Abstract
本发明公开了稞稞降糖组合物,公开了一种低GI食品稞稞降糖压片食品的制备方法及应用,属于食品领域,原料包括青稞粉、燕麦粉、糜子米、奶粉、菊粉、赤藓糖醇、木糖醇、苦瓜、姜黄、碳酸钙、柠檬酸。该产品根据人群进行细分和营养强化,难以满足不同群体的营养需求和口味需求。制得的食品按照IS026642:2010规定的食物血糖生成指数人体实验测定方法进行测定后,显示其GI值小于55,属于低GI食品。该压片食品不但营养美味而且饱腹感强,更重要的是这款粥通过合理的配方搭配解决了难以低GI化的难题。

技术领域
本发明属于食品加工技术领域,具体涉及一种稞稞降糖组合物。
背景技术
随着生活方式的改变以及人口老龄化的加剧,糖尿病已成为我国继肿瘤、心血管疾病之后的第3位慢性非传染性疾病。据统计,2013年,我国糖尿病患病率已达到10.4%,成人糖尿病患者总数约1.144亿,已成为世界上患糖尿病人数最多的国家。同时,糖尿病的发病年龄正在逐渐年轻化。根据2012年的一项针对25376名青少年的糖尿病调查显示,2012年中国7-17岁儿童青少年糖尿病患病率为0.52%,且增长速度较为明显。除此之外,孕妇也是糖尿病人中不能忽视的一个群体。妊娠糖尿病是是围产期常见并发症,我国目前的妊娠糖尿病发生率为1.31%-3.75%,而且有逐年上升的趋势。
糖尿病人由于糖代谢紊乱,调控血糖能力差,不适宜摄入精白米面等GI值较高的谷物,因此主食的选择对糖尿病人来说尤为重要。全谷杂粮的GI值低,营养素密度高,膳食纤维含量高,饱腹感强,非常适合给糖尿病人作为主食。但由于杂粮结构紧密、烹调复杂,部分糖尿病人如上班族、学生等难以将其作为主食。将杂粮制成粉后,食用方便,用开水冲调即可。但由于破坏了其结构,GI值会相应上升,因此需要通过添加富含蛋白的原料来降低餐后血糖反应。
儿童、孕妇和中老年人对于营养素的需求各有不同,但现有的杂粮产品并没有根据人群进行细分和营养强化,难以满足不同群体的营养需求和口味需求。
发明内容
本发明涉及一种稞稞降糖组合物,其特征在于组分的重量为为:青稞粉 4.5-5.5g、燕麦粉2.5-3.5g、糜子米2.5-3.5g、奶粉1.5-2.5g、菊粉0.5- 1.5g、赤藓糖醇0.5-1.5g、菊粉0.5-1.5g、苦瓜100-150mg、姜黄30-45mg。
本发明涉及一种稞稞降糖组合物,其特征在于:苦瓜优选为苦瓜粉、姜黄优选为姜黄粉。
本发明涉及一种稞稞降糖组合物,其特征在于:还包含碳酸钙150- 200mg、柠檬酸150-200mg。
本发明涉及稞稞降糖组合物,其特征在于,所述糖尿病用营养成分的重量份数为:青稞粉4g、脱脂奶粉2g、糜子米3g、燕麦粉3g、苦瓜粉0.1 g、姜黄粉0.03g、赤藓糖醇1g、菊粉1g。
本发明涉及稞稞降糖组合物,其特征在于,摄入后与食用同等质量的葡萄糖,能显著降低血糖水平。
本发明涉及稞稞降糖组合物,其特征在于,根据人群(儿童、孕妇、老人)进行细分和营养强化,难以满足不同群体的营养需求和口味需求。
本发明涉及稞稞降糖组合物,其特征在于采用独立袋装,每袋15克。
本发明涉及稞稞降糖组合物,其特征在于食用方式为开袋即食。
本发明涉及一种稞稞降糖组合物,其原料组分按照质量包括:青稞粉5g、燕麦粉3g、糜子米2g、奶粉2g、菊粉2g、赤藓糖醇1g、木糖醇1g、苦瓜0.5g、姜黄0.5g。
另外,本发明涉及一种稞稞降糖组合物,其终产品优选:每100g中含有蛋白质21.2g,脂肪3g,碳水化合物68.3g,其中膳食纤维15g。
应当知晓的是,燕麦粉是指用完整燕麦进行粉碎所得到的粉状物。
上述糜子米,是中国传统主食,可制作多种面食,相对其他主粮富含VB1、 VB2、VE,更加适宜正处于长身体时期的儿童少年作为主粮和其他食物搭配食用。
上述奶粉是牛奶脱去水分制成的粉末,含α-乳清蛋白,更易吸收;益生菌与益生元的组合促进肠道功能;DHA促进大脑发育。
上述燕麦颗粒包括:优选以全燕麦为原料经过切割预熟制成的谷物颗粒,其中的蛋白质、脂肪、赖氨酸含量高;还富含亚油酸,长期食用,可降低胆固醇在心血管中的积累,对于防止老年高血压、糖尿病、高血脂等大有裨益。而且燕麦具有防癌、治疗便秘等医疗作用。
上述青稞颗粒包括:优选以青稞为原料经过切割预熟制成的谷物颗粒,富含多种酚类化合物、黄酮类化合物、β-葡聚糖、γ-氨基丁酸,能够有效降低胆固醇和低密度脂蛋白(LDL)的含量及动脉粥样硬化指数,抗氧化,降低心脑血管疾病风险。
上述菊粉中植物中储备性天然低聚果糖,富含膳食纤维有利于控制血脂,降低血糖值,促进矿物质的吸收,调节肠道微生物菌群,抑制有毒发酵无的生成,保护肝脏,防止便秘。
上述赤藓糖醇是一种新开发的四碳糖醇,可由葡萄糖发酵制得,零热量,有一定的甜味,可以作为代糖,改善食品口感而不引起血糖上升。
上述木糖醇是人体糖类代谢的中间体,在体内缺少胰岛素影响糖代谢情况下,无须胰岛素促进,木糖醇也能透过细胞膜,被组织吸收利用,促进肝糖元合成,供细胞以营养和能量,且不会引起血糖值升高,消除糖尿病人服用后的三多症状(多食、多饮、多尿),是最适合糖尿病患者食用的营养性的食用糖的替品。
上述苦瓜为市面上任意品种蔬菜,其中含苦瓜多肽类物质(每百克山苦瓜含多肽类物质25mg)、多肽类物质有明显的降低血糖的作用,调节血脂,提高免疫力的作用。因而营养学家和医生都推荐苦瓜为治疗糖尿病的良药。患有糖尿病的中老年人,可长期服用山苦瓜茶调养治疗。对血脂、血压、血糖以及肥胖症有良好的抑制和调节作用。
上述姜黄是用姜黄的干燥根茎磨成的粉,具有降血脂、抗肿瘤、消炎、增强免疫力的作用。
本发明又一方面提供糖尿病适用的低GI压片食品的制作方法,采用该制作方法得到的低GI压片食品具有较合理营养结构。

本发明的上述技术方案的有益效果如下:低GI压片食品相比起药物,是一种更健康、便宜、方便的控制血糖的方式,不仅能补充一定的优质蛋白质等其他营养素,还能通过餐前负荷减少正餐的摄入量,从而很好的控制餐后血糖,减少低血糖的发生几率。
本发明的组合物可以优选制备成代餐谷物粉。
本发明的组合物具有以下优势:
其一:能够有效改善糖尿病病人的餐后血糖指数,同时提供部分蛋白质及微量营养素,满足了糖尿病病人的营养需求。
其二:由于含较高的膳食纤维以及高密度淀粉,避免了糖尿病患者的饥饿感,使他们经理更加充沛,控制饮食的量。
其三:针对不同类型的糖尿病患者,对营养进行特殊处理,更符合不同人群的健康需求。
其四:取材广泛、价格低廉、使用方便。

经上述原料充分搅拌混合,得到糖尿病人适用的组合物。优选先天性糖尿病儿童。
实施例2
青稞粉4g、脱脂奶粉2g、糜子米3g、燕麦粉3g、苦瓜粉0.1g、姜黄粉0.03g、赤藓糖醇1g、菊粉1g、碳酸钙0.2g、柠檬酸0.2g、叶酸 0.2mg、维生素C0.2mg、碳酸钙0.1mg
经上述原料充分搅拌混合,得到糖尿病人适用的组合物。优选妊娠糖尿病妇女。
实施例3:
青稞粉4g、脱脂奶粉2g、糜子米4g、燕麦粉3g、苦瓜粉0.1g、姜黄粉0.03g、赤藓糖醇1g、菊粉1g。
经上述原料充分搅拌混合,得到高龄糖尿病人适用的组合物。

1.一种稞稞降糖组合物,其特征在于组分的重量为为:青稞粉4.5-5.5g、燕麦粉2.5-3.5g、糜子米2.5-3.5g、奶粉1.5-2.5g、菊粉0.5-1.5g、赤藓糖醇0.5-1.5g、菊粉0.5-1.5g、苦瓜100-150mg、姜黄30-45mg。
2.根据权利要求1的一种稞稞降糖组合物,其特征在于:还包含碳酸钙150-200mg、柠檬酸150-200mg。
3.根据权利要求1所述的稞稞降糖组合物,其特征在于,所述糖尿病用营养成分的重量份数为:青稞粉4g、脱脂奶粉2g、糜子米3g、燕麦粉3g、苦瓜粉0.1g、姜黄粉0.03g、赤藓糖醇1g、菊粉1g。
