本发明公开了富硒魔芋谷物固体饮料,包括如下原料:大豆分离蛋白、乳清分离蛋白、脱脂乳粉、燕麦粉、燕麦麸皮粉、麦芽糊精、抗性糊精、魔芋精粉、奇亚籽、圆包车前子壳、结晶果糖、低聚果糖、低聚异麦芽糖、富硒植物粉、矿物质混合物、维生素混合物、菊粉、多肽复合物、中链甘油三酯微囊粉、鹰嘴豆粉、玉米须粉、黑木耳粉、黑米粉、黄豆粉、白芸豆粉、银耳粉、莲子粉、核桃粉、紫薯粉、黑芝麻粉、红豆粉、薏仁粉、芡实粉、百合粉;以及富硒魔芋谷物固体饮料的制备方法。本发明的固体饮料富硒、饱腹感强、营养丰富、热量低;本发明的制备方法易于实施,便于工业化推广应用。
Description
技术领域
本发明涉及固体饮料领域。更具体地说,本发明涉及一种富硒魔芋谷物固体饮料及其制备方法。
背景技术
随着工作节奏的加快,繁重的工作压力使当代年轻人养成不健康的饮食习惯,如高热量的快餐,暴饮暴食,加上久坐不动,久而久之,体重不断飙升。因此,急需开发一款具有高膳食纤维、低碳水化合物、低血糖指数的全营养代餐产品,以在有效控制热量的摄入的同时满足人体的日常营养需求。
魔芋精粉的主要成分为葡甘聚糖,是一种天然的植物性可溶性膳食纤维,具有良好的营养和健康特性,具有很强的吸水性,吸水后体积可膨胀80-100倍,提供饱腹感,是现有代餐产品的主要成分。但现有的魔芋代餐产品存在口味单一,功能性单一、食用方式繁琐、营养价值低、代餐效果欠佳等问题。
发明内容
本发明的目的是提供一种富硒魔芋谷物固体饮料,以解决现有产品口味单一、功能性单一、营养价值低等问题。
为了实现根据本发明的目的和其它优点,提供了一种富硒魔芋谷物固体饮料,包括按重量份计的如下原料:大豆分离蛋白10-30份、乳清分离蛋白10-30份、脱脂乳粉20-30份、燕麦粉10-40份、燕麦麸皮粉10-40份、麦芽糊精5-10份、抗性糊精5-10份、魔芋精粉3-5份、奇亚籽0.5-3份、圆包车前子壳1-3份、结晶果糖5-30份、低聚果糖5-20份、低聚异麦芽糖5-20份、富硒植物粉0.01-0.1份、矿物质混合物0.05-0.2份、维生素混合物0.05-0.2份、菊粉0.05-0.3份、多肽复合物0.01-0.03份、中链甘油三酯微囊粉0.05-0.02份、鹰嘴豆粉25-45份、玉米须粉2-20份、黑木耳粉2-5份、黑米粉10-40份、黄豆粉20-40份、白芸豆粉10-30份、银耳粉5-10份、莲子粉5-10份、核桃粉5-20份、紫薯粉30-45份、黑芝麻粉15-40份、红豆粉1-5份、薏仁粉1-5份、芡实粉1-5份、百合粉1-5份。
优选的是,所述的富硒魔芋谷物固体饮料,所述富硒植物粉中的硒含量为3500mg/kg,且有机硒含量在80%以上。
优选的是,所述的富硒魔芋谷物固体饮料,所述魔芋精粉中的葡甘聚糖含量为99.9%。
优选的是,所述的富硒魔芋谷物固体饮料,所述矿物质混合物包括磷酸氢钙、焦磷酸铁、碳酸镁、硫酸锌。
优选的是,所述的富硒魔芋谷物固体饮料,所述微生素混合物包括维生素A醋酸酯、胆钙化醇、dl-α-生育酚、盐酸硫胺素、核黄素、盐酸吡哆醇、L-抗坏血酸钠、D-泛酸钙、叶酸、烟酰胺、氰钴胺、牛磺酸。
优选的是,所述的富硒魔芋谷物固体饮料,所述多肽复合物包括鱼胶原蛋白肽、玉米多聚肽、大豆多聚肽。
本发明还提供了一种富硒魔芋谷物固体饮料的制备方法,包括:
步骤一、按配方量,称取上述原料;
步骤二、将称量好的原料进行搅拌,混合均匀;
步骤三、对混合后的原料进行灭菌、包装。
优选的是,所述的富硒魔芋谷物固体饮料的制备方法,步骤一中,在称取上述原料前,将各原料分别过120目标准筛。
优选的是,所述的富硒魔芋谷物固体饮料的制备方法,步骤三中,所述包装是将35g灭菌后的混合料装入300mL耐高温食品级塑料瓶内,压紧瓶盖。
本发明至少包括以下有益效果:
第一、本发明的固体饮料中添加了魔芋精粉以及燕麦粉、燕麦粉麸皮等谷物粉类,膳食纤维含量高,在胃中不会降解,且魔芋精粉吸水后膨胀可达原体积的80-100倍,每次只食用少量就给人以饱腹感,因此,具有代餐饱腹的功效。
第二、本发明的固体饮料中添加了富硒植物粉,使得固体饮料中的硒含量在20μg/100g以上,有机硒含量80%以上,属于富硒代餐食品,填补了富硒食品代餐市场的空白。
第三、本发明的固体饮料中将抗性糊精、麦芽糊精和魔芋精粉复配使用,三者协同作用,改善了产品的溶解性和口感,溶解速度快,不结块,不沉底,色泽均匀,口感佳。
第四、本发明的固体饮料中将结晶果糖、低聚果糖和低聚异麦芽糖复配使用,协同调节甜度,具有甜度适宜、低糖、低热量等特点,可有效减轻血糖压力,同时低聚果糖还可双向调节人体微生态平衡,改善人体肠道健康状况。
第五、本发明的固体饮料中蛋白粉和脱脂乳粉的比例为1:1~4,可在满足蛋白质含量的同时,有效掩盖蛋白粉的腥味。
第六、本发明的固体饮料中的各谷物粉按照一定比例复配,协同增强风味,无需使用香精香料,即可使产品具有天然的谷物原香。
第七、本发明的固体饮料制备方法,易于实施,便于工业化推广应用。
第八、本发明的固体饮料的包装形式新颖,简洁便携,便于冲调和饮用。

一种富硒魔芋谷物固体饮料,以重量份计:大豆分离蛋白10份、乳清分离蛋白20份、脱脂乳粉20份、燕麦粉30份、燕麦麸皮粉10份、麦芽糊精5份、抗性糊精5份、魔芋精粉3份、奇亚籽1份、圆包车前子壳1份、结晶果糖15份、低聚果糖15份、低聚异麦芽糖13份、富硒植物粉0.08份、矿物质混合物0.1份、维生素混合物0.1份、菊粉0.1份、多肽复合物0.015份、中链甘油三酯微囊粉0.01份,鹰嘴豆粉35份、玉米须粉4份、黑木耳粉2份、黑米粉20份、黄豆粉30份、白芸豆粉15份、银耳粉5份、莲子粉5份、核桃粉6份、紫薯粉30份、黑芝麻粉16份、红豆粉1份、薏仁粉2份、芡实粉1份、百合粉3份;其中,富硒植物粉中的硒含量为3500mg/kg,且有机硒含量在80%以上;魔芋精粉中的葡甘聚糖含量为99.9%;矿物质混合物包括磷酸氢钙、焦磷酸铁、碳酸镁、硫酸锌;微生素混合物包括维生素A醋酸酯、胆钙化醇、dl-α-生育酚、盐酸硫胺素、核黄素、盐酸吡哆醇、L-抗坏血酸钠、D-泛酸钙、叶酸、烟酰胺、氰钴胺、牛磺酸;多肽复合物包括鱼胶原蛋白肽、玉米多聚肽、大豆多聚肽。

(1)称量:将粉碎过筛后的原料按照配方量称量;
(2)混料:将称量好的原料进行搅拌,混合均匀;
(3)灭菌
(4)包装:将35g混合均匀的原料装入300mL PET塑料瓶内,压紧瓶盖。
其食用方法如下:
(1)冲调:拧开瓶盖,加入240mL,60℃温水;
(2)摇匀:拧紧瓶盖,摇晃均匀。
(3)直接饮用。
实施例2:
一种富硒魔芋谷物固体饮料,以重量份计:大豆分离蛋白15份、乳清分离蛋白25份、脱脂乳粉25份、燕麦粉25份、燕麦麸皮粉25份、麦芽糊精6份、抗性糊精7份、魔芋精粉4份、奇亚籽1.5份、圆包车前子壳1份、结晶果糖18份、低聚果糖16份、低聚异麦芽糖15份、富硒植物粉0.1份、矿物质混合物0.1份、维生素混合物0.1份、菊粉0.1份、多肽复合物0.02份、中链甘油三酯微囊粉0.01份、鹰嘴豆粉30份、玉米须粉5份、黑木耳粉3份、黑米粉25份、黄豆粉25份、白芸豆粉14份、银耳粉6份、莲子粉8份、核桃粉10份、紫薯粉32份、黑芝麻粉18份、红豆粉2份、薏仁粉1份、芡实粉2份、百合粉2份;其中,富硒植物粉中的硒含量为3500mg/kg,且有机硒含量在80%以上;魔芋精粉中的葡甘聚糖含量为99.9%;矿物质混合物包括磷酸氢钙、焦磷酸铁、碳酸镁、硫酸锌;微生素混合物包括维生素A醋酸酯、胆钙化醇、dl-α-生育酚、盐酸硫胺素、核黄素、盐酸吡哆醇、L-抗坏血酸钠、D-泛酸钙、叶酸、烟酰胺、氰钴胺、牛磺酸;多肽复合物包括鱼胶原蛋白肽、玉米多聚肽、大豆多聚肽。

(2)摇匀:拧紧瓶盖,摇晃均匀;

6.如权利要求1所述的富硒魔芋谷物固体饮料,其特征在于,所述多肽复合物包括鱼胶原蛋白肽、玉米多聚肽、大豆多聚肽。

步骤一、按配方量,称取上述原料;
