Abstract

"PROCESSO PARA RECUPERAçãO DE AROMA DE CAFé". é descrito um processo para a recuperação de componentes de aroma do café moído. Coloca-se o café moído em um misturador. O café moído é umedecido, aquecido e exposto a pressão reduzida para proporcionar componente contendo gás contendo aroma. De 40% a 95% dos componentes de aroma no café moído são coletados do gás contendo aroma. Os componentes contendo aroma podem ser adicionados a extrato de café concentrado antes da secagem do extrato. O café moído produzido tem aroma e sabor muito aumentados e melhorados, particularmente beta-mirceno e limoneno aumentados na bebida de café reconstituída.
