银鱼是中国名贵水产品之一,被视为席上珍品,在国内外久负盛名。餐桌上的银鱼吃法各异,但随着人们对食物要求的提高,单一银鱼的营养不能满足人们日渐增长的需要,为此在本发明内增添了各种营养物质来均衡人们的需求。
发明内容
本发明克服了现有技术中的不足,提供了一种清肺猪脑银鱼干及其制备方法。
本发明所采用的技术方案是:
一种清肺猪脑银鱼干,由以下重量份的原料制成:
银鱼200-210、鸡血藤1-1.2、白花蛇舌草0.9-1.2、海浮石1-1.2、挂金灯1-1.1、败酱草0.8-0.9、柠檬1-2、柚子2-3、杨桃2-3、猪脑4-5、蜂蜜2-3、荔枝1-2、豌豆粉3-4、芹菜2-3、鲜米5-6、红豆3-4、肥牛肉7-8、营养添加剂4-5;
所述营养添加剂由下列重量份的原料制成:刺五加叶1-2、当归叶1-1.2、杨梅叶0.8-1、白术1-1.3、人参叶1-2、紫米4-5、香草粉2-3、葡萄酒5-6、姜末1-2、猪肝10-15; 制备方法为:(1)将刺五加叶、当归叶、杨梅叶、白术、人参叶加4-5倍的水大火煎煮40-45分钟,压滤去渣,所得药液经喷雾干燥得药粉; (2)猪肝切成细条用水冲洗后泡入葡萄酒内浸泡30-40分钟后取出上笼屉蒸熟后加入姜末捣烂得猪肝泥; (3)将紫米入锅煮熟得紫米饭,将剩余葡萄酒及猪肝泥倒入紫米饭内拌匀并小火熬干,研磨得酒香紫米猪肝粉,再向酒香紫米猪肝粉内混入药粉和香草粉混合均匀,即得。
根据权利要求1所述的清肺猪脑银鱼干的制备方法,其特征在于包括以下步骤
(1)取新鲜活银鱼,放入1-2%的淡盐水内清养7-10小时,去除银鱼体内杂质,再取出宰杀洗净备用;
(2)将鸡血藤、白花蛇舌草等中药加入4-5倍水,小火煎煮1-2小时后压滤去渣得中药液;将肥牛肉切碎与猪脑混合搅拌成肉泥后用夹板夹扁烤干研磨得肥牛猪脑粉;
(3)红豆与鲜米清洗后混合入锅蒸煮得红豆鲜米饭,芹菜榨汁后加入豌豆粉搅拌得豌豆酱,取柠檬、柚子、杨桃、荔枝去皮去核处理后泡入蜂蜜内密封2-3天混合打浆后与豌豆酱、中药液、营养添加剂、红豆鲜米饭及剩余各原料充分混合后搅拌均匀得调味酱备用;
(4)将银鱼表面用刀划出平行条口,放入调味酱内搅合一下后撒上肥牛猪脑粉,入蒸笼蒸熟,晾干即得。

一种清肺猪脑银鱼干,由以下重量份(公斤)的原料制成:
银鱼200、鸡血藤1、白花蛇舌草0.9、 1、挂金灯1、败酱草0.8、柠檬1、柚子2、杨桃2、猪脑4、蜂蜜2、荔枝1、豌豆粉3、芹菜2、鲜米5、红豆3、肥牛肉7、营养添加剂4;

银鱼200-210、鸡血藤1-1.2、白花蛇舌草0.9-1.2、海浮石1-1.2、挂金灯1-1.1、败酱草0.8-0.9、柠檬1-2、柚子2-3、杨桃2-3、猪脑4-5、蜂蜜2-3、荔枝1-2、豌豆粉3-4、芹菜2-3、鲜米5-6、红豆3-4、肥牛肉7-8、营养添加剂4-5;
