Abstract
La presente comprende un proceso aplicable a reactores por lotes (batch) o en continuo (MuItistage Continuous Reactor), para la producción de edulcorantes (malto dextrinas y jarabes de glucosa), utilizando como materia prima almidón, mediante licuefacción y sacarificación enzimáticas. purificación por filtración y evaporación, calentamiento y agitación en las etapas del proceso y mantenimiento de condiciones específicas de concentración de sustrato, temperatura, concentración de enzima respecto al sustrato y pH. Los rangos de temperatura para la realización de los procesos enzimáticos en las diferentes etapas de producción de cada producto, se encuentran entre 55ºC y 95ºC. En ésta las etapas de la hidrólisis del almidón, conocidas como gelatinización y licuefacción, se desarrollan simultáneamente cargando almidón (entre 6% y 70% p/p) en diferentes momentos, es decir la licuefacción de la materia prima se lleva a cabo de manera gradual antes de la etapa de sacarificación con el fin de alcanzar conversiones y concentraciones hasta del 70% de sólidos solubles en el producto, sin que se presenten incrementos dramáticos en la viscosidad de la suspensión de almidón pre-gelatinizado o sin que se manifiesten subproductos indeseados (almidón retrogradado. Los jarabes obtenidos por este método son comercialmente viables y se logra un Equivalente de Dextrosa (ED) hasta de 60 en 260 minutos.
