Abstract
Se ofrece un nuevo ingrediente alimenticio funcional de soya. El ingrediente alimenticio funcional, contiene un material de soya con un contenido menor al65% de proteína de soya sobre una base libre de humedad. En una modalidad, el material de soya d el ingrediente alimenticio funcional, también tiene un índicede solubilidad en nitrogeno desde alrededor de un 30% hasta alrededor de un 80% y por lo menos una de las siguientes propiedades: una actividad en agua de 0,3o menor; un índice de toleranci a salina desde alrededor de un 30% hasta alrededor de un 80%; una capacidad de hidratacion en agua de por lo menos 3 veces elpeso del material de soya; una viscosidad de por lo menos 500 centipoise a una temperatura de 18*C hasta 25*C y un inhibidor de actividad de tripsina de por lomenos 10 unidades inhibidoras de tripsina por miligramo de material de soya. En otra modalidad, el material de soya del ingrediente alimenticio funcional,tiene por lo menos una de las siguientes propiedades: un peso de gel de por lo menos 30 gramos a una temperatura desde alrededor de 15*C hasta alrededor de25*C en 5 onzas de una pasta acuosa que contiene 5 partes de agua, por parte de material de soya por peso; y una resistencia del gel a la refrigeracion de po rlo menos 50 gramos, al ser combinado con 5 partes de agua por parte de material de soya por peso.
