Abstract
PROCESSO PARA PREPARAR UM PRODUTO DE CONFEITARIA GELADO E PRODUTO DE CONFEITARIA CONGELADO. A presente invenção propõe um processo para preparar um produto de confeitaria gelado que possui um teor de sólidos de 8 a 25% em peso e uma incorporação de ar de 10 a 100%, processo esse que compreende as etapas de: aerar e parcialmente congelar uma mistura de ingredientes; produzir uma massa que compreende a mistura aerada, parcialmente congelada e partículas congeladas que possuem um tamanho de 0,1 a 1 mm; em que a quantidade de partículas congeladas varia de 10 a 70% em peso da massa; e congelar depois a massa em uma extrusora de baixa temperatura. A presente invenção propõe igualmente um produto de confeitaria gelado.
