Abstract

Винахід стосується способу одержання ароматизованого харчового продукту або напою, який передбачає a) збирання ароматичної фракції з обсмаженої і меленої кави або з кавового екстракту у формі газу, що включає водяну пару, b) контактування вказаної ароматичної фракції з олією для видалення небажаних ароматичних сполук, а саме фуранів, піролів і/або тіолів, c) конденсування ароматичної фракції для одержання водної аромавмісної рідини, і d) поєднання водної аромавмісної рідини, з якої видалені небажані ароматичні сполуки, а саме фурани, піроли, тіоли, із композицією харчового продукту або напою, причому стадію с) виконують до або після стадії b).
