Abstract
植物乳を含有する風味良好なラテ類などの容器詰め飲料を提供することを課題とする。飲料原料としての植物乳に、別途調製した植物抽出物の乳酸菌発酵物を、植物原材料由来の蛋白質として0.001重量%以上となるように飲料中に配合することで、高温での加熱殺菌により生じる植物乳由来の好ましくない風味や香気が抑えられ、風味良好な容器詰め飲料が得られる。植物抽出物としては大豆、アーモンド、オーツ、エンドウ、緑豆、ソラマメからなる群から選ばれる1以上の原材料の水抽出物が好適に用いられる。
Description
本発明は容器詰め飲料に関する。
食の嗜好の多様化、環境保護や健康への意識などを背景とし、植物性食品へのニーズが増加している。飲料分野においても同様であり、豆乳をはじめとする植物乳はそれらが主体のストレート飲料としてだけではなく、コーヒーや紅茶、抹茶を用いたラテ類などへの広がりも期待されている。
これらの植物乳は豆感、豆臭や穀物臭などと表現されることもある特有の好ましくない風味を有し、ラテ類などにおいては全体の風味バランスを損ねてしまう場合がある。特に高温加熱による殺菌工程を経る容器詰め飲料では植物乳由来の好ましくない風味や香気が増加しやすいため、その改良が望まれている。
これらの植物乳は豆感、豆臭や穀物臭などと表現されることもある特有の好ましくない風味を有し、ラテ類などにおいては全体の風味バランスを損ねてしまう場合がある。特に高温加熱による殺菌工程を経る容器詰め飲料では植物乳由来の好ましくない風味や香気が増加しやすいため、その改良が望まれている。
特許文献1はスクラロースの配合により加圧加熱殺菌の不快味をマスキングする技術であり、豆乳食品や豆乳飲料への適用についても記載されている。

本発明は植物乳を含有する風味良好な容器詰め飲料、より具体的には植物乳由来の好ましくない風味が抑制された飲料、特にラテ類などを提供することを課題とする。
特許文献1の技術は特有の甘味の質が好まれない場合がある。
特許文献2は酵素処理豆乳:発酵豆乳を4以下:1の質量比で混合することで、発酵豆乳飲料自体の不快な酸味を抑制する内容であり、未発酵の植物乳を含有する容器詰め飲料の風味改良に関する技術は開示されていない。
特許文献3は豆乳の好ましい風味や香味を増強する目的であり、加熱により生じる悪風味の抑制方法を提供するものではない。
特許文献4の技術は焙じ茶の香味が付与される用途に限定され、汎用的な方法ではない。
特許文献2は酵素処理豆乳:発酵豆乳を4以下:1の質量比で混合することで、発酵豆乳飲料自体の不快な酸味を抑制する内容であり、未発酵の植物乳を含有する容器詰め飲料の風味改良に関する技術は開示されていない。
特許文献3は豆乳の好ましい風味や香味を増強する目的であり、加熱により生じる悪風味の抑制方法を提供するものではない。
特許文献4の技術は焙じ茶の香味が付与される用途に限定され、汎用的な方法ではない。
本発明者は鋭意検討し、飲料原料としての植物乳に、別途調製した植物抽出物の乳酸菌発酵物を配合することでネガティブな香気をマスキングし、風味良好なラテ類などの容器詰め飲料が製造可能であることを見出し、本発明を完成させた。
すなわち本発明は、

本発明によれば、高温加熱による殺菌工程を経ても風味良好な、植物乳ラテ類などの容器詰め飲料を提供することができる。
以下、本発明を具体的に説明する。
(植物乳)
本発明は植物乳を原材料として配合した容器詰め飲料に関する。ここで植物乳(plant-based milk)とは、植物を原材料とし、その成分を水ないしは水性溶媒で抽出したものであり、植物ミルク、植物性ミルク(vegetable milk、plant milk)と称される場合もある。これらを水溶液や水分散液のまま用いる以外にも、水分の一部を除去して濃縮したものや、乾燥状態としたものを適宜水に分散して使用することもできる。たん白成分が高濃度、かつ高純度に抽出された分離植物性たん白、粉末状植物性たん白等を水に分散して用いることもできる。また大豆粉など、水不溶性の成分(おから、食物繊維)を含む原材料を水に分散させたものも同様に用いることができる。また脂質含量が低減された低脂肪豆乳や、脂質含量の高い豆乳クリーム等も同様に使用することができる。

原材料としての植物は例えば大豆、エンドウ、ヒヨコ豆、緑豆、米、オーツ、ピーナッツ、ココナッツ、カシューナッツ、くるみ、ピーカンナッツ、マカダミアナッツ、アーモンド、ヘーゼルナッツ、キャンドルナッツ、ブラジルナッツ、ヒッコリー、ピスタチオ、菜種、ヒマシ、綿実、アマニ、ゴマ、ルピナス、ベニバナ、アボガド、パーム核、ひまわり、シアナッツ等の豆類や穀物類、種実類などをベースとするミルク類が挙げられ、複数の組み合わせとすることもできる。
また、飲料中には植物乳以外に牛乳などの乳製品を併用することもできる。飲料中の全蛋白質中、植物由来の蛋白質が50重量%以上、好ましくは70重量%以上、さらに好ましくは90重量%以上である態様が例示される。

(植物抽出物の乳酸菌発酵物)
本発明においては植物抽出物、より具体的には植物原料からの水(ないしは水性溶媒)抽出物を乳酸菌発酵させたものを使用する。これを「植物抽出物の乳酸菌発酵物」と称する。
なお、ここでの「植物抽出物」とは前項「植物乳」と実質的に同一の範囲を包含するものであり、同様に定義される。すなわち「植物抽出物」とは植物原料からの水抽出物、これらの水溶液や水分散液、濃縮ないしは乾燥したもの、分離植物性たん白、粉末状植物性たん白、大豆粉等、さらにこれらを水に分散したもの、低脂肪豆乳、豆乳クリーム等が例示される。「植物抽出物」の原材料にも特に制限はなく、前項の植物乳の説明に例示した植物をいずれも用いることができる。特に大豆、アーモンド、オーツ、エンドウ、緑豆、ソラマメからなる群から選ばれる1以上が好ましい。大豆(低脂肪豆乳、無調整豆乳)、アーモンド、エンドウ、ソラマメからなる群から選ばれる1以上がさらに好ましい。また同一飲料中の「植物乳」と「植物抽出物」の原材料とする植物は同じでも、異なっていても良い。
本発明においては植物抽出物、より具体的には植物原料からの水(ないしは水性溶媒)抽出物を乳酸菌発酵させたものを使用する。これを「植物抽出物の乳酸菌発酵物」と称する。

「植物抽出物」が水溶液の場合はそのまま或いは適宜水で希釈し、濃縮物や粉末の場合は適宜水で分散、溶解し、乳酸菌発酵させて「植物抽出物の乳酸菌発酵物」を得る。糖類、油脂などの副原料を適宜添加してから発酵させてもよく、これらを含有する水中油型乳化物として発酵することもできる。得られた「植物抽出物の乳酸菌発酵物」を前項の植物乳と併用して飲料中に配合することで、風味良好な容器詰め飲料を製造することができる。
すなわち、本発明における「植物抽出物の乳酸菌発酵物」とは、植物乳を含有する容器詰め飲料の風味改良機能を有する、風味改良用組成物である。なお、牛乳など乳製品の乳酸菌発酵物であっても風味改良効果は認められるが、全体の風味バランスとしては植物原料を用いることが好ましい。
すなわち、本発明における「植物抽出物の乳酸菌発酵物」とは、植物乳を含有する容器詰め飲料の風味改良機能を有する、風味改良用組成物である。なお、牛乳など乳製品の乳酸菌発酵物であっても風味改良効果は認められるが、全体の風味バランスとしては植物原料を用いることが好ましい。
乳酸菌発酵に用いられる乳酸菌は特に限定されず、通常の発酵乳に使用する一般的な乳酸菌、例えば、ラクトバチルス・ブルガリクス、ストレプコッカス・サーモフィルス、ラクトバチルス・アシドフィルス、ラクトバチルス・ヘルベチカス、ラクトバチルス・ラクチス、ラクトバチルス・プランタラム、ラクトバチルス・サンフランシスコ、ラクトバチルス・パネックス、ラクトバチルス・コモエンシス、ラクトバチルス・カルバタス、ラクトバチルス・ブレビス、ラクトバチルス・ヒルガルディ、ラクトバチルス・カゼイ、ラクトバチルス・ルテリ、ストレプトコッカス・サーモフィルス、ストレプトコッカス・ラクチス、ラクトコッカス・ラクチス、ストレプトコッカス・クレモリス、ストレプトコッカス・ジアセチルラクチス、ロイコノストック・メセンテロイデス、ロイコノストック・クレモリス、ビフィドバクテリム属等の単独または混合物を適宜使用することができる。
発酵条件や方法も特に制限されず、公知の手段を適宜用いることができる。例えば発酵温度5℃~50℃、より好ましくは10℃~50℃、更に好ましくは20℃~45℃が例示できる。発酵時間としては1時間~30時間、より好ましくは2時間~20時間、更に好ましくは3時間~15時間とし、最終pH4.5~5とする条件が例示できる。
発酵条件や方法も特に制限されず、公知の手段を適宜用いることができる。例えば発酵温度5℃~50℃、より好ましくは10℃~50℃、更に好ましくは20℃~45℃が例示できる。発酵時間としては1時間~30時間、より好ましくは2時間~20時間、更に好ましくは3時間~15時間とし、最終pH4.5~5とする条件が例示できる。

本発明の技術は飲料全般に適用することができるが、密封容器に充填、密封し、加熱殺菌して流通、販売される容器詰め飲料において、その効果が顕著に発揮される。
本発明でいう容器詰め飲料の加熱殺菌とは、適用される法規(日本にあっては食品衛生法)に定められた条件に適合するものであれば特に限定されるものではない。例えばレトルト殺菌法、高温短時間殺菌法(HTST法)、超高温殺菌法(UHT法)などを挙げることができる。また、容器詰飲料の容器の種類に応じて加熱殺菌法を適宜選択することも可能であり、例えばPETボトルを飲料容器として用いる場合などはUHT殺菌が好ましい。また加熱装置や加熱方式にも特に制限はなく、例えば直接水蒸気を吹き込むスチームインジェクション式や飲料を水蒸気中に噴射して加熱するスチームインフュージョン式などの直接加熱方式、プレートやチューブなど表面熱交換器を用いる間接加熱方式など、公知の方法を採用することができる。

(植物乳の加熱による風味変化)
容器詰め飲料においては高温加熱(殺菌)工程において植物乳由来のネガティブな香気や風味が発生、増加する場合がある。これらは飲用時、経時的には主に中盤以降から後味にかけて感じられ、飲料の品質を損ねてしまう。
さらに具体的に説明すると、大豆粉を水に分散、溶解させて配合した場合には「きな粉」や炒り豆様の風味、大豆、エンドウ、緑豆等の豆類の水抽出物からは青草さやエグ味、オーツなどの穀物原料からは穀物臭、これらのように表現される違和感を有する風味が発生しやすい。これらは特にコーヒーや紅茶、お茶類等との相性を損ね、かつ飲料としての良好な余韻を邪魔してしまう。
また、ペットボトルや缶などの容器詰め飲料は常温で流通、保管されるため殺菌条件が厳しく、ネガティブな風味がより強く発現するという問題が起こりやすい。

飲料中の植物乳の配合量には特に制限はないが、蛋白質として0.01重量%以上、好ましくは0.03重量%以上、より好ましくは0.05重量%以上の配合が例示できる。また蛋白質+炭水化物の合計量として0.05重量%以上、好ましくは0.1重量%以上が例示できる。上限は特に設定されず、容器詰め飲料としての風味バランスや物性(沈殿)等を勘案して適宜調整することができるが、蛋白質として好ましくは3重量%以下、2重量%以下、さらに好ましくは1重量%以下、最も好ましくは0.5重量%以下とする配合が例示できる。
飲料の種類も特に制限されず、植物乳を主体、あるいは加水希釈したもの、さらにこれらにフルーツやチョコレートなどのフレーバリングを施したもの、コーヒーや紅茶、抹茶、ほうじ茶などを主体として植物乳を0.1~50重量%配合したラテ類、植物性ラテ類、植物乳ラテ類などが例示できる。
加熱により発生する植物乳のネガティブな香気や風味は、コーヒーや紅茶、お茶類との相性を損ないやすい。すなわち植物乳を用いたラテ類、特に容器詰め飲料においては、風味面での問題が顕著になるという課題があったが、本発明の技術を用いることで、これらを解決することができる。
飲料の種類も特に制限されず、植物乳を主体、あるいは加水希釈したもの、さらにこれらにフルーツやチョコレートなどのフレーバリングを施したもの、コーヒーや紅茶、抹茶、ほうじ茶などを主体として植物乳を0.1~50重量%配合したラテ類、植物性ラテ類、植物乳ラテ類などが例示できる。
加熱により発生する植物乳のネガティブな香気や風味は、コーヒーや紅茶、お茶類との相性を損ないやすい。すなわち植物乳を用いたラテ類、特に容器詰め飲料においては、風味面での問題が顕著になるという課題があったが、本発明の技術を用いることで、これらを解決することができる。
「植物抽出物の乳酸菌発酵物」の配合量にも特に制限はなく、前述した植物乳の配合量や飲料としての風味バランスにより適宜調整することができるが、植物抽出物、すなわち植物原材料由来の蛋白質(発酵前)として0.001重量%以上、好ましくは0.002重量%以上となるように配合することが望ましい。上限としては3重量%以下、2重量%以下、さらに好ましくは1重量%以下、0.5重量%以下とする配合が例示できる。
また、蛋白質+炭水化物の合計量として0.002重量%以上、好ましくは0.003重量%以上となるように配合することが望ましい。

飲料中におけるこれらの配合比は特に制限されないが、風味改良効果を得るためには植物乳由来の蛋白質を1とした場合の重量比として、「植物抽出物の乳酸菌発酵物」に由来する蛋白質、すなわちその植物原材料由来の蛋白質(発酵前)として0.01以上、好ましくは0.02以上、さらに好ましくは0.03以上とする配合が例示できる。この範囲にすることで、本発明はその効果を最大限に発揮する。
また、風味改良効果だけではなく「植物抽出物の乳酸菌発酵物」それ自体が有する風味を活かした設計とすることも可能である。その場合の配合量は、飲料全体の風味バランスを勘案しながら適宜調整すればよく、上限は特に制限されない。例えば植物乳由来の蛋白質を1とした場合の重量比で「植物抽出物の乳酸菌発酵物」に由来する蛋白質、すなわちその植物原材料由来の蛋白質(発酵前)として50以下、より好ましくは40以下、30以下、20以下、10以下、さらに好ましくは5以下、1以下、0.5以下とすることができる。
また、風味改良効果だけではなく「植物抽出物の乳酸菌発酵物」それ自体が有する風味を活かした設計とすることも可能である。その場合の配合量は、飲料全体の風味バランスを勘案しながら適宜調整すればよく、上限は特に制限されない。例えば植物乳由来の蛋白質を1とした場合の重量比で「植物抽出物の乳酸菌発酵物」に由来する蛋白質、すなわちその植物原材料由来の蛋白質(発酵前)として50以下、より好ましくは40以下、30以下、20以下、10以下、さらに好ましくは5以下、1以下、0.5以下とすることができる。
本発明の「植物抽出物の乳酸菌発酵物」は、植物乳とともに容器詰めされ加熱殺菌して飲料製品とする用途だけではなく、容器詰め植物乳に直接加える態様も含む。
ここで容器詰め植物乳とは一般(業務用含む)に流通する加熱殺菌済の植物乳のことであり、例えばカフェチェーン等において市販豆乳に本発明の「植物抽出物の乳酸菌発酵物」を混合し、ラテ類などの飲料として提供する形態が例示される。

飲料においてはコクや風味、良好な口当たりや飲み応えを付与する目的で食用油脂が用いられる場合があり、用途としてはカフェラテ、紅茶ラテ、抹茶ラテなどが例示される。
ここでの食用油脂は、予め水中油型乳化物として調製されたものを配合することで、飲料の乳化状態が安定し、また工程を簡略化することができるという利点がある。通常一般の飲料製造工程においては、予め調製された加熱殺菌済の水中油型乳化物が用いられることが多い。水中油型乳化物の油分含量は乳化物としての安定性が保持されていれば特に限定されないが、例えば5~50重量%、好ましくは10~46重量%が例示される。
飲料においてはコクや風味、良好な口当たりや飲み応えを付与する目的で食用油脂が用いられる場合があり、用途としてはカフェラテ、紅茶ラテ、抹茶ラテなどが例示される。
ここでの食用油脂は、予め水中油型乳化物として調製されたものを配合することで、飲料の乳化状態が安定し、また工程を簡略化することができるという利点がある。通常一般の飲料製造工程においては、予め調製された加熱殺菌済の水中油型乳化物が用いられることが多い。水中油型乳化物の油分含量は乳化物としての安定性が保持されていれば特に限定されないが、例えば5~50重量%、好ましくは10~46重量%が例示される。
本発明の植物乳は飲料の原材料として単独で配合することも、前述した水中油型乳化物の原材料の一部として配合することもできる。これらの手段を併用することもできる。
水中油型乳化物の原材料とした場合は水中油型乳化物としての加熱殺菌、飲料製造工程での加熱殺菌、少なくとも2回の加熱殺菌工程を経ることになる。すなわち植物乳由来のネガティブな香気がより発生しやすい条件であるといえる。しかし本発明によればその風味を効果的に改良することが可能である。
なお、本発明における「植物抽出物の乳酸菌発酵物」は水中油型乳化物の原材料の一部とすることも、飲料の原材料として別途配合することもできる。
水中油型乳化物の原材料とした場合は水中油型乳化物としての加熱殺菌、飲料製造工程での加熱殺菌、少なくとも2回の加熱殺菌工程を経ることになる。すなわち植物乳由来のネガティブな香気がより発生しやすい条件であるといえる。しかし本発明によればその風味を効果的に改良することが可能である。
なお、本発明における「植物抽出物の乳酸菌発酵物」は水中油型乳化物の原材料の一部とすることも、飲料の原材料として別途配合することもできる。
水中油型乳化物に用いる食用油脂としては特に制限はなく、例えば大豆油、菜種油、キャノーラ油、サフラワー油、ひまわり油、米糠油、コーン油、綿実油、落花生油、カポック油、オリーブ油、パーム油、パーム核油、ヤシ油、シア脂、サル脂、カカオ脂等の植物油脂、さらには乳脂、牛脂、ラード、魚油、鯨油等の動物性油脂が例示でき、上記油脂類の単独又は混合油、あるいはこれらの硬化、分別、エステル交換等の加工を施した加工油脂類をいずれも使用することができる。
植物乳を用いた飲料用途の場合は商品設計上、植物性油脂を主原料として配合される場合がある。

水中油型乳化物にはこれらの他にも本発明の効果を妨げない範囲で乳化剤、香料、増粘多糖類、ゲル化剤、塩類、キレート剤、色素、糖類などの副原料を適宜配合することができる。
水中油型乳化物の製造方法も常法によればよく、例えば油脂を融解してここに油溶性の原材料を溶解し、油相を調製する。別途水溶性の原材料を水に溶解し水相を調製、ホモゲナイザー等で攪拌、油相を添加し水中油型乳化物とし、更に高圧ホモゲナイザーにより乳化する。加熱殺菌はこの後で行う。
水中油型乳化物の製造方法も常法によればよく、例えば油脂を融解してここに油溶性の原材料を溶解し、油相を調製する。別途水溶性の原材料を水に溶解し水相を調製、ホモゲナイザー等で攪拌、油相を添加し水中油型乳化物とし、更に高圧ホモゲナイザーにより乳化する。加熱殺菌はこの後で行う。
飲料の製造方法としては以下が例示できる。温水に粉体原料、糖類などの原材料を溶解し攪拌混合、ここに植物乳及び食用油脂を含有する水中油型乳化物、「植物抽出物の乳酸菌発酵物」を加え、必要に応じ乳化剤、香料、増粘多糖類、ゲル化剤、塩類、キレート剤、pH調整剤、色素などの副原料を適宜配合し、均一に混合する。加温し均質化の後、容器に充填し加熱殺菌を行う。
以下に実施例および比較例を記載し、本発明をより詳細に説明する。なお、文中「%」及び「部」は特に断りのない限り重量基準を意味する。
(「植物抽出物の乳酸菌発酵物」の調製)
表1に示す各種植物抽出物(水抽出物)a~jを準備した。これを用いて表2の配合に従い、粉末は水に溶解ないしは分散、あるいは希釈して発酵前の蛋白濃度3.9%の各水溶液を調製した。ただしFは溶液が高粘度のため蛋白濃度1.9%とした。また、初発の菌数が多い可能性のある原材料は加熱殺菌を行った。ラクトバチルス・ブルガリカス及びストレプトコッカス・サーモフィラスを混合した乳酸菌スターターを各水溶液に対して0.01%添加し、37℃~40℃で約5時間発酵させた。発酵液はpH4.8±0.1に調整し、「植物抽出物の乳酸菌発酵物」A~Jとして以後の検討に用いた。
表1に示す各種植物抽出物(水抽出物)a~jを準備した。これを用いて表2の配合に従い、粉末は水に溶解ないしは分散、あるいは希釈して発酵前の蛋白濃度3.9%の各水溶液を調製した。ただしFは溶液が高粘度のため蛋白濃度1.9%とした。また、初発の菌数が多い可能性のある原材料は加熱殺菌を行った。ラクトバチルス・ブルガリカス及びストレプトコッカス・サーモフィラスを混合した乳酸菌スターターを各水溶液に対して0.01%添加し、37℃~40℃で約5時間発酵させた。発酵液はpH4.8±0.1に調整し、「植物抽出物の乳酸菌発酵物」A~Jとして以後の検討に用いた。
(水中油型乳化物(植物乳含有)の調製)
表3の配合に従い油脂を加温融解し、ここに油溶性成分(乳化剤)を加えて混合溶解し油相とした。別途、温水に水溶性成分(粉末状大豆たん白、植物乳)を溶解し水相を調製した。乳化タンクにて油相、水相を調合し、予備乳化、均質化の後、超高温滅菌装置により殺菌処理、冷却し、植物乳を含有する水中油型乳化物を得た。
なお表中原材料は以下を用い、水中油型乳化物中の植物乳由来蛋白質は0.9%、蛋白質及び炭水化物の合計量は2.6%と算出した。
植物油脂:精製ヤシ油(不二製油)
オーツミルク:「NEXT MILK」(ネクストミーツ)、蛋白質3.3%、炭水化物16.3%
低脂肪豆乳:「美味投入(R)」(不二製油)蛋白質5.1%、炭水化物3.4%
粉末状大豆たん白:「フジプロCLE」(不二製油)蛋白質86.3%、炭水化物3.5%
表3の配合に従い油脂を加温融解し、ここに油溶性成分(乳化剤)を加えて混合溶解し油相とした。別途、温水に水溶性成分(粉末状大豆たん白、植物乳)を溶解し水相を調製した。乳化タンクにて油相、水相を調合し、予備乳化、均質化の後、超高温滅菌装置により殺菌処理、冷却し、植物乳を含有する水中油型乳化物を得た。
なお表中原材料は以下を用い、水中油型乳化物中の植物乳由来蛋白質は0.9%、蛋白質及び炭水化物の合計量は2.6%と算出した。
植物油脂:精製ヤシ油(不二製油)

(容器詰め飲料(カフェラテ)の調製)
表4に従い、植物乳由来(水中油型乳化物に含有)蛋白質0.09%、植物抽出物の乳酸菌発酵物由来の蛋白質0.039%(Fのみ0.019%)に相当する配合の飲料を調製した。
まず水(温水)700gをホモミキサーで攪拌(8000rpm)しながらデキストリン、砂糖を加え、ここに先の水中油型乳化物、植物抽出物の乳酸菌発酵物、コーヒーエキス、pH調整剤、香料を順次加えて混合した。なおコーヒーエキスとpH調整剤は事前に混合して加えた。60℃に温調、5分間保持後pHを測定(PH7.0±0.1)、温水を加えて1kgに調整、均質化(15MPa)し、缶に190gずつ充填後レトルト殺菌を行い(130℃、10秒間)、植物性カフェラテ飲料を調製した。放冷後は室温(20℃)にて保管した。
なお、植物抽出物の乳酸菌発酵物をいずれも配合しないものをコントロールとした。
表4に従い、植物乳由来(水中油型乳化物に含有)蛋白質0.09%、植物抽出物の乳酸菌発酵物由来の蛋白質0.039%(Fのみ0.019%)に相当する配合の飲料を調製した。

(官能評価)
官能評価は飲料製品の研究開発に従事する熟練したパネラー7名で実施した。「加熱により生じた植物乳由来の豆感、豆臭や穀物臭をマスキングする効果」について、コントロールを基準として以下の観点で評価し、合議により判定した。評点3以上を合格とした。
5点:非常に効果あり
4点:かなり効果あり
3点:やや効果あり
2点:効果弱い(コントロールと同等)
1点:効果なし、またはコントロールよりも低下
官能評価は飲料製品の研究開発に従事する熟練したパネラー7名で実施した。「加熱により生じた植物乳由来の豆感、豆臭や穀物臭をマスキングする効果」について、コントロールを基準として以下の観点で評価し、合議により判定した。評点3以上を合格とした。
5点:非常に効果あり
4点:かなり効果あり
3点:やや効果あり
2点:効果弱い(コントロールと同等)
1点:効果なし、またはコントロールよりも低下
表5-1、2に示した結果の通り、いずれの「植物抽出物の乳酸菌発酵物」にも飲料の風味改良効果が認められた。原料としては大豆(低脂肪豆乳、無調整豆乳)、アーモンド、エンドウ、ソラマメが特に良好であった。
(実施例11)
既述「植物抽出物の乳酸菌発酵物」調製手順に従い、表6の配合にて「植物抽出物の乳酸菌発酵物K」(蛋白濃度3.9%)を調製した。これを用いて同様に容器詰めカフェラテ飲料を製造し、官能評価を行った。
評点は「4」であり、複数の植物原材料の抽出物を併用した乳酸菌発酵物であっても風味改良効果が認められた。
既述「植物抽出物の乳酸菌発酵物」調製手順に従い、表6の配合にて「植物抽出物の乳酸菌発酵物K」(蛋白濃度3.9%)を調製した。これを用いて同様に容器詰めカフェラテ飲料を製造し、官能評価を行った。
評点は「4」であり、複数の植物原材料の抽出物を併用した乳酸菌発酵物であっても風味改良効果が認められた。
(比較例)酸によるpH調整
表2、A~Dと同一の原料および配合にて蛋白濃度3.9%の水溶液を調製し、乳酸菌発酵を行わずに酸(乳酸)でpH4.8に調整した。これを「酸性組成物ア~エ」とした。各配合を表7に示した。
表4中「植物抽出物の乳酸菌発酵物」をこの「酸性組成物」に代えて同手順でカフェラテ飲料を調製し、官能評価を行った。
いずれも風味傾向が若干変化するものの、表8の評価結果に示す通りネガティブな風味をマスキングする効果はなく、風味改良効果は認められなかった。
表2、A~Dと同一の原料および配合にて蛋白濃度3.9%の水溶液を調製し、乳酸菌発酵を行わずに酸(乳酸)でpH4.8に調整した。これを「酸性組成物ア~エ」とした。各配合を表7に示した。
表4中「植物抽出物の乳酸菌発酵物」をこの「酸性組成物」に代えて同手順でカフェラテ飲料を調製し、官能評価を行った。
いずれも風味傾向が若干変化するものの、表8の評価結果に示す通りネガティブな風味をマスキングする効果はなく、風味改良効果は認められなかった。
(添加量の検討)
「植物抽出物の乳酸菌発酵物A」を用い、添加量(配合量)による効果の確認を行った。
飲料配合は表4に従い、植物抽出物の乳酸菌発酵物Aの配合量を1部(実施例1相当)、0.54部、0.26部、0.13部(実施例12~14)とし、水の量で調整して全体を各100部とした。既述の手順と同様に容器詰め飲料(カフェラテ)を調製し、官能評価を行った。
結果を表9に示した。いずれの添加量においても明確な効果がみられ、ごく微量で有効であることが確認できた。
「植物抽出物の乳酸菌発酵物A」を用い、添加量(配合量)による効果の確認を行った。
飲料配合は表4に従い、植物抽出物の乳酸菌発酵物Aの配合量を1部(実施例1相当)、0.54部、0.26部、0.13部(実施例12~14)とし、水の量で調整して全体を各100部とした。既述の手順と同様に容器詰め飲料(カフェラテ)を調製し、官能評価を行った。
結果を表9に示した。いずれの添加量においても明確な効果がみられ、ごく微量で有効であることが確認できた。
Claims (21)
- 植物乳、及び、植物抽出物の乳酸菌発酵物を含有する容器詰め飲料。
- 植物抽出物の原材料が大豆、アーモンド、オーツ、エンドウ、緑豆、ソラマメからなる群から選ばれる1以上である、請求項1に記載の容器詰め飲料。
- 植物乳由来の蛋白質1重量部に対し、植物抽出物の乳酸菌発酵物を蛋白質として0.01重量部以上含有する、容器詰め飲料。
- 植物乳由来の蛋白質1重量部に対し、植物抽出物の乳酸菌発酵物を蛋白質として0.01重量部以上50重量部以下含有する、容器詰め飲料。
- 植物乳由来の蛋白質1重量部に対し、植物抽出物の乳酸菌発酵物を蛋白質として0.01重量部以上1重量部以下含有する、容器詰め飲料。
- 飲料がラテ類である、請求項1ないし5いずれか1項に記載の容器詰め飲料。
- 大豆、アーモンド、オーツ、エンドウ、緑豆、ソラマメからなる群から選ばれる1以上の原材料の水抽出物を乳酸菌発酵してなる、植物乳を含有する容器詰め飲料の風味改良用組成物。
- 大豆、アーモンド、オーツ、エンドウ、緑豆、ソラマメからなる群から選ばれる1以上の原材料の水抽出物を乳酸菌発酵してなる、容器詰め植物乳を用いる飲料の風味改良用組成物。
- 飲料がラテ類である、請求項7または8に記載の風味改良用組成物。
- 植物抽出物の乳酸菌発酵物を配合する、植物乳を含有する容器詰め飲料の風味改良方法。
- 植物乳由来の蛋白質1重量部に対し、植物抽出物の乳酸菌発酵物を蛋白質として0.01重量部以上配合する、植物乳を含有する容器詰め飲料の風味改良方法。
