Claims (2)
- 食塩と旨味成分を含有する減塩された飲食物に対して、固形分あたりの糖組成が、5糖類以上が50重量%以上且つ7糖類以上が25重量%以下である低糖化還元水飴を添加することで、甘味の後引きにより、前記飲食物において減塩されない場合と比べて同等以上の旨味を有する程度に旨味を増強させる工程を有する、減塩された飲食物の旨味を増強させる方法。
- 食塩と旨味成分を含有し、旨味成分1重量部に対して食塩が0.5〜1重量部減塩された飲食物に対して、前記低糖化還元水飴を、旨味成分1重量部に対して固形分換算で0.1〜1重量部添加する、請求項1記載の減塩された飲食物の旨味を増強させる方法。
