Abstract

PURPOSE: To prepare a paste food of fish meat having improved quality, by blending and mincing fish meat in the presence of ozone, followed by sterilization, be laching, and deodorization.
CONSTITUTION: Fish meat is put in a closed type stirring machine, and ozone is introduced to it to make its concentration, e.g., 1W10ppm. The fish meat is blended, minced, and processed conventionally into a paste food, e.g., kamaboko (boiled fish paste), hanpen (a cake of pounded fish), chikuwa (a kind of fish paste), satsumaage (fried fish balls), etc.
