Abstract
Description
Claims (13)
- 1.親油性の成分、および中に水が固定化されている水性成分からなることを特 徴とする水和親油性組成物。
- 2.水性成分が水または水性組成物からなることを特徴とする請求項1記載の組 成物。
- 3.水性組成物が、生クリーム、ジュース、リキュール、天然蜂蜜、牛乳、液体 糖、香味成分、ぶどう酒、コーヒーまたはその混合物からなる群から選択される ことを特徴とする請求項2記載の組成物。
- 4.水性成分中の水が三次元構造体中に固定化されていることを特徴とする請求 項1〜3のいずれか一つに記載の組成物。
- 5.水性成分中の水がゲル中に固定化されていることを特徴とする請求項1〜4 のいずれか一つに記載の組成物。
- 6.ゲルが、ゲル化特性を有する炭水化物および/またはペクチンからなること を特徴とする請求項5記載の組成物。
- 7.炭水化物が、フルクタン類好ましくは任意に修飾されているイヌリン;任意 に改質されているジャガイモ粉末;でんぷん類好ましくは任意に改質されている トウモロコシ、小麦、米またはキャッサバのでんぷん;アラビアゴム;またはそ の混合物からなる群から選択されることを特徴とする請求項6記載の組成物。
- 8.親油性成分中に、0.1〜15重量%の水または水性組成物を含有すること を特徴とする請求項1〜7のいずれか一つに記載の組成物。
- 9.親油性成分中に、0.1〜10%の水または水性組成物を含有することを特 徴とする請求項8記載の組成物。
- 10.親油性成分がチョコレートマスまたはチョコレート代用マスであることを 特徴とする請求項1〜9のいずれか一つに記載の組成物。
- 11.親油性成分を、水が中に固定化されている水性成分と混合することを特徴 とする請求項1〜10のいずれか一つに記載の水和親油性組成物を製造する方法 。
- 12.水が、三次元構造好ましくはゲルの生成によって固定化されることを特徴 とする請求項11記載の方法。
- 13.水が請求項11または12にしたがって香味成分中に予め固定化されてい ることを特徴とする、多量の水を含有する香味成分を親油性マスまたはチョコレ ートマスに混合する方法。
