背景技术
全营养配方食品是指可作为单一营养来源满足目标人群营养需求的特殊医学用途配方食品。
病人生病住院期间因忌口、进食受限、消化吸收障碍导致营养不良,仅靠日常膳食无法满足其营养需求,研究表明营养不良病人的住院时间显著长于无营养不良病人。因为营养不良可导致T淋巴细胞数目减少,降低自然杀伤细胞和IL-2的活性,减弱B细胞功能,延缓机体对致敏性抗原的反应,改变胞质的活力,从而减弱中性粒细胞对细菌的吞噬和杀伤作用,这对病人的防御***十分不利,使病人难以耐受手术、放疗或化疗对机体的影响,易引起伤口愈合不良、瘘管形成、感染等并发症的发生。
据报道,患有癌症、糖尿病、肾病等疾病的病人常存在多种因素导致的营养不良,其中癌症病人营养不良发生率约为40%-80%,糖尿病病人营养不良发生率高达50%以上。改善病人的营养状况,对预防感染,减少并发症,缩短住院时间,提高病人生存质量和延长生存时间有重要意义。低收入者或经济状况欠佳者因经济能力有限,在无法采用更高效的治疗手段和药物情况下,更需要充足的营养保障来应对长期的治疗或康复。而目前,针对病人的营养合理、价格优惠的全营养配方食品少之又少。
因此,开发一种双蛋白全营养配方食品,具有重大的经济效益和社会意义。

本发明双蛋白的制备方法为:将乳清蛋白与大豆蛋白按质量比1:1-1.5的比例混合,形成物料,物料经超微粉碎工艺、微粒化工艺处理后得到双蛋白。
其中:
超微粉碎工艺为:在气流压力为0.85-1.0MPa,气流温度为10-15℃的条件下,控制气流式超微粉碎机的变频电机转速为14500-16500r/min,将物料粉碎至粒度为5-8μm的蛋白粉体;
微粒化工艺为:将蛋白粉体配成浓度为0.08-0.12g/mL的蛋白分散液,在85-95℃湿热处理25-35min后,采用转速为11000-12000r/min的高速乳化剪切机处理3-5min。
本发明所述的双蛋白全营养配方食品的制备方法如下:以双蛋白全营养配方食品质量100克计,将蛋白、碳水化合物、维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素、钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒、铬营养成分的原料灭菌后,平均分成5份,形成功能袋;
脂肪营养成分的原料灭菌后,平均分成5份,形成能量袋。
其中:灭菌功率为425-500W,灭菌时间为100-120s,灭菌时原料的覆盖厚度为5-10mm。
本发明所述的双蛋白全营养配方食品的食用方法如下:
目标人群的年龄为18-64岁,不包括孕妇和哺乳期妇女;
用量为:0.4袋/(kg·d),总量不超过27袋;
按照以下两种方法之一食用:
(1)用300-400mL的开水降温至40-60℃,加入功能袋和能量袋中的营养物质,搅拌、摇匀后,直接饮用或经管饲摄入;
(2)将功能袋中的营养物质添加到不含有食盐的日常饮食中食用,日常饮食中含有的脂肪与能量袋中的脂肪含量一致。
本发明产品的销售方式为直接销售给消费者,不通过医院、超市或药店等场所或途径,减少中间环节,降低费用,实现低价薄利销售的特点,消费者可以更经济、更实惠的食用,满足消费者长期食用的要求。
本发明的有益效果如下:
本发明双蛋白全营养配方食品的效果取决于营养成分的各自作用和彼此间的协同作用。
本发明采用大豆蛋白与乳清蛋白组成的双蛋白,避免了单一蛋白的缺陷。因此,通过两者结合互相补充,扬长避短,使蛋白更有利于人体的吸收、身体的调节。此外,乳清蛋白的生物效价、可吸收性要比大豆蛋白更强,而乳清蛋白相比大豆蛋白更容易发生羰基化反应,羰基化反应会影响蛋白质的结构和功能,进而影响产品的色泽、风味、理化品性和功能特性。为了避免乳清蛋白发生羰基化反应,本发明采用大豆蛋白和乳清蛋白双蛋白复合模式,使得后续加工中乳清蛋白发生羰基化反应时,因大豆蛋白的添加使得乳清蛋白浓度降低,降低了乳清蛋白发生羰基化的比例。同时,大豆蛋白中的球蛋白优于乳清蛋白的纤维蛋白发生羰基化反应,从而对乳清蛋白起到一定的保护作用。
大豆蛋白与乳清蛋白经超微粉碎后,提高了蛋白颗粒的比表面积、表面能和孔隙率,从而增加了蛋白颗粒与油的接触面积,吸油性明显提高。超微粉碎导致蛋白内部疏水基团暴露,蛋白疏水性增强,乳化性和乳化稳定性提高;同时链段柔性的增加以及疏水基团、极性基团和-SH的充分暴露,增加了蛋白的起泡性及泡沫稳定性。因此,本发明利用超微粉碎工艺处理,使得蛋白具有更好的功能性质,从而改善了产品溶解性、起泡性等产品品质方面的特性。微粒化处理大豆蛋白与乳清蛋白,使得蛋白形成0.1-10μm的小颗粒,当颗粒蛋白小于人体口腔粘膜对其感知程度的阈值,会产生类似奶油的滑腻口感,从而改善产品的口感。
本发明选用的乳清蛋白是一种优质蛋白质,营养价值高,必需氨基酸种类和含量齐全,易被消化吸收,能够增强机体免疫,脂肪与乳糖的含量低,含有β-乳球蛋白、α-乳白蛋白、免疫球蛋白等多种活性成分,较其他动物性蛋白质中的过量饱和脂肪、胆固醇等有害物质少,能防止血脂和胆固醇升高,对心血管疾病有益。大豆蛋白是营养价值最高的植物蛋白,不含胆固醇,氨基酸结构接近人体氨基酸的结构,价格便宜,但是其口感不佳,具有腥味,且溶解性不好。而乳清蛋白具有口感佳、溶解性好的优点,但是其价格较高。本发明配方中采用大豆蛋白和乳清蛋白双蛋白的形式,结合了植物蛋白和动物蛋白两者优势,避免了单一蛋白的不足,又降低了原料成本,改善了口感,提高了产品品质。
大豆油中单不饱和脂肪酸含量较高,其中α-亚麻酸占7%、亚油酸占55%,满足《特殊医学用途配方食品通则》中对α-亚麻酸和亚油酸功能的要求。
羟丙基淀粉是良好的助悬剂,助悬效果好,不粘壁,易分散,絮凝颗粒细腻。麦芽糊精具有良好的溶解性,能够改善产品的流动性。
本发明铬元素的添加能够改善糖尿病患者的糖、脂代谢紊乱;钙元素的添加形式以有机钙为主,辅以无机钙,在保证钙元素利用度高的同时,又降低了产品价格。
本发明全营养配方食品以大豆蛋白和乳清蛋白相复合的形式,两种蛋白互相取长补短,为机体提供充足、全面的营养外,同时具有颗粒小、稳定性好、能耗低等优良的产品品质和生产工艺特点;本发明全营养配方食品的制备方法和配方不仅改进了产品的风味、性状和品质,降低产品的成本,还符合国家新旧动能转化发展趋势。
另外,本发明双蛋白全营养配方食品价格低廉,适于低收入者长期食用,营养搭配合理,易于消化吸收,能够作为单一营养来源满足进食受限、消化吸收障碍病人的营养需求;能够改善病人营养状况,对预防感染,减少并发症,缩短住院时间,提高病人生存质量和延长生存时间有重要意义。

实施例1
每百克双蛋白全营养配方食品中营养成分如下:
蛋白34.4g、脂肪3.60g、碳水化合物73.66g、维生素A 189.21μg、维生素D 3.363μg、维生素E 3.363mg、维生素K1 18.59μg、维生素B1 0.40mg、维生素B2 0.354mg、维生素B60.432mg、维生素B12 0.531μg、烟酸0.89mg、叶酸93.81μg、泛酸2.69mg、维生素C 23.01mg、生物素8.85μg、钠458.48mg、钾1798.74mg、铜245.20μg、镁129.15mg、铁10.73mg、锌5.21mg、锰287.03μg、钙287.63mg、磷372.26mg、碘47.76mg、硒30.98μg、铬75μg。
制备每百克全营养配方食品中的原料如下:
双蛋白34.4g、大豆油3.60g、羟丙基淀粉73.66g、醋酸视黄酯189.21μg、维生素D23.363μg、D-α-生育酚3.363mg、维生素K1 18.59μg、盐酸硫胺素0.40mg、核黄素0.354mg、盐酸吡哆醇0.432mg、氰钴胺0.531μg、烟酸0.89mg、叶酸93.81μg、D-泛酸钙2.99mg、L-抗坏血酸23.01mg、D-生物素8.85μg、氯化钠1166.62mg、柠檬酸钾3438.48mg、硫酸铜612.5μg、氧化镁215.25mg、富马酸亚铁32.62mg、氧化锌6.5mg、硫酸锰1.16mg、柠檬酸钙1369.54mg、磷酸二氢钾1692.1mg、碘酸钾80.94μg、***钠67.94μg、氯化铬375μg。
其中:
双蛋白的制备方法为:将大豆蛋白17.2g和乳清蛋白17.2g混合,形成物料,在气流压力为0.9MPa,气流温度为15℃的条件下,控制气流式超微粉碎机的变频电机转速为16500r/min,将物料粉碎至粒度为5μm的蛋白粉体;将蛋白粉体配成浓度为0.10g/mL的蛋白分散液,在90℃湿热处理30min后,采用转速为12000r/min的高速乳化剪切机处理4min,得到双蛋白。
制备方法如下:
将双蛋白、羟丙基淀粉、醋酸视黄酯、维生素D2、D-α-生育酚、维生素K1、盐酸硫胺素、核黄素、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、氧化锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、***钠、氯化铬,于500W的灭菌器中灭菌100s,灭菌后,平均分成5份,形成功能袋;
将大豆油于500W的灭菌器中灭菌100s,灭菌后,平均分成5份,形成能量袋。
实施例2

其中:
双蛋白的制备方法为:将大豆蛋白20g和乳清蛋白14.4g混合,形成物料,在气流压力为0.85MPa,气流温度为15℃的条件下,控制气流式超微粉碎机的变频电机转速为14500r/min,将物料粉碎至粒度为8μm的蛋白粉体;将蛋白粉体配成浓度为0.08g/mL的蛋白分散液,在85℃湿热处理25min后,采用转速为10000r/min的高速乳化剪切机处理5min,得到双蛋白。
制备方法如下:
将双蛋白、羟丙基淀粉、醋酸视黄酯、维生素、D-α-生育酚、维生素K1、盐酸硫胺素、核黄素、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、氧化锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、***钠、氯化铬,于500W的灭菌器中灭菌100s,灭菌后,平均分成5份,形成功能袋;
将大豆油于500W的灭菌器中灭菌100s,灭菌后,平均分成5份,形成能量袋。

双蛋白的制备方法为:将大豆蛋白18g和乳清蛋白16.4g混合,形成物料,在气流压力为1.0MPa,气流温度为15℃的条件下,控制气流式超微粉碎机的变频电机转速为16500r/min,将物料粉碎至粒度为5μm的蛋白粉体;将蛋白粉体配成浓度为0.12g/mL的蛋白分散液,在95℃湿热处理35min后,采用转速为12000r/min的高速乳化剪切机处理3min,得到双蛋白。
制备方法如下:
将双蛋白、麦芽糊精、醋酸视黄酯、维生素D2、D-α-生育酚、维生素K1、盐酸硫胺素、核黄素、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、氧化锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、***钠、氯化铬,于500W的灭菌器中灭菌100s,灭菌后,平均分成5份,形成功能袋;
将大豆油于500W的灭菌器中灭菌100s,灭菌后,平均分成5份,形成能量袋。

1.一种双蛋白全营养配方食品,其特征在于每百克全营养配方食品中营养成分如下:蛋白12.10-38.70g、脂肪3.60-30.20g、碳水化合物67-77.31g、维生素A 189.21-927.60μg、维生素D 3.36-11.25μg、维生素E 3.36-33mg、维生素K1 18.59-185μg、维生素B1 0.40-4.50mg、维生素B2 0.35-3.5mg、维生素B6 0.43-5.24mg、维生素B12 0.53-5.30μg、烟酸0.89-8.9mg、叶酸93.81-938μg、泛酸2.69-58.50mg、维生素C 23.01-230mg、生物素8.85-88.5μg、钠458.48-646.90mg、钾1798.74-3125mg、铜245.20-2361.6μg、镁129.15-240.46mg、铁10.73-25mg、锌3.54-15mg、锰287.03-2966.9μg、钙287.63-750mg、磷372.26-1324.10mg、碘47.76-84.30mg、硒30.98-173.96μg、铬75-90μg。
2.根据权利要求1所述的双蛋白全营养配方食品,其特征在于:
蛋白的原料选自大豆蛋白与乳清蛋白组成的双蛋白;
脂肪的原料选自大豆油;
碳水化合物的原料选自羟丙基淀粉或麦芽糊精中的一种或多种。
3.根据权利要求1所述的双蛋白全营养配方食品,其特征在于:
维生素A的原料选自醋酸视黄酯、棕榈酸视黄酯或β-胡萝卜素中的一种或多种;
维生素D的原料选自维生素D2或维生素D3中的一种或两种;
维生素E的原料选自D-α-生育酚、dl-α-生育酚或维生素E琥珀酸钙中的一种或多种;
维生素B1的原料选自盐酸硫胺素或硝酸硫胺素中的一种或两种;
维生素B2的原料选自核黄素或核黄素5’-磷酸钠中的一种或两种;
维生素B6的原料选自盐酸吡哆醇;
维生素B12的原料选自氰钴胺;
烟酸的原料选自烟酸或烟酰胺中的一种或两种;
泛酸的原料选自D-泛酸钙;
维生素C的原料选自L-抗坏血酸、L-抗坏血酸钠、L-抗坏血酸钙或抗坏血酸棕榈酸酯中的一种或多种;
生物素的原料选自D-生物素。
4.根据权利要求1所述的双蛋白全营养配方食品,其特征在于:
钠的原料选自氯化钠;
钾的原料选自磷酸氢二钾、磷酸二氢钾、氯化钾或柠檬酸钾中的一种或多种;
铜的原料选自硫酸铜或葡萄糖酸铜中的一种或两种;
镁的原料选自碳酸镁、硫酸镁、氧化镁、氯化镁或L-苏糖酸镁中的一种或多种;
铁的原料选自葡萄糖酸亚铁、富马酸亚铁、硫酸亚铁、乳酸亚铁或琥珀酸亚铁中的一种或多种;
锌的原料选自硫酸锌、柠檬酸锌、葡萄糖酸锌、氧化锌或乳酸锌中的一种或多种;
锰的原料选自硫酸锰或葡萄糖酸锰中的一种或两种;
钙的原料选自碳酸钙、醋酸钙、氯化钙、柠檬酸钙、葡萄糖酸钙、乳酸钙、磷酸氢钙、磷酸二氢钙、磷酸三钙、硫酸钙、L-乳酸钙或甘油磷酸钙中的一种或多种;
磷的原料选自磷酸二氢钾;
碘的原料选自碘酸钾;
硒的原料选自***钠、富硒酵母或L-硒-甲基硒代半胱氨酸中的一种或多种;
铬的原料选自氯化铬。
5.根据权利要求2所述的双蛋白全营养配方食品,其特征在于:双蛋白的制备方法为:将乳清蛋白与大豆蛋白按质量比1:1-1.5的比例混合,形成物料,物料经超微粉碎工艺、微粒化工艺处理后得到双蛋白。
6.根据权利要求5所述的双蛋白全营养配方食品,其特征在于:超微粉碎工艺为:在气流压力为0.85-1.0MPa,气流温度为10-15℃的条件下,控制气流式超微粉碎机的变频电机转速为14500-16500r/min,将物料粉碎至粒度为5-8μm的蛋白粉体。
7.根据权利要求5或6所述的双蛋白全营养配方食品,其特征在于:微粒化工艺为:将蛋白粉体配成浓度为0.08-0.12g/mL的蛋白分散液,在85-95℃湿热处理25-35min后,采用转速为11000-12000r/min的高速乳化剪切机处理3-5min。
8.一种权利要求1所述的双蛋白全营养配方食品的制备方法,其特征在于:以双蛋白全营养配方食品质量100克计,将蛋白、碳水化合物、维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素、钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒、铬营养成分的原料灭菌后,平均分成5份,形成功能袋;
脂肪营养成分的原料灭菌后,平均分成5份,形成能量袋。
9.根据权利要求8所述的双蛋白全营养配方食品的制备方法,其特征在于:灭菌功率为425-500W,灭菌时间为100-120s,灭菌时原料的覆盖厚度为5-10mm。
10.一种权利要求1所述的双蛋白全营养配方食品的食用方法,其特征在于:
目标人群的年龄为18-64岁,不包括孕妇和哺乳期妇女;
用量为:0.4袋/(kg·d),总量不超过27袋;
按照以下两种方法之一食用:
(1)用300-400mL的开水降温至40-60℃,加入功能袋和能量袋中的营养物质,搅拌、摇匀后,直接饮用或经管饲摄入;
(2)将功能袋中的营养物质添加到不含有食盐的日常饮食中食用,日常饮食中含有的脂肪与能量袋中的脂肪含量一致。
