本发明公开了一种脆炸银鱼丸,由以下重量份的原料制成:银鱼200-210、锦灯笼1-1.2、牛蒡子0.7-0.9、生姜叶1-1.1、千锤打0.9-1.3、延胡索1-1.2、樱珠2-3、紫葡萄2-3、鸡脯肉4-5、青豆1-2、核桃仁2-3、红枣2-3、红辣椒1-2、酱油1-2、糯米粉2-3、小麦粉4-5、营养添加剂4-5;本发明的银鱼丸食味鲜美,香脆可口,添加的鸡脯肉、青豆、核桃仁等丰富了银鱼丸的口感和营养,其中青豆富含不饱和脂肪酸和大豆磷脂,有保持血管弹性、健脑和防止脂肪肝形成的作用,此外,本发明在加工过程中添加了多种中草药,具有清热解毒、利咽化痰、疏肝利尿的功效。

技术领域
本发明属于食品加工技术领域,涉及一种银鱼制品,尤其涉及一种脆炸银鱼丸及其制备方法。
背景技术
    银鱼是中国名贵水产品之一,被视为席上珍品,在国内外久负盛名。餐桌上的银鱼吃法各异,但随着人们对食物要求的提高,单一银鱼的营养不能满足人们日渐增长的需要,为此在本发明内增添了各种营养物质来均衡人们的需求。
发明内容
本发明克服了现有技术中的不足,提供了一种脆炸银鱼丸及其制备方法。
本发明所采用的技术方案是:
   一种脆炸银鱼丸,由以下重量份的原料制成:
银鱼200-210、锦灯笼1-1.2、牛蒡子0.7-0.9、生姜叶1-1.1、千锤打0.9-1.3、延胡索1-1.2、樱珠2-3、紫葡萄2-3、鸡脯肉4-5、青豆1-2、核桃仁2-3、红枣2-3、红辣椒1-2、酱油1-2、糯米粉2-3、小麦粉4-5、营养添加剂4-5;
所述营养添加剂由下列重量份的原料制成:刺五加叶1-2、当归叶1-1.2、狗脊0.8-1、白术1-1.3、人参叶1-2、紫米4-5、香草粉2-3、葡萄酒5-6、姜末1-2、猪肝10-15;      制备方法为:(1)将刺五加叶、当归叶、狗脊、白术、人参叶加4-5倍的水大火煎煮40-45分钟,压滤去渣,所得药液经喷雾干燥得药粉;     (2)猪肝切成细条用水冲洗后泡入葡萄酒内浸泡30-40分钟后取出上笼屉蒸熟后加入姜末捣烂得猪肝泥;      (3)将紫米入锅煮熟得紫米饭,将剩余葡萄酒及猪肝泥倒入紫米饭内拌匀并小火熬干,研磨得酒香紫米猪肝粉,再向酒香紫米猪肝粉内混入药粉和香草粉混合均匀,即得。
根据权利要求1所述的脆炸银鱼丸的制备方法,其特征在于包括以下步骤
(1)取新鲜活银鱼,放入1-2%的淡盐水内清养7-10小时,去除银鱼体内杂质,再取出宰杀洗净备用;
 (2)将锦灯笼、牛蒡子、生姜叶等中药加入4-5倍水,小火煎煮1-2小时后压滤去渣得中药液;取红辣椒晒干后研磨得红辣椒粉备用,将樱珠、紫葡萄去皮去核后浸入酱油内10-15分钟后榨汁得酱果汁,青豆、红枣加5-6倍水后打浆得红枣青豆浆;
 (3)取鸡脯肉烤干研磨得鸡肉粉,将核桃仁研磨成粉后与糯米粉、小麦粉、红辣椒粉混合,倒入鸡肉粉、中药液、营养添加剂、酱果汁、红枣青豆浆及剩余各原料充分混合后和成面团,再分割成乒乓球大小的小面团;
(4)将洗净的银鱼摆直冷冻硬后贯穿步骤(3)所得的小面团后入锅油炸,熟透后,取出晾干冷却即得。
    本发明的有益效果为:
    本发明的银鱼丸食味鲜美,香脆可口,添加的鸡脯肉、青豆、核桃仁等丰富了银鱼丸的口感和营养,其中青豆富含不饱和脂肪酸和大豆磷脂,有保持血管弹性、健脑和防止脂肪肝形成的作用,此外,本发明在加工过程中添加了多种中草药,具有清热解毒、利咽化痰、疏肝利尿的功效。

    一种脆炸银鱼丸,由以下重量份(公斤)的原料制成:
银鱼200、锦灯笼1、牛蒡子0.7、生姜叶1、千锤打0.9、延胡索1、樱珠2、紫葡萄2、鸡脯肉4、青豆1、核桃仁2、红枣2、红辣椒1、酱油1、糯米粉2、小麦粉4、营养添加剂4;
所述营养添加剂由下列重量份(公斤)的原料制成:刺五加叶1、当归叶1、狗脊0.8、白术1、人参叶1、紫米4、香草粉2、葡萄酒5、姜末1、猪肝10;      制备方法为:(1)将刺五加叶、当归叶、狗脊、白术、人参叶加4倍的水大火煎煮40分钟,压滤去渣,所得药液经喷雾干燥得药粉;     (2)猪肝切成细条用水冲洗后泡入葡萄酒内浸泡30分钟后取出上笼屉蒸熟后加入姜末捣烂得猪肝泥;      (3)将紫米入锅煮熟得紫米饭,将剩余葡萄酒及猪肝泥倒入紫米饭内拌匀并小火熬干,研磨得酒香紫米猪肝粉,再向酒香紫米猪肝粉内混入药粉和香草粉混合均匀,即得。
根据权利要求1所述的脆炸银鱼丸的制备方法,其特征在于包括以下步骤
(1)取新鲜活银鱼,放入1-2%的淡盐水内清养7小时,去除银鱼体内杂质,再取出宰杀洗净备用;
 (2)将锦灯笼、牛蒡子、生姜叶等中药加入4倍水,小火煎煮1小时后压滤去渣得中药液;取红辣椒晒干后研磨得红辣椒粉备用,将樱珠、紫葡萄去皮去核后浸入酱油内10分钟后榨汁得酱果汁,青豆、红枣加5倍水后打浆得红枣青豆浆;
 (3)取鸡脯肉烤干研磨得鸡肉粉,将核桃仁研磨成粉后与糯米粉、小麦粉、红辣椒粉混合,倒入鸡肉粉、中药液、营养添加剂、酱果汁、红枣青豆浆及剩余各原料充分混合后和成面团,再分割成乒乓球大小的小面团;
(4)将洗净的银鱼摆直冷冻硬后贯穿步骤(3)所得的小面团后入锅油炸,熟透后,取出晾干冷却即得。

1.一种脆炸银鱼丸,其特征在于由以下重量份的原料制成:
银鱼200-210、锦灯笼1-1.2、牛蒡子0.7-0.9、生姜叶1-1.1、千锤打0.9-1.3、延胡索1-1.2、樱珠2-3、紫葡萄2-3、鸡脯肉4-5、青豆1-2、核桃仁2-3、红枣2-3、红辣椒1-2、酱油1-2、糯米粉2-3、小麦粉4-5、营养添加剂4-5;

2.根据权利要求1所述的脆炸银鱼丸的制备方法,其特征在于包括以下步骤
