技术领域
本发明涉及一种蛋白固体饮料的技术领域,尤其是一种低脂型全营养素配方及其制备方法。
背景技术
蛋白质是人体不可缺少的七大重要营养素之一,是保证机体健康最重要的营养素,它是维持和修复机体以及细胞生长所必需的,它不仅影响机体组织如肌肉的生长,还参与激素的产生、免疫功能的维持、其它营养物质和氧的转运以及血红蛋白的生成、血液凝结等多方面。人体通过日常的动物性食物和植物性食物来摄取动物性蛋白以及植物性蛋白。随着人们的健康意识日益增强以及收入水平的提高,人们对蛋白质的要求逐渐提高。动物性蛋白营养价值高,但含有对人体有害的过量的饱和脂肪、胆固醇、浓缩的荷尔蒙、抗生素等,过量食用动物性蛋白质会导致人体脂肪和胆固醇升高。因此如何设计一款低脂肪、同时营养均衡的产品显得尤为重要。

1.一种低脂型全营养素配方,其特征在于:包括按照以下分数配比的原料:麦芽糊精10-15份、大豆分离蛋白5-12份、浓缩乳清蛋白粉10-12份、聚葡萄糖5-8份、植物脂肪粉6-12份、菊粉1-2份、小麦低聚肽1-3份、磷酸氢钙0.5-2份、硫酸镁0.5-2份、硫酸亚铁0.5-2份、硫酸锌0.5-2份、椰蓉1-4份、棕榈酸维生素A0.5-1份、胆钙化醇0.5-15份、dl-α-醋酸生育酚0.5-1份、盐酸硫胺素0.5-1份、核黄素0.5-1份、抗性糊精0.1-2份、盐酸吡哆醇10-15份、氰钴胺0.5-1份、L-抗坏血酸钠0.5-1份、烟酰胺0.2-0.5份、叶酸1-1.5份、D-泛酸钙1-1.5份、β-胡萝卜素1-1.5份、牛磺酸1-1.5份、黄原胶1-1.5份、柠檬酸钾1-1.5份、香兰素0.05-0.1份、牡蛎活性肽1-4份、乳清蛋白肽3-5份、燕麦膳食纤维肽0.5-3份、鼠李糖乳杆菌冻干粉1-1.2份;植物乳双歧杆菌冻干粉1-1.2份。
2.根据权利要求1所述的一种低脂型全营养素配方,其特征在于:还包括虫草粉末0.2-0.8份。
3.根据权利要求1或2所述的一种低脂型全营养素配方,其特征在于:还包括鱼胶原蛋白肽粉1-1.5份。
4.根据权利要求1或2所述的一种低脂型全营养素配方,其特征在于:还包括魔芋粉末0.2-0.6份。
5.根据权利要求1或2所述的一种低脂型全营养素配方,其特征在于:还包括奇亚籽粉末0.5-0.8份。
6.根据权利要求1所述的一种低脂型全营养素配方,其特征在于:包括按照以下分数配比的原料:麦芽糊精11份、大豆分离蛋白6份、浓缩乳清蛋白粉11份、聚葡萄糖7份、植物脂肪粉7份、菊粉1.5份、小麦低聚肽2份、磷酸氢钙0.6份、硫酸镁0.8份、硫酸亚铁1.5份、硫酸锌1份、椰蓉2份、棕榈酸维生素A0.6份、胆钙化醇1份、dl-α-醋酸生育酚0.6份、盐酸硫胺素0.7份、核黄素0.7份、抗性糊精0.7份、盐酸吡哆醇11份、氰钴胺0.6份、L-抗坏血酸钠0.6份、烟酰胺0.3份、叶酸1份、D-泛酸钙1份、β-胡萝卜素1份、牛磺酸1.3份、黄原胶1份、柠檬酸钾1.3份、香兰素0.1份、牡蛎活性肽1份、乳清蛋白肽4份、燕麦膳食纤维肽1份、鼠李糖乳杆菌冻干粉1份;植物乳双歧杆菌冻干粉1份。
7.一种低脂型全营养素配方的制备方法,其特征在于,具体包括以下步骤:
S100)将各组分采用常规的制剂方法制备成粉剂,颗粒状的原料组分要经过粉碎并通过40-50目筛网;
S200)预混合:先将麦芽糊精、大豆分离蛋白、浓缩乳清蛋白粉、聚葡萄糖、植物脂肪粉、菊粉、磷酸氢钙、硫酸镁、硫酸亚铁、硫酸锌、棕榈酸维生素A、胆钙化醇、dl-α-醋酸生育酚、盐酸硫胺素、核黄素、抗性糊精、盐酸吡哆醇、氰钴胺、L-抗坏血酸钠、烟酰胺;混合在一起,得预混合物,混匀时间为30-35分钟;
S300)再向预混合物中添加植物乳双歧杆菌冻干粉、小麦低聚肽、椰蓉、叶酸、D-泛酸钙、β-胡萝卜素、牛磺酸、黄原胶、柠檬酸钾、香兰素、牡蛎活性肽、乳清蛋白肽、燕麦膳食纤维肽、鼠李糖乳杆菌冻干粉进行总混,总混时间为60-120分钟;
S400)将样品分装,经检验合格后,装盒、装箱,成品检验合格后入库。
8.根据权利要求7所述的一种低脂型全营养素配方的制备方法,其特征在于,在步骤S200中混匀时间32分钟。
9.根据权利要求7所述的一种低脂型全营养素配方的制备方法,其特征在于,在步骤S300中混匀时间60分钟。
10.根据权利要求7所述的一种低脂型全营养素配方的制备方法,其特征在于,在步骤S200中搅拌后需要静置1-2分钟。
