Abstract

On produit des compositions de malto-oligosaccharide contenant jusqu'à environ 40 % de maltohexaose en poids, à partir de substrats féculents et de maltodextrines par une simple hydrolyse à une étape avec certaines alpha-amylases thermostables tirées du Bacillus stearothermophilus. Ce procédé est particulièrement utile dans la production de nouvelles compositions dont les propriétés permettront de nouvelles applications dans les industries à la fois alimentaires et non alimentaires.
