Abstract

Fermented milks of the yoghurst, fresh cheese and "labrie" type cheeses are prepd. in dehydrated form. The milk is pasteurised then cooled to 45-50 degrees C. A "robb" culture is added and the milk is allowed to ferment. After adding salt, the product is spray-dried. The process overcomes the disadvantage of liquid products of this type with regard to storage stability which is limited to about 12 days when stored in a refrigerator in the middle east. The above has a long storage period and is easily converted to yoghurt etc. by adding water.
