Abstract

 大豆油等の臭気を有する油脂に焙煎ゴマ油等の焙煎油を含有させても含有させた焙煎油の生風味が実質的にせず、また、大豆油等の油脂が有する原料特有の不快な臭い(例えば、大豆油での青臭さ)や、戻り臭、加熱臭が抑制された油脂組成物を提供すること。  臭気を有する油脂と、脱臭工程を経て製造された焙煎油と、を含有する油脂組成物であって、該油脂組成物中の前記焙煎油の含有量が、前記臭気を有する油脂自体が有する臭気を実質的に抑制し、かつ、前記焙煎油の風味を実質的に感じない量とすることで戻り臭等が抑制することができる。
