Description
例として、特開平02−208390号公報にはリン脂質とトコフェロールを有効成分とする抗酸化剤組成物が示され、特開平02−55785号公報には茶抽出物とトコフェロール、L−アスコルビン酸エステル等を配合してなる抗酸化剤組成物が開示されている。
しかしながら、これら発明で得られる魚油の戻り臭に対する効果は一時的であり、持続力を有しない。
しかしながら、これらの作業を行った場合、油脂は常温で固体となり使用できる食品や用途は限定されてしまうのみならず、魚油微水添を行ってしまった場合にはEPA、DHA自体が還元されてしまうため、生理活性も著しく低下する恐れがあった。
尚、本発明の油脂組成物は、フライ調理を除く一般的な調理に広く使用することができる。
ドコサヘキサン酸(DHA)26.7%、エイコサペンタエン酸(EPA)8.3%を含有する精製高ドコサヘキサエン酸含有魚油と、オレイン酸28.8%、リノール酸45.5%を含む精製コーン油、リノレン酸を39.8%含む精製亜麻仁油を用いて表1に示す割合に均一に混合した。
ドコサヘキサン酸(DHA)26.7%、エイコサペンタエン酸(EPA)8.3%を含有する精製高ドコサヘキサエン酸含有魚油と、オレイン酸77.4%を含む精製ハイオレイック紅花油、リノール酸77.3%を含む精製紅花油、リノレン酸を39.8%含む精製亜麻仁油を用いて表1に示す割合に均一混合した。
実施例1に記した油脂組成物に茶抽出抗酸化剤(三共(株)製サンフード油性)を窒素ガス存在下60℃で0.1%添加し、完全に溶解させた。
実施例1に記した油脂組成物にローズマリー抽出抗酸化剤(三菱化学(株)製RM21B)を窒素ガス存在下60℃で0.01%添加し、完全に溶解させた。
評価結果を表4に示した。抗酸化剤の添加による魚臭(戻り臭)の抑制効果は実施例No.1と比べて顕著な差は認められず、官能上の悪影響を与えるものではない。また油脂酸化劣化を化学的指標で捉えた場合は、改善効果が十分期待できる。

Claims (11)
- 長鎖高度不飽和脂肪酸1重量部に対し、オレイン酸3〜9重量部、リノール酸5〜15重量部、及びリノレン酸0.1〜1.5重量部の脂肪酸組成比率を持つ油脂組成物。
- 長鎖高度不飽和脂肪酸1重量部に対し、オレイン酸3〜7重量部、リノール酸6〜10重量部、及びリノレン酸0.5〜1.5重量部の脂肪酸組成比率を持つ油脂組成物。
- 全脂肪酸組成に占める長鎖高度不飽和脂肪酸の割合が3〜7重量%であることを特徴とする、請求項1又は2記載の油脂組成物。
- 長鎖高度不飽和脂肪酸1重量部に対し、オレイン酸5〜40重量部、リノール酸12〜45重量部、及びリノレン酸0.1〜4重量部の脂肪酸組成比率を持つ油脂組成物。
- 長鎖高度不飽和脂肪酸1重量部に対し、オレイン酸8〜35重量部、リノール酸12〜45重量部、及びリノレン酸0.2〜3重量部の脂肪酸組成比率を持つ油脂組成物。
- 全脂肪酸組成に占める長鎖高度不飽和脂肪酸の割合が1〜3重量%未満であることを特徴とする、請求項4又は5記載の油脂組成物。
- 長鎖高度不飽和脂肪酸がEPA及び/又はDHAである、請求項1ないし6のいずれか一項に記載の油脂組成物。
- 酸化防止剤が添加されていないことを特徴とする、請求項1〜7のいずれか一項に記載の油脂組成物。
- 酸化防止剤を0.005〜0.02重量%含む請求項1〜7のいずれか一項に記載の油脂組成物。
- 5℃で液体状態であることを特徴とする請求項1〜9のいずれか一項に記載の油脂組成物。
- 亜麻仁油、コーン油及び精製魚油から調製されたものであることを特徴とする、請求項1〜10のいずれか一項に記載の油脂組成物。
