Изобретение относится к кондитерской промышленности, а именно к производству молочных конфет типа «Сливочная тянучка» с использованием инкапсулированного растительного масла в оболочке из белок-полисахаридной смеси.The invention relates to the confectionery industry, namely the production of milk sweets of the type "Creamy Toffee" using encapsulated vegetable oil in a shell of a protein-polysaccharide mixture.
Наиболее близким аналогом к заявленному изобретению является традиционная технология приготовления конфет «Сливочная тянучка». Вначале готовят сахарный сироп. В емкость загружают сахар и добавляют воду в количестве 30% от массы сахара, смесь уваривают до температуры 100°С и содержания сухих веществ 78-82%. В полученный сахарный сироп добавляют сгущенное молоко, патоку, сливочное масло, рецептурную смесь перемешивают и начинают уваривать. Уваривание массы производят до температуры 114-118°С и содержания СВ=91-90%.
