Abstract
L'invention concerne la fabrication des fromages. Elle a pour objet un procédé permettant d'améliorer le rendement en caille par formation d'un complexe de protéines de petit-lait et de phosphate condensé qui reste dans le caillé lorsque le petit-lait en est séparé. Le complexe est formé par addition au lait d'un phosphate condensé (par exemple polyphosphate de Sodium ou polymétaphosphate de potassium) avant ou après acidification. Application à la fabrication des fromages désignés aux Etats-Unis d'Amérique par << cottage cheese >>, << backer's cheese >>, << quark cheese >>, << cream cheese >> et << fromage de Neufchâtel >>.
