Abstract
Procédé de production de produits de boulangerie dans lequel un agent de conditionnement de pate formé d'une matière d'allium est incorporés dans des formulations de pate comprenant de la farine, de l'eau et des agents de levée, cette matière d'allium étant utilisée en des quantités efficaces pour permettre de réduire le temps de mélange requis pour développer une pate, accroitre l'absorption d'eau par la farine au cours du développement de la pate et accroitre l'extensibilité de celle-ci, l'ail sous une forme déshydratée convenant particulièrement bien à cet effet.
