Abstract
a presente invenção refere-se e aborda o problema de fornecer um óleo ou gordura para chocolates não temperados, o qual possibilite misturar manteiga de cacau em alta concentração com um chocolate láurico não temperado, possua resistência ao calor em tal nível que o óleo ou gordura seja capaz de resistir à distribuição na temperatura ambiente, bom em termos de brilho, lustre, sensação na degustação, sabor e termos semelhantes e não sofra a ocorrência de blooming (superfície esbranquiçada) ou alteração na dureza ao longo do tempo. um óleo ou gordura contendo um triglicerídeo do tipo usu é adicionado em teor adequado a uma manteiga dura rica em ácido láurico. dessa maneira, torna-se possível a mistura de manteiga de cacau em alta concentração a um chocolate preparado utilizando manteiga dura rica em ácido láurico, o que nunca foi possível antes.
