Abstract
Description
i)芳香画分を、焙煎挽きコーヒー又はその抽出物から水蒸気を含むガスの形態で収集するステップと、
ii)前記芳香画分を凝縮させて、水性芳香含有液を生成するステップと、
iii)前記芳香含有液を油と接触させて、望ましくない芳香化合物を除去するステップと、
iv)望ましくない芳香化合物が除去された前記水性芳香含有液を、可溶性コーヒー抽出物と合わせるステップとを含み、
芳香を収集する焙煎挽きコーヒーが、少なくとも5重量%のロブスタコーヒーを含む、方法である。
i)芳香画分を、焙煎挽きコーヒー又はその抽出物から水蒸気を含むガスの形態で収集するステップと、
ii)前記ガス状芳香画分を油と接触させて、望ましくない芳香化合物を除去するステップと、
iii)油と接触させた前記ガス状芳香画分を凝縮させて、水性芳香含有液を生成するステップと、
iv)望ましくない芳香化合物が除去された前記水性芳香含有液を、食品又は飲料組成物と合わせるステップとを含み、
芳香を収集する焙煎挽きコーヒーが、少なくとも5重量%のロブスタコーヒーを含む、方法である。
国際公開第01/13735号パンフレットに開示されている方法を用いて、水性のコーヒー芳香を、湿潤焙煎挽き100%ロブスタコーヒーからストリッピングし、凝縮させた。芳香を取り出した後、2つの生成物流(ストリッピングされた湿潤コーヒー残渣及び水性芳香)を得た。
水性のコーヒーの芳香を、湿潤焙煎挽きロブスタコーヒーからストリッピングし、凝縮させた。コーヒーを平均サイズ2.0〜2.2mmに挽き、湯で焙煎挽き重量の30%に湿潤させた。コーヒーを、約6〜8分間蒸気を用いてストリッピングした。蒸気をコーヒーベッドに供給し、コーヒーベッドを通過させた後収集した。次いで、蒸気及び水性のコーヒーの芳香を凝縮させ、約10℃に冷やした。凝縮の後、凝縮できないガスを、温度を20℃未満に維持しながら、液封圧縮機を用いて3.1baraまで圧縮した。この時点で、凝縮できない蒸気流は、ステンレス鋼構造化充填物を充填した吸収カラムを通過した。使用した吸収液は、コーヒー油であった。油カラムは、油が凍結しないのに十分な温度に維持した。いくらかの水性芳香を含有する蒸気及び芳香の豊かなコーヒー油を、さらなる加工処理のために吸収カラムから取り出した。
Claims (18)
- 芳香を付けた食品又は飲料製品を製造する方法であって、
a)芳香画分を、植物材料から水蒸気を含むガスの形態で収集するステップと、
b)前記芳香画分を油と接触させて、望ましくない芳香化合物を除去するステップと、
c)前記芳香画分を凝縮させて、水性芳香含有液を生成するステップと、
d)望ましくない芳香化合物が除去された前記水性芳香含有液を、食品又は飲料組成物と合わせるステップとを含み、
ステップc)がステップb)の前又は後で行われる、方法。 - 前記芳香を付けた食品又は飲料製品を乾燥させて、芳香を付けた乾燥食品又は乾燥飲料製品を製造するステップをさらに含む、請求項1に記載の方法。
- 芳香含有ガスが、蒸気を用いて植物材料から芳香をストリッピングすることによって収集される、請求項1又は2に記載の方法。
- ステップc)がステップb)の前に行われ、ステップb)で前記水性芳香含有液及び前記油を接触させるのに多孔質疎水性膜が使用される、請求項1〜3のいずれか一項に記載の方法。
- ステップc)がステップb)の後に行われ、ステップb)がガス−液体吸収カラム内で行われる、請求項1〜3のいずれか一項に記載の方法。
- 前記植物材料が、コーヒー豆、コーヒー抽出物、茶葉、ココア、茶抽出物、果実、及び果汁から選択される、請求項1〜5のいずれか一項に記載の方法。
- 前記植物材料が焙煎挽きコーヒー豆である、請求項6に記載の方法。
- ステップb)において、望ましくない芳香化合物が除去された前記水性芳香含有液をコーヒー抽出物と合わせて、芳香を付けたコーヒー抽出物を生成する、請求項7に記載の方法。
- ステップb)において、望ましくない芳香化合物が除去された前記水性芳香含有液をクリーマー組成物と合わせて、芳香を付けたクリーマー組成物を生成する、請求項6に記載の方法。
- 前記芳香画分が、少なくとも5重量%のロブスタコーヒー豆を含む焙煎挽きコーヒー豆から収集される、請求項7〜9のいずれか一項に記載の方法。
- ステップd)における焙煎コーヒー豆の水性抽出物が、望ましくない芳香化合物が除去された前記水性芳香含有液と合わせる前に、少なくとも10%の固体含有率まで濃縮されている、請求項8に記載の方法。
- ステップd)における焙煎コーヒー豆の前記水性抽出物が、少なくとも5重量%のロブスタコーヒー豆を含む焙煎コーヒー豆から生成される、請求項7〜11のいずれか一項に記載の方法。
- ステップc)を芳香画分の冷却及び/又は圧縮により行うことにより、水性芳香含有液を生成する、請求項1〜12のいずれか一項に記載の方法。
- ステップc)の後に残留する芳香画分からのガスを1回又は複数のさらなる凝縮ステップで処理して、1つ又は複数のさらなる芳香画分を生成する、請求項1〜13のいずれか一項に記載の方法。
- 前記1つ又は複数のさらなる芳香画分の少なくとも1つが、ステップd)における望ましくない芳香化合物が除去された前記水性芳香含有液及び焙煎コーヒー豆の前記水性抽出物と合わせられる、請求項11に記載の方法。
- ステップd)において、望ましくない芳香化合物が除去された前記水性芳香含有液が、5重量%未満の油を含む、請求項1〜15のいずれか一項に記載の方法。
- ステップb)の油が、MCTオイル又はコーヒー油である、請求項1〜16のいずれか一項に記載の方法。
- ステップd)の望ましくない芳香化合物が除去された前記水性芳香含有液及び前記食品又は飲料組成物が、
i)芳香画分を、植物材料から水蒸気を含むガスの形態で収集するステップと、
ii)前記芳香画分を凝縮させて、水性芳香含有液を生成するステップと
を含む方法により生成した第2の芳香含有液とさらに合わせられる、請求項1〜17のいずれか一項に記載の方法。
