Abstract
Description
特許文献1には、「コーン容器に気泡を含んだチョコレート生地を注入し、次いでコーン容器の内面と相似の形状をした挿入型を挿入し、コーン容器と挿入型の間の空隙にチョコレート生地を満たした状態とした後挿入型を抜出し、コーン容器の内面に気泡を含んだチョコレート生地層を設け、次いで冷凍生地を充填することを特徴とするコーンアイスの製造法」について記載されている。
特許文献3には、「最中のアイスクリームと接する面に少なくとも300μm厚のチョコレートコーティングを有する最中皮」について記載され、その手段として「ホットエアレスパルススプレー法で噴射すること」について記載されている。
特許文献4には、「最中皮と最中皮の間には、最中皮の移動方向に沿って走行する無端状のマスキングベルトをそれぞれ配設・・・」する「最中皮の内面にチョコレートをコーティングすることを特徴とするチョコレート被膜付き最中皮の製造法」について記載されている。
特許文献7は、「チョコレート生地の粘度低下剤」と称する出願であるが、「流動性が悪くなったチョコレート生地は降伏値が高くなって」いた旨の記載がある。
特許文献1と2の方法では、気泡を含んだチョコレート生地を使用しなければならず、製品の食感が制限を受けることとなり汎用性の低いものであった。また、特許文献1の方法では、製造において挿入型を準備する必要があり、煩雑であった。
特許文献3では、新たに「ホットエアレスパルススプレー」なる装置を導入せねばならず、コストの上昇につながることが想定され、汎用的に使用できる技術とは言えなかった。
特許文献4では、マスキングベルト等を使用しているが、製造装置の大幅な改変が必要であり、これもコストの上昇につながり、汎用的に使える技術とは言えない。特許文献5においても、同様に製造装置の大幅な改変が必要である。
特許文献6は、降伏値に着目した出願であるが、比較例1、2には、降伏値が高い場合は、コーティング作業ができない旨記載されている。
特許文献8には、きわめて広い範囲の脂質含有食品について、噴霧スプレーガンによる噴霧を行う旨記載されている。しかし、モナカ皮のように、凹凸部の存在する可食性容器についての効果の記載はなく、本発明者による検証においても、その効果は確認できなかった。
本発明者は更に鋭意検討を行ったところ、チョコレート生地の流体としての特性のうち「降伏値」と「塑性粘度」に着目し、降伏値が高く、かつ塑性粘度が低く抑えられれば、凹凸の多いモナカ皮であっても、その内相を確実にコーティングできるのではないか、との推論に達した。そして、特定の乳化剤を使用することで、降伏値を高め、かつ塑性粘度を低く抑えることができることを見出した。そして、そのようなチョコレート生地を使用することで、凹凸部含め一定の厚さでコーティングすることができ、かつ、十分なバリア性を示し、アイスクリームからの水分移行を抑えることができることを見出した。そして、この油性食品はスプレーをはじめ各種のコーティング操作に対応できることを見出し、本発明を完成させた。

本発明においては、油性食品をスプレーにより塗布することも意図しており、そのためには、油分を「さらに望ましい」とする範囲にするのがよい。
本発明においては、油性食品として代表的にはチョコレート利用食品を使用する場合が多く、以下、チョコレート利用食品を例に挙げ説明する。また、チョコレート利用食品であっても、本発明においては単に「チョコレート」と称する場合がある。
また、本発明における油性食品の40℃における塑性粘度は70~260mPa・sである必要があり、より望ましくは80~200mPa・sであり、さらに望ましくは90~190mPa・sであり、最も望ましくは100~180mPa・sである。
降伏値及び塑性粘度が高すぎても、低すぎても、油性食品の水分移行耐性が低下する場合がある。
本発明でいう冷菓とは、冷凍状態で流通されるアイスクリーム等である。特に、経時的な水分移行が問題となるような製品であり、アイスクリーム等の周辺全体ないし一部をコーンやモナカ皮などの可食性容器にて囲まれたものである。具体的には、コーンを使用したものやアイスモナカをあげることができるが、本発明の効果を、より好適に発揮できるのはアイスモナカに適用した場合である。すなわち、本発明で言う冷菓としては、アイスモナカであることが望ましい。アイスモナカは、人気の高い冷菓の一つであるが、モナカ皮への水分移行の問題は、いまだ完全には解決できていない問題である。
なお、本発明でいう「水分移行」とは、代表的にはアイスモナカのように、アイスクリーム等の表面の全体ないし一部をモナカ皮等で覆った冷菓において、アイスクリーム等からモナカ皮等への水分の移行を指す。この場合、被覆物はモナカ皮に限らず、ソフトクリームのコーンやクッキーも含むが、本発明は、モナカ皮のように凹凸が多く存在する被覆物であっても、その水分移行を抑制できる点に特徴を有するものであり、被覆物はモナカ皮であると、その効果が好適に発現される。
すなわち、モナカ皮のように凹凸の多く存在する被覆物であっても、その水分移行を抑制できる油性食品が、本発明に係る油性食品である。
その外見から評価すると、内容物全体を覆う構造となる場合、その外周に向け凸面部が存在するし、また、全体の強度を増す為ないし、割って食べやすいようにするために、辺に平行に、凹部が設けられている場合が多い。
本発明においては、曲率半径5mm以下の凹凸部が存在するものを「モナカ皮」と定義する。凹凸部の曲率半径は4mm以下の場合には、本発明の効果がより顕著に現れ、3mm以下の場合には、更に効果が顕著に現れる。なお、上記曲率半径は、モナカ皮の内側の値である。
本発明で言うスプレーとは噴霧器とも表現されるものであり、各種の装置を使用できる。本発明は特に、スプレーによる塗布を行った場合でも、アイスモナカ等において顕著な水分移行耐性を示すことを特徴とする。ここでいう、水分移行耐性の有無の具体的判断基準は、実施例に記載する。
ソルビタン型の場合は、ソルビタンの時点で一度精製してあるので、ソルビトール型の場合にくらべて色調や風味が良いという特徴がある。しかし本発明においては、ソルビトール型ソルビタンモノ脂肪酸エステルを使用することが、物性制御の点で望ましい。
また、結合する脂肪酸は、より望ましくは飽和型である。
ソルビトール型ソルビタンモノ脂肪酸エステルの油性食品中の含有量は0.2~2.5重量%が望ましく、より望ましくは0.3~2.2重量%であり、さらに望ましくは0.4~2.0重量%である。この量が少なすぎると、本発明に係る物性を発現しない場合がある。また、この量が多すぎると食味に悪影響を及ぼす場合がある。また、塗布した後のバリア性が劣る場合がある。
コーティングを行う際の作業効率の点で判断すると、スプレーによる塗布が望ましく、本発明に係る油性食品は、当該使用にも対応し得るものである。スプレーによる塗布によっても、強い水分移行耐性を示す点でも、本発明に係る油性食品は特徴を有するものである。
チョコレートの調製法は、従来用いられているものを採用することが出来る。すなわち、砂糖、粉乳、カカオマスなどの原材料を混合した後、ローラー等により微細化する。その後加温して練り上げる。本発明の特徴である乳化剤は、原材料として当初から添加しておくことが望ましい。
以下に実施例を示し、本発明の効果をより一層明確にする。
実施例1~7、比較例1~14
植物油脂46.5重量%、砂糖42.5重量%、ココア11重量%からなるベースチョコ配合へ、表1、2記載の各種乳化剤を添加し油性食品を調製した。その後、降伏値および塑性粘度を測定した。結果も、表1、2に記載した。降伏値および塑性粘度の測定法は、以下記載の方法に従った。
なお、植物油脂はパーム分別油(融点16℃)を使用した。また、ココアの油分は11重量%であった。
1 油性食品を60℃まで温めて完全に融解させた。
2 室温に放置し、40℃に降温した。
3 Rheolab-QC(AntonPaar社製)を使用して、40℃での、ずり速度が2(1/s)~50(1/s)の時のずり応力を測定した。
4 Casson近似式を用いて数式化することで降伏値と塑性粘度を算出した。
1 植物油脂19.0重量%、砂糖42.5重量%、ココア11重量%を混合して生地とした。
2 生地をロールリファイナーによって微粒化処理した。
3 コンチェにて残りの植物油脂27.5重量%と混合して、油性食品を調製した。
表1、2に示す通り、HLBが5~10のソルビトール型ソルビタンモノ脂肪酸エステルを0.2~2.5重量%含有させるか、または、HLBが5~10の蒸留ジグリセリンモノ脂肪酸エステルを0.2~2.5重量%含有させることで、目的とする物性を示す油性食品が得られることが明らかとなった。
実施例8~15
スクリーニングした乳化剤のうち、ソルマンS-300Vについて、油性食品油分および乳化剤添加量の検討を行った。
表3の配合により、検討1と同様の方法により油性食品を調製し、その、降伏値等の物性値を測定した。結果を表3に記載した。
表3に示す通り、油性食品油分及び乳化剤添加量を変動させても、降伏値、塑性粘度及び降伏値/塑性粘度が規定値の範囲となることが明らかとなった。
実施例16~25、比較例15~19
検討1、2の一部の油性食品について、スプレーによるモナカ皮への塗布テスト及び、水分移行の評価を行った。
スプレー塗布テストの方法、評価法は以下に記載する。
表4に結果を記載した。
1.各油性食品を50℃に調温して完全に融解し、その後40℃まで温度を調整した。
2.モナカ皮(加賀種食品工業株式会社製 製菓用四つ割り仕様モナカ皮 大きさ(縦、横、高さ:65×65×7mm)、初発の水分量:5.8%)を開口部が上になるように置き,1.の油性食品を電動スプレー機(パワースプレーP-60、精和産業株式会社製)を用いて塗布し、目付量が2.5~2.7gになるように調整した。なお、モナカ皮角部分の曲率半径は1mmであった。
3.直ちに冷蔵庫へ入れ、油性食品を固めた。
4.モナカ皮凹凸部の油性食品の厚みの均一性を肉眼観察した。
1.アイスクリーム(明治乳業株式会社製「ファミリア バニラ」 を-5~-10℃に緩めた。
2.絞り袋に入れ、「スプレーによる塗布テスト法」の手順にて、油性食品をコーティングしたモナカ皮へ、17g充填した。各試験区で10個充填した。
3.-30℃急速冷凍庫へ入れ、120分間放置した。
4.融点16℃の植物油脂46.5重量%、砂糖42.5重量%、ココア11重量%からなる油性食品を50℃湯せんで融解したものを、3.のアイスクリーム部の上から3.5~4.0gかけ、アイスクリーム表面をコーティングした。
5.-30℃急速冷凍庫へ入れ、120分間放置した。
6.ビニール袋に個包装した後、-25℃冷凍庫にて3日間置き、テスト用アイスモナカを得た。
7.テスト用アイスモナカを、-10℃の冷凍庫へ入れ21日間放置した。
8.21日目の段階で、目視により、吸湿して変形したモナカ皮の個数を確認した。
吸湿変形したモナカ皮の個数が10個中3個以下を合格とした。
9.目視により、吸湿変形していないモナカ皮について、アイスクリーム等を分離した上で、水分を測定し、平均値を得た。
水分量の平均が10重量%以下を合格とした。
10.吸湿変形していないモナカ皮について、「食感評価基準」に基づき、10名のパネラーにより食感評価した。評価結果はパネラーによる合議で決定した。
○:サクサク感が残っていて良好。
△:やや湿り気を感じるがサクサク感は残っている。
×:湿っており不良。
△、○を合格とした。
表4のとおり、降伏値や塑性粘度等が特定の範囲にある油性食品を使用した場合に、モナカ皮へのスプレーによる塗布が良好にでき、アイスモナカの水分移行も抑制されることが明らかとなった。
実施例26~28、比較例20~24
検討1で得られた油性食品の一部について、モナカ皮へのスプレー以外の方法によるコーティングテストを実施した。
テスト方法は以下に記載する通りである。
結果を表5に示した。
1.表5に記載される各油性食品を50℃に調温して完全に融解した。
2.モナカ皮(加賀種食品工業株式会社製 製菓用四つ割り仕様モナカ皮 大きさ(縦、横、高さ:65×65×7mm)、初発の水分量:5.8%)を開口部が上になるように置き,1.の油性食品を内壁いっぱいに注いだ後、直ちにモナカ皮を垂直にして油性食品を流し出した。なお、モナカ皮角部分の曲率半径は1mmであった。
3.目付量を測定した。
4.直ちに冷蔵庫へ入れ、油性食品を固めた。
5.目付量が、モナカ皮1枚当たり2.5~2.7gに該当しない場合は、再度1から開始し、2の油性食品を流しかける時間を調整し、上記所定の目付量となるようにした。
6.モナカ皮凹凸部の油性食品の厚みを肉眼観察した。
5:薄い部分がなく均一にコーティングされていて良好。
4:内相の90%以上が、目視上、均一にコーティングされている。
3:凹凸部にコーティングの厚みムラになっている部分が一部に見られる。
2:凹凸部全体に、コーティングの厚みにムラがみられる。
1:凹凸部のコーティングの厚みムラが非常に大きい。
3以上を合格とした。

1.アイスクリーム(明治乳業株式会社製「ファミリア バニラ」 を-5~-10℃に緩めた。

△:やや湿り気を感じるがサクサク感は残っている。
×:湿っており不良。
△、○を合格とした。
所定の油性食品を使用した場合に、21日目の段階で吸湿により変形したモナカ皮の個数が4個以下となり、吸湿変形していないモナカ皮の水分量が10重量%以下となることが明らかとなった。
油性食品による水分移行の抑制は、モナカ皮へきれいに塗布されること、および塗布後のバリア性の2つから構成されると推定された。
本発明に係る油性食品であれば、塗布性およびバリア性いずれもが良好であり、課題を解決することができることが確認された。
