【発明の属する主な技術分野】この発明は、じゃがいも
を利用した、表裏のスライス形状を違えたじゃがいも加
工品の製造方法に関するものである。

【従来の技術】従来のじゃがいも加工品、主にポテトチ
ップスは、平面のみの表裏同一形状、もしくは、線状に
凹凸のついた表裏同一形状である。

【発明が解決しようとする課題】これは次のような欠点
があった。
イ.表裏両面に線状の凹凸がついたものは、輸送時その
線に沿って割れやすく、食品として見栄えが悪くなり著
しく価値を欠くものになってしまっていた。
ロ.平面加工が表裏両面に加工されたものの場合、咀嚼
時に食感の満足感が欠ける物があった。
ハ.表裏平面のみ、もしくは線状の凹凸のみをつけたも
のは、舌触りが画一的で、咀嚼時の娯楽性を欠く物にな
っていた。
ニ.表裏平面のみ、もしくは線状の凹凸のみをつけたも
のは、見栄えが画一的で、食べようと手にした時の、見
た目のおいしそうさに、新規性を欠くものだった。

【課題を解決するための手段】上記問題点を解決するた
め、本発明は表裏形状の異なるポテトチップスの製造方
法として、原料であるじゃがいもの表面の汚れ、皮の除
去を行い、凹凸をつけたスライサー刃(1)と平面カッ
ト用スライサー刃(2)を交互に、台座(3)に載せた
遠心スライス機械を用い、スライスしその後、水洗い、
湯通し、フライ加工することを特徴とする。

【発明実施の形態】以下、本発明の実施の形態について
説明する。
ホ.線状に凹凸をつけたスライサー刃(1)を1間隔お
きに、円形の台座(3)に、設置する。
ヘ.平面からなるスライサー刃(2)を1間隔おきに、
円形の台座(3)に、設置する。
ト.上記ホ、ヘを交互に設置した台座(3)を用いて、
じゃがいもをスライスする事で、本発明の利点を得る事
ができる。
本発明は以上の構成よりなっている。

【発明の効果】以上説明したように、本発明の製造方法
は、じゃがいもをスライスする際に、表裏形状を違える
事で、表1にしめされるように食感に優れ、見た目にも
優位性を得る事を利点とし、なおかつ、表2に示される
ように、輸送時の割れを防ぐ硬度を同時に得る事ができ
るものである。
