Abstract

一种香菇调味汁及其制作方法,其工艺是将原料(香菇、滑子菇、黑木耳、草菇以4∶1∶1∶1的比例)整理后,再提取浓缩,按照配方加入辅料,然后包装灭菌。烹饪时添加此香菇调味汁,能让菜肴鲜美无比,口感清香,且营养健康。

本发明属于一种真菌类复合调味料及其制作方法。
背景技术
中国调味品企业正在以每年500~600亿元人民币的产值,平均10~20%的增长速度快速发展。2004年中国调味品消费总值约为590亿元人民币,增长23%,是我国调味品产业发展最迅猛的一年。调味品市场的发展主要是受食品业的拉动,在经济发达地区,每消费10元的食品,其中就包含了1元的调味品消费。
现在很多人都用味精,或鸡精作为主要调味品,但要想做出美味的,具有高营养价值的食品,单靠味精和鸡精是难以做到的。真菌类微生物营养价值高,譬如:黑木耳富含蛋白质、脂肪、糖类和钙、磷、铁等物质和胡萝卜素、烟酸、维生素B1、B2磷脂、甾醇等多种营养素,不但是一种天然的滋补剂,而且有排除人体肠道中的毛发,减少血液凝块,防止高血压、动脉粥样硬化和冠心病的作用;香菇所含蛋白质中的18种氨基酸,它含有一般蔬菜所缺乏的维生素D原,与阳光中的紫外线接触后生成维生素D,能增强人体抵抗力,有助于骨骼、牙齿生长,促进身体正常发育。富含30多种酶,能纠正人体酶缺乏。香菇中所含的腺膘呤可预防肝硬化,抑制血液中的胆固醇增加,有降低血压的功效。香菇中所含的香菇多糖和干扰素诱导物,对抑制病毒和抗癌变有良效。利用一种或几种菇类的边角料,开发出一种营养价值高,价格低廉,使用简单,味道鲜美的复合型调味料具有实践性的意义。
发明内容
本发明提供一种以香菇为主要原料的液体复合调味料,不仅含有食用菌特有的浓郁味道,而且色泽柔和、质地幼滑、咸淡适中。烹饪时添加此香菇调味汁,能让菜肴鲜美无比,口感清香,且营养健康。
本发明解决其技术问题所采用的技术方案是:将原料整理后,再提取浓缩,按照配方加入辅料,然后包装灭菌。
本发明的有益效果是,烹饪时作为调味料,能让菜肴鲜美无比,口感清香,且营养健康。
具体实施方式
1、原料整理:香菇、滑子菇、黑木耳、草菇以4∶1∶1∶1的比例,清洗后,切碎至黄豆大小。
2、提取:将切碎的菇粒放入多功能提取罐中,加水二次流提取2小时,菇粒与水的比例是1∶10。
3、浓缩:将提取罐过滤出来的液体放入真空浓缩罐中,浓缩至液体浓度为30%。
4、加辅料:将菇汁原液倒入夹层锅中,加热沸腾后,加入2.2%酵母提取物、1.1%食盐、0.7%白砂糖、0.8%酱油、1%谷氨酸钠、0.1%聚丙烯酸钠,边加热边搅拌,加热5分钟。
5、包装:过滤后按照销售规格用玻璃瓶包装。

Claims (2)

1、一种香菇调味汁及其制作方法,其特征在于:该香菇调味汁由94.1%菇类提取浓缩物、2.2%酵母提取物、1.1%食盐、0.7%白砂糖、0.8%酱油、1%谷氨酸钠、0.1%聚丙烯酸钠组成,其制作方法是将菇类提取物加热沸腾后,按配方加入辅料加热5分钟,过滤后装瓶灭菌。
2、根据权利要求书1所述的香菇调味汁,其特征在于:菇类提取浓缩物由70%水、17.1%香菇提取物、4.3%滑子菇提取物、4.3%黑木耳提取物、4.3%草菇提取物组成。
