Description

本発明の油は、味および臭いに関して向上した安定性および、低レベルのトランス−脂肪酸を有する。ひとつの具体例において、本発明のある種の油は、高級不飽和油脂の消費の健康的利点のため、食品成分として用いることができる。飽和油脂の消費は心臓血管の健康に対して悪い影響を有することが知られている。しかしながら、4以上の二重結合を有する脂肪酸の消費が望ましい。高レベルの不飽和(4以上の二重結合)のため、本発明のある種の油は、低レベルの不飽和(4未満の二重結合)の油と比較して安定性が低い。安定性が低い本発明のある種の油は脂肪酸の分解反応を生じ、望ましくないパーオキシドおよびヒドロパーオキシドを生成する。これらの酸化生成物の次の分解が揮発性および不揮発性のアルデヒドおよび/またはケトンを生成する。不揮発性成分は、油のさらなる酸化を触媒し、揮発性成分は望ましくない味と臭いを発生する。


Claims (12)

  1. 組成物中の脂肪酸またはそれらの誘導体の全重量に対して少なくとも0.4重量%の、4以上の炭素−炭素二重結合を有する少なくともひとつのポリ不飽和脂肪酸またはその誘導体を含む油組成物であって、
    (a)脱臭油であり、かつ、組成物中の脂肪酸またはそれらの誘導体の全重量に対して約1重量%未満のトランス−脂肪酸を含む油組成物;
    (b)海洋性油以外の起源に由来し、かつ、少なくとも約400ppmのトコフェロールを含む油組成物;
    (c)海洋性油以外の起源に由来し、かつ、約1meq/kg未満のパーオキシド値を有する油組成物;
    (d)海洋性油以外の起源に由来し、かつ、約3未満のアニシジン値を有する油組成物;
    (e)前記ポリ不飽和脂肪酸がステアリドン酸またはその誘導体であり、4以上の炭素−炭素二重結合を有する少なくともひとつのさらなるポリ不飽和脂肪酸またはその誘導体を含み、かつ、約3未満のアニシジン値を有する油組成物;
    (f)アラビドプシス、ニンジン、ココナッツ、コーン、綿、亜麻、亜麻仁、トウモロコシ、パーム核、ピーナッツ、ジャガイモ、サフラワー、ダイズ、ヒマワリ、タバコ、およびそれらの混合物よりなる群から選択される油組成物;
    (g)約2.5までの芳香トータルインパクトスコアを有し、ここに、トータルインパクトは標準化官能評価によって定量される油組成物;または
    (h)約2.5までの芳香/風味トータルインパクトスコアを有し、ここに、トータルインパクトは標準化官能評価によって決定される油組成物。
  2. 組成物中の脂肪酸またはそれらの誘導体の全重量に対して約5重量%から約30重量%のステアリドン酸またはその誘導体を含み、約3未満のアニシジン値を有するか、または、約1meq/kg未満のパーオキシド値を有する、請求項1に記載の組成物
  3. 約10meq/kgまでのパーオキシド値を有する、請求項2に記載の組成物。
  4. 約20までのアニシジン値を有する、請求項2に記載の組成物。
  5. 約26までのtotox値を有する、請求項2〜4いずれかに記載の組成物。
  6. 約5,000ppmまでのトコフェロールを含む、請求項2〜5いずれかに記載の組成物。
  7. 10重量%を超えないトランス-脂肪酸を含む、請求項1〜6いずれかに記載の組成物。
  8. 前記ポリ不飽和脂肪酸またはその誘導体がステアリドン酸またはその誘導体を含む、請求項1〜7いずれかに記載の組成物。
  9. 請求項1〜8いずれかに記載の油組成物を含む、食品、飲料、栄養サプリメントまたは調理油。
  10. さらに、クエン酸、パルミチン酸アスコルビル、t-ブチルヒドロキノン、没食子酸プロピル、およびそれらの組合せよりなる群から選択される安定化剤を含む請求項1〜9いずれかに記載の組成物、飲料、栄養サプリメントまたは調理油。
  11. 不活性雰囲気中で油組成物を調製し;赤外カード上に油組成物の層を置いて処理赤外カードを形成し;層が実質的に均一な厚みになるまで充分な時間、不活性雰囲気中に処理赤外カードを置き;実質的に均一な厚みの層を有する赤外カードを空気に暴露し;ついで、油組成物の赤外スペクトルを周期的に収集する、油の酸化安定性を定量する方法。
  12. 油組成物内のアルデヒドおよび/またはケトンと会合することが可能なアニシジン値(AV)-低下剤で油組成物を処理し、ここに、前記AV-低下剤は油組成物から分離することが可能な支持体に結合したアミンを含み;ついで、AV-低下剤を油組成物から物理的に分離してAV-低下剤と会合したアルデヒドおよび/またはケトンを油組成物から除去し、AVを低下させることを特徴とする、油組成物のAVを低下させる方法。
