピによる代替メニューをＯＥ端末装置に転送し表示出力する段階と、該ＯＥ端末装置が代替メニューによるオーダ受付を行うと共に、ＯＥ管理手段に通知登録する段階と、前記食材管理手段がＡＳＰサーバ装置の在庫管理手段に通知する段階とで構成する。

前記公衆通信回線もしくは専用通信回線を介して複数の前記ＯＥＳ装置と通信接続するＷＥＢサーバと、
店舗毎の前記オーダメニューを受付ける店舗別受付部を有するオーダ管理手段と、全店舗のメニュー及びレシピを登録管理するマスタレシピ登録部および前記レシピに対応した食材を登録管理するマスタ食材登録部を有するマスタレシピ管理手段と、受付けたオーダメニューに基づいて食材の引当を行う食材引当部を有する在庫管理手段とで成るＡＳＰサーバ装置と、
全店舗の前記メニューを記憶しているメニュー管理マスタと、前記オーダメニューを記憶するオーダ管理ファイルを有するオーダ管理マスタと、本部や店舗毎の食材在庫数量を記憶登録する食材ファイルを有する食材管理マスタとを有するＤＢ装置とを備え、
前記ＡＳＰサーバ装置の在庫管理手段は、食材の引当処理結果で該食材が不足のした場合オーダ管理手段に不足食材情報を通知し、オーダ管理手段は、前記不足食材情報の通知を受けた場合、該当店舗の在庫食材を用いた調理可能な代替レシピや代替メニューを検索し、その検索結果を前記ＯＥＳ装置経由でＯＥ端末装置転送表示する。

【発明の実施の形態】
図１に示す本発明によるＡＳＰによる食材管理システムの第一および第二の実施例のシステム構成図を用いて、本願システムの概略構成を説明する。第一の実施例のＡＳＰによる食材管理システムは、厨房を有するフードサービス店舗Ｓに設置され、顧客のオーダメニューを受付入力し、店舗内に配設された構内通信回線Ｌを経由して該オーダメニューを無線送信するＯＥ端末装置１と、該オーダメニューを受信登録すると共に厨房に設置されたキッチン端末装置３やシステム内各部（後述する食材管理手段２３、ＡＳＰサーバ６、ＤＢ装置８など）にオーダ内容を通知するＯＥ管理手段２１と受付けたオーダメニューを記憶しているマスタＤＢ手段２４とを有するＯＥＳ装置２と、サービス料金の精算及び売上処理を行うＰＯＳ端末装置５と、ＯＥＳ装置２とルータＲを介して、通信接続される公衆通信回線Ｎもしくは専用通信回線と、以下、ＡＳＰセンターに設置され、ルータＲ経由で公衆通信回線Ｎもしくは専用通信回線を介して複数のＯＥＳ装置２と通信接続するＷＥＢサーバ７と、店舗毎のオーダメニューを受付けるオーダ管理手段６２と全店舗共通のメニュー及びレシピを登録管理するマスタレシピ管理手段６４と受付けたオーダメニューに基づいて食材の引当を行うと共にオーダ管理手段６２やマスタレシピ管理手段６４などに不足食材の通知を行う在庫管理手段６５とを有するＡＳＰサーバ装置６と、構内通信回線Ｌを介してＷＥＢサーバ７およびＡＳＰサーバ装置６に通信接続され、全店舗共通のメニュー、レシピ、食材などを記憶しているメニュー管理マスタ８３とオーダメニューを記憶するオーダ管理マスタ８４と本部や店舗毎の食材在庫数量を記憶登録する食材管理マスタ８５とを有するＤＢ装置８とで構成されている。

第二の実施例のＡＳＰによる食材管理システムは、厨房を有するフードサービス店舗Ｓに設置され、顧客のオーダメニューを受付入力し、店舗Ｓ内に配設された構内通信回線Ｌを経由して該オーダメニューを無線送信するＯＥ端末装置１と、ＯＥ端末装置１からのオーダメニューを受付け、該オーダメニューを装置内各部やキッチン端末装置３へ通知したり、代替レシピや代替メニューの検索などを行うＯＥ管理手段２１とオーダメニューの調理に必要な食材の引当処理および在庫管理処理を行う食材管理手段２３とメニューに対応したレシピ、店舗内の食材在庫数などを記憶しているマスタＤＢ手段２４とを有するＯＥＳ装置２と、サービス料金の精算及び売上処理を行うＰＯＳ端末装置５と、ＯＥＳ装置２とルータＲを介して、通信接続される公衆通信回線Ｎもしくは専用通信回線と、以下ＡＳＰセンターに設置され、ルータＲ経由で公衆通信回線Ｎもしくは専用通信回線を介して複数の店舗のＯＥＳ装置２と通信接続するＷＥＢサーバ７と、食材の在庫管理を行なう在庫管理手段６５を有するＡＳＰサーバ装置６と、構内通信回線Ｌを介してＷＥＢサーバ７およびＡＳＰサーバ装置６に通信接続され、全店舗共通のメニュー、レシピ、食材などを記憶しているメニュー管理マスタ８３と本部や店舗毎の食材在庫数量を記憶登録する食材管理マスタ８５とを有するＤＢ装置８とで構成されている。

図４に示す本発明によるＡＳＰによる食材管理方法の第一の実施例の動作フロー図を加えて、本願システムの食材管理方法を説明する。第一の実施例の食材管理方法は、第一の実施例の食材管理システムを用いて、ＡＳＰセンターに設置されたＤＢ装置８の食材管理マスタ８５に、店舗毎の食材の在庫数を登録する段階（ＳＴ１）と、ＯＥ端末装置１を用いて、オーダメニューを受付けると共に公衆通信回線Ｎもしくは専用通信回線を経由して、ＡＳＰサーバ装置６のオーダ管理手段６２及び在庫管理手段６５に通知する段階（ＳＴ２）と、在庫管理手段６５が、通知されたオーダメニューデータに基づいて、食材の引当処理を行うと共に該当食材の引当可能数量を確認する段階（ＳＴ３）と、該食材が不足の場合、オーダ管理手段６２が、不足通知を受けて代替食材を用いる代替レシピや代替メニューを検索すると共に、検索結果をＯＥＳ装置２のＯＥ管理手段２１に通知する段階（ＳＴ４）と、該ＯＥ管理手段２１が、代替レシピによる代替メニューをＯＥ端末装置１に転送し表示出力する段階（ＳＴ５）と、該ＯＥ端末装置１が代替メニューによるオーダ受付を行うと共に、ＯＥ管理手段２１に通知登録する段階（ＳＴ６）とで構成されている。

ＯＥＳ装置２のＯＥ管理手段２１には、不足食材情報に基づいて在庫食材を用いた調理可能な代替レシピや代替メニューを検索する代替レシピ検索部２１ｂ、在庫食材を用いた調理可能な代替メニューデータをＯＥ端末装置１に転送する代替メニュー転送部２１ｄ、および、在庫食材を用いた調理可能な代替メニューデータをキッチン端末装置３に通知する代替メニュー通知部２１ｅなどが追加設置されている。

ＯＥＳ装置２には、該当店舗Ｓの食材の在庫管理を行う在庫管理部２３ｂとオーダメニューデータに基づいて在庫食材を引当てる食材引当部２３ａとを有する食材管理手段２３、および、店舗Ｓの食材在庫が不足もしくは最低在庫数量を下回った場合、該当食材の発注管理を行う発注管理部２３ｃを有する食材管理手段２３が追加設置されている。

ＡＳＰサーバ装置６のオーダ管理手段６２には、不足食材情報の通知を受けた場合、該当店舗Ｓの在庫食材を用いた調理可能な代替レシピや代替メニューを検索する代替レシピ検索部６２ｂ、および、不足食材情報の通知を受けた場合、該当店舗Ｓの在庫食材を用いた代替メニューを公衆通信回線Ｎもしくは専用通信回線を経由して該当店舗ＳのＯＥＳ装置２に通知する代替メニュー通知部６２ｃなどが追加設置されている。

ＡＳＰサーバ装置６の在庫管理手段６５には、食材引当部６５ａより食材引当不可のステータスを受取った場合、食材不足の通知を出す不足食材通知部６５ｂ、同じく本部在庫の食材を該当店舗Ｓへの振替制御を行う食材振替制御部６５ｃ、同じく本部在庫の食材を該当店舗Ｓへの配送指令を出す食材配送指令部６５ｄ、および、本部で不足食材が発生もしくは最低在庫数を下回った場合、該当食材の発注指令を出す食材発注指令部６５ｅなどが追加設置されている。

ＤＢ装置８のメニュー管理マスタ８３は、店舗Ｓが提供するメニューとレシピとを記憶登録しているメニュー・レシピファイル８３ａと、レシピに対応した食材を記憶しているレシピ・食材ファイル８３ｂと、代替食材データを記憶している代替食材ファイル８３ｃとで構成している。

ＤＢ装置８のオーダ管理マスタ８４には、オーダメニューに必要な食材数量の解析に必要な食材解析ファイル８４ｃが、食材管理マスタ８５には、店舗毎の食材在庫を記憶する店舗食材ファイル８５ａとが追加設置されている。以下、本願システムの詳細動作を説明する。
