Abstract

PURPOSE: To obtain a dressing suitable for any one of meat, fish and fresh vegetable, by utilizing "ume" flesh and "ume" vinegar.
CONSTITUTION: An onion, which is peeled, randomly cut and washed with water, olive, strung and randomly cut celery, boiled egg, pickles and "ume" flesh are introduced into a mixer, and mixed with vinegar and "ume" vinegar with stirring. The resultant mixture is then added to the egg yolk contained in a bowl and further mixed. Salad oil is then added to the mixture slowly to give a viscous substance in the form of mayonnaise.
