Основными компонентами рецептуры помадной массы являются сахар, патока, сгущенное молоко, масло сливочное и вкусо-ароматические вещества. Помадная масса представляет собой гетерогенную дисперсную систему, состоящую из трех фаз (твердой, жидкой и газообразной). Качество и консистенция помадной массы связаны с соотношением между твердой и жидкой фазами, а также с химическим составом массы. Особо ценится в помадной массе твердая фаза, которая состоит из мелкокристаллической сахарозы, полученной в процессе изогидрической перекристаллизации. Жидкую фазу помадной массы представляет эмульсионно-пенная структура, в которой сплошной средой является насыщенный сахара-паточно-молочном раствор, а дисперсной фазой - капельки сливочного масла и пузырьки воздуха. При этом белки сгущенного молока образуют оболочки на капельках жира и пузырьках воздуха, что стабилизирует эмульсионно-пенную структуру помады. При охлаждении помадной массы происходит кристаллизация сливочного масла, что придает структуре твердость. Таким образом, в помадной массе организуется структура, в которой дисперсной фазой являются несколько типов частиц (кристаллы сахара, капельки жира и пузырьки воздуха), а сплошной средой - насыщенный сахара-паточно-молочный раствор. The creation of such a complex dispersed system in the fondant mass in the form of a suspension of sugar in an emulsion-foam medium occurs due to milk proteins, which are surface-active substances (surfactants).
