本明細書の実施形態によるタンパク質ブレンドを含有する食品成分を統合するために使用する結合剤系は、結合剤材料のみからなることができ、または非結合材料と組み合わせた結合剤とすることができる。本明細書で無条件に使用する場合、用語「結合剤」は、一般に加熱によって好都合に流動性にすることができ、冷却時に非流動性状態に戻り、乾燥物を組み合わせるための「のり」として本質的に働く食用結合組成物を指す。
コンパウンドコーティングは、通常は脂肪源を含む。特定の実施形態では、コンパウンドコーティングは、チョコレートまたはミルクチョコレートを含む。要求されていないが、ピーナッツバター、バニラ、ミルク、およびチョコレート風味料など、およびその組合せなど、1つまたは複数の風味料も、通常はコンパウンドコーティングに含まれる。コア構造に完全にまたは部分的にコーティングを施し、それを被包し、被覆することなどに有用な方式で、タンパク質含有コア成分単独またはそれを組み込む多層アセンブリとすることができるコア構造の曝露面にコンパウンドコーティングを施す。多層コアアセンブリは、例えばタンパク質含有コア成分、およびカラメル層、クリーム状乳層、果物層など1つまたは複数の多様な補助コア成分の積重ねアセンブリを含むことができる。コンパウンドコーティングは、熱を加えることにより流動性になって、室温または冷温で固化するコーティング組成物を得ることができるチョコレート含有組成物とすることができる。タンパク質含有コアを含むコア構造を加熱されたコンパウンドコーティング浴に浸漬し、次いで被覆構造を、コア構造の適切な位置にコンパウンドコーティングを固化させるのに十分な程度に冷却することによってコンパウンドコーティングを施すことができる。
先に示唆したように、タンパク質含有コア成分に加えて、場合によっては多様な補助コア成分を食品バーまたは他の食品に含むことができる。多様な補助成分は、カラメル層、果物層、クリーム状乳層、ピーナッツバター層、チョコレート層、フロスティング層、蜂蜜層、ヨーグルト層、および/またはゼラチン層の1つまたは複数を含むことができる。これは、単一または多重の質感付きとすることができる。補助コア層は、任意のタイプの添加剤、他の添加物などを含めて、任意の他の適切な食品または食品の組合せで作製することもできる。例えば、カラメル層または成分が含まれる場合は、これらは従来のカラメルまたは同様な糖菓材料を含むことができる。例えば、カラメルは、炭水化物と脂肪源のカラメル化プレミックスから主になる。カラメルは、少なくとも1つの脂肪源と少なくとも1つの炭水化物源を混合して、カラメルプレミックスを生成することによって作製することができる。特定のカラメルプレミックス組成物は、カラメルプレミックス中に約5重量%から約15重量%の植物性脂肪、より好ましくは約7重量%から約14重量%、最も好ましくは約10重量%から約13重量%の植物性脂肪を含む。カラメルプレミックス用の好ましい炭水化物は、トウモロコシシロップである。カラメルプレミックス中のトウモロコシシロップは、カラメルプレミックス中に好ましくは約25重量%から約60重量%、より好ましくは約35重量%から約50重量%、最も好ましくは約40重量%から約48重量%の範囲のトウモロコシシロップが存在する。このような用途向けに使用するカラメルは、具体的にはトウモロコシシロップ、スキムミルク、砂糖、部分水素化された綿実油およびパーム油、バター、ミルクタンパク質、塩、ならびに乳化剤から作製することができる。
本発明の食品バーは、28gのサービング当たり、少なくとも約5gのタンパク質、具体的には少なくとも約7gのタンパク質を送達するように調製することができる。別の特定の実施形態では、食品バーは、28gのサービング当たり、食品バーの全飽和脂肪含有量が約3gを超えない、具体的には約2.5gを超えないように調製することができる。具体的には、所与の成分および全体としてのバー中に全糖アルコール内容物を約20重量%未満、具体的には約15重量%未満しか含有しないように食品バーを調製する。完成した食品バーは、食品バーの全重量に対して例えば約75重量%から約95重量%、具体的には約85重量%から約92重量%の固形分レベルを有するように調製することができる。完成した食品バー全体にわたる水分含有量および分布は、通常は室温で生産した後数日以内に実質的に平衡になる。
図5を参照して、本発明の実施形態による食品バーを作製するための例示的非限定的な方法500を示す。
食品バーを任意の適切な方式で包装することができる。一実施形態では、バーは当技術分野で知られている従来の金属化軟質フィルムや箔などで個別にラップし、この一般的な目的のために使用する。個別にラップした食品バーを第2の容器で包装することができ、あるいは複数のラップしたバーを共通の第2の容器またはカートンもしくは袋で包装することができる。
Claims (22)
- コア成分およびコンパウンドコーティングを含む食品であって、
前記コンパウンドコーティングは、前記コア成分の少なくとも一部分を被覆し、0.45から0.65の水分活性を有し、
前記コア成分は、
水分源、
部分加水分解乳タンパク質、
部分加水分解マメタンパク質、
非加水分解未処理乳タンパク質、および
非加水分解未処理マメタンパク質、
を含む混合物であり、0.40から0.60の水分活性にバランスされ、
前記部分加水分解乳タンパク質および部分加水分解マメタンパク質は、その合計量が、食品を苦くすることなく、また部分加水分解乳タンパク質および部分加水分解マメタンパク質の代わりにそれらを未処理の形で使用する以外は同一の食品と比較し、貯蔵寿命中に食品が堅くなることを低減するのに有効な量で存在し、
前記部分加水分解乳タンパク質および部分加水分解マメタンパク質は、食品加工中および貯蔵寿命中、水和して硬化することがないよう食品中の水分源から水分を獲得し、
前記コンパウンドコーティングの水分活性および前記コア成分の水分活性は、貯蔵寿命中、水分の平衡を維持し、および
前記混合物は、貯蔵寿命中しっとりした噛み応えのあるままに維持される自己支持型の前記食品のコア成分に形成し得る生地を提供する、
ことを特徴とする食品。 - 部分加水分解乳タンパク質が、部分加水分解ホエータンパク質および部分加水分解ミルクタンパク質の少なくとも一方を含み、部分加水分解マメタンパク質が、部分加水分解大豆タンパク質を含むことを特徴とする請求項1に記載の食品。
- 非加水分解未処理乳タンパク質が、ホエータンパク質濃縮物、ミルクタンパク質濃縮物、ホエータンパク質単離物、およびミルクタンパク質単離物からなる群から選択され、非加水分解未処理マメタンパク質が、大豆タンパク質濃縮物および大豆タンパク質単離物からなる群から選択されることを特徴とする請求項1に記載の食品。
- 部分加水分解タンパク質および未処理タンパク質が、米国篩メッシュ#100で最大マイナス10%のサイズの粉末の形であることを特徴とする請求項1に記載の食品。
- 水分源が、食用結合剤系を含むことを特徴とする請求項1に記載の食品。
- 部分加水分解乳タンパク質および部分加水分解マメタンパク質の全量が、タンパク質含有成分の1から40重量%を構成することを特徴とする請求項5に記載の食品。
- 部分加水分解乳タンパク質および部分加水分解マメタンパク質が、それぞれ、6%から10%の加水分解度を有することを特徴とする請求項1に記載の食品。
- 前記食品が食品バーであることを特徴とする請求項1に記載の食品。
- タンパク質含有成分およびコンパウンドコーティングを含む食品バーであって、
前記コンパウンドコーティングは、前記タンパク質含有成分の少なくとも一部分を被覆し、0.45から0.65の水分活性を有し、
前記タンパク質含有成分は、
単位マトリックスとして、
1.0重量%から9重量%の部分加水分解乳タンパク質、
0.5重量%から8.5重量%の部分加水分解マメタンパク質、
0.5重量%から8.5重量%の非加水分解未処理乳タンパク質、
55重量%から85重量%の非加水分解未処理マメタンパク質、
20重量%から30重量%の酸カゼインまたはその食用塩、および
20重量%から40重量%の水分含有結合剤材料、
を含み、0.40から0.60の水分活性にバランスされ、
前記部分加水分解乳タンパク質および部分加水分解マメタンパク質は、食品バーを苦くすることなく、また部分加水分解乳タンパク質および部分加水分解マメタンパク質の代わりにそれらを未処理の形で使用する以外は同一の食品バーと比較し、食品加工中および貯蔵寿命中に食品バーが堅くなることを低減し、
前記部分加水分解乳タンパク質および部分加水分解マメタンパク質は、食品加工中および貯蔵寿命中、水和して硬化することがないよう食品バー中の水分源から水分を獲得し、
前記コンパウンドコーティングの水分活性および前記タンパク質含有成分の水分活性は、貯蔵寿命中、水分の平衡を維持し、および
前記単位マトリックスは、貯蔵寿命中しっとりした噛み応えのあるままに維持される自己支持型の前記食品バーのタンパク質含有成分に形成し得る生地を提供する、
ことを特徴とする食品バー。 - タンパク質含有成分と接触しているカラメル成分;ならびにタンパク質含有成分およびカラメル成分の少なくとも一部分に適用されたチョコレート含有組成物をさらに含むことを特徴とする請求項9に記載の食品バー。
- 部分加水分解乳タンパク質が、部分加水分解ホエータンパク質および/または部分加水分解ミルクタンパク質を含み、部分加水分解マメタンパク質が、部分加水分解大豆タンパク質を含むことを特徴とする請求項9に記載の食品バー。
- 未処理乳タンパク質が、ホエータンパク質濃縮物、ミルクタンパク質濃縮物、ホエータンパク質単離物、およびミルクタンパク質単離物からなる群から選択され、未処理マメタンパク質が、大豆タンパク質濃縮物および大豆タンパク質単離物からなる群から選択されることを特徴とする請求項9に記載の食品バー。
- 部分加水分解タンパク質および未処理タンパク質が、米国篩メッシュ#100で最大マイナス10%のサイズの粉末の形であることを特徴とする請求項9に記載の食品バー。
- 結合剤材料が炭水化物シロップを含むことを特徴とする請求項9に記載の食品バー。
- 10から70gの別々の形状を含むことを特徴とする請求項9に記載の食品バー。
- コア成分およびコンパウンドコーティングを含むブレンドであって、
前記コンパウンドコーティングは、前記コア成分の少なくとも一部分を被覆し、0.45から0.65の水分活性を有し、
前記コア成分は、水分およびタンパク質を含み、
前記タンパク質は、
5重量%から30重量%の部分加水分解乳タンパク質、
5重量%から15重量%の部分加水分解マメタンパク質、
20重量%から30重量%の非加水分解未処理乳タンパク質、
5重量%から5重量%の非加水分解未処理マメタンパク質、および
26重量%から36重量%の酸カゼインまたはその食用塩、
を含み、0.40から0.60の水分活性にバランスされ、
前記部分加水分解乳タンパク質および部分加水分解マメタンパク質は、ブレンドを苦くすることなく、また部分加水分解乳タンパク質および部分加水分解マメタンパク質の代わりにそれらを未処理の形で使用する以外は同一のブレンドと比較し、食品加工中および貯蔵寿命中にブレンドが堅くなることを低減し、
前記部分加水分解乳タンパク質および部分加水分解マメタンパク質は、食品加工中および貯蔵寿命中、水和して硬化することがないようブレンド中の水分源から水分を獲得し、
前記コンパウンドコーティングの水分活性および前記タンパク質含有成分の水分活性は、貯蔵寿命中、水分の平衡を維持し、および
前記ブレンドは、貯蔵寿命中しっとりした噛み応えのあるままに維持される自己支持型の前記ブレンドのコア成分に形成し得る生地を形成する、
ことを特徴とするブレンド。 - 部分加水分解乳タンパク質が、部分加水分解ホエータンパク質および/または部分加水分解ミルクタンパク質を含み、部分加水分解マメタンパク質が、部分加水分解大豆タンパク質を含むことを特徴とする請求項16に記載のブレンド。
- 未処理乳タンパク質が、ホエータンパク質濃縮物、ミルクタンパク質濃縮物、ホエータンパク質単離物、およびミルクタンパク質単離物からなる群から選択され、未処理マメタンパク質が、大豆タンパク質濃縮物および大豆タンパク質単離物からなる群から選択されることを特徴とする請求項16に記載のブレンド。
- 部分加水分解タンパク質および未処理タンパク質が、米国篩メッシュ#100で最大マイナス10%のサイズの粉末の形であることを特徴とする請求項16に記載のブレンド。
- 部分加水分解乳タンパク質および部分加水分解マメタンパク質が、それぞれ、6%から10%の加水分解度を有することを特徴とする請求項16に記載のブレンド。
- 全部分加水分解乳タンパク質および加水分解されていない全未処理乳タンパク質をそれぞれ22から28の比で含有し、全部分加水分解マメタンパク質および加水分解されていない全未処理マメタンパク質をそれぞれ22から28の比で含有することを特徴とする請求項16に記載のブレンド。
- 全部分加水分解乳タンパク質および加水分解されていない全未処理乳タンパク質をそれぞれ22から28の比で含有し、全部分加水分解マメタンパク質および加水分解されていない全未処理マメタンパク質をそれぞれ22から28の比で含有することを特徴とする請求項1に記載の食品。
