Abstract

辣木叶为一种新资源食品,营养丰富。将辣木叶粉、大豆按一定比例混和,接种益生菌发酵,生产辣木酵素。以辣木酵素为原料,进而生产系列营养、健康食品(饮料)。

Description

辣木酵素
辣木营养丰富,辣木鲜叶蛋白质是牛奶的2倍,钙是牛奶的4倍,维生素A是胡萝卜的4倍,维生素C是橙的7倍,辣木叶干粉蛋白质含量接近大豆,是迄今已知最好的植物蛋白、维生素、矿物质等营养源。
大豆所含必需氨基酸组成与动物蛋白相似,生理价值高,富含不饱和脂肪酸、矿物质、B族维生素,可降低心脏病发病率。
将辣木叶粉、大豆按(1∶1-10)比例混和,接种益生菌进行发酵,生产辣木酵素。辣木酵素富含辣木叶、大豆营养成分和经益生菌发酵产生的大量营养活性成分,包括蛋白酶、脂肪酶、淀粉酶、天贝激酶、纳豆激酶、蛋白肽、必需脂肪酸、大豆苷元、维生素E、胡萝卜素、维B12、叶酸等。
益生菌可以是米根霉、少孢根霉、纳豆芽孢杆菌。
以辣木酵素为食材,进而生产系列营养食品、饮料:
1)固体饮料冲剂。
2)饼干,曲奇。
3)饮料。

二、辣木酵素系列食品
1、固体饮料冲剂;
1)活性辣木酵素
将发酵好的辣木酵素在无菌条件下搅碎,冷冻干燥,粉碎,分装为2-3g/袋。含辣木酵素全部活性保健成分,用温开水冲服。
2)辣木酵素冲剂
将发酵好的辣木酵素加荞麦、燕麦、葛粉、淮山、小米、玉米等五谷杂粮和花生、芝麻、核桃等果仁或苹果、葡萄、菠萝等果粒中的一种或多种搅拌,制粒、烘干,生产营养丰富兼具降血压、降血脂、润肠通便等保健功能的辣木酵素系列固体饮料。
2、饼干、曲奇
将发酵好的辣木酵素加于经酵母发酵好的面团,加荞麦、燕麦粉,添加辅料,搅拌均匀,成型、烘焙。
辅料:
辣木籽油、椰子油、糖、南乳、盐、小梳打等。口味分咸、甜两种。
3、饮料
将发酵好的辣木酵素打浆——过滤——调配(加浓缩果汁、果醋、稳定剂)——均质——灭菌——灌装(两片罐、三片罐、利乐包)。
生产系列辣木酵素饮料。

1.辣木酵素,是将辣木叶粉、大豆按一定比例混和,接种益生菌进行发酵,益生菌可以是米根霉、少孢根霉、纳豆芽孢杆菌。
2.用辣木酵素生产系列食品饮料:
1)固体饮料冲剂。
2)饼干,曲奇。
3)饮料。
