Abstract

PURPOSE:To make a salad of high storage stability, readily by mixing an oil-in- water type emulsion food containing gum which is dispersed in the oil phase with ingredients which easily exude water. CONSTITUTION:(a) 0.7-1.5wt.% of gum such a Xanthan gum, trangacanth gum, tamarind gum, locust bean gum or guar gum is dispersed in (b) 10-80wt.% of oil, when needed, yolk and vinegar are added, then they are emulsified by mixing to prepare an oil-in-water type emulsion food such as mayonnaise (A). Then, the emulsion food is mixed with (b) more than 60wt.% of the ingredients which is high exudative, for example, vegetables such as cucumber, carrot, celery, onion, cabbage and/or fish and/or animal meat such as canned tuna, fishes, shells, CESIUM, or chicken.
