Abstract
Ce procédé de fabrication de produits pulvérulents à dissolution rapide à base de légumineuses est simple, bref et économique. Les légumineuses sèches sont broyées à sec et on prépare à partir de cette farine additionnée d' alpha -amylase et à partir d'eau, une suspension qui est soumise à un traitement qui comprend une phase brève de cuisson intense, une phase de réaction sous effet de l' alpha -amylase et une phase de séchage.
