Abstract
Un método para desgomar una composición aceitosa comprende las etapas de (a) proporcionar una composición de aceite que contiene una cantidad de fosfolípidos, (b) poner en contacto dicha composición de aceite simultáneamente con una o más enzimas de fosfolipasa A y una o más enzimas de fosfolipasa C, bajo condiciones suficientes para que las enzimas reaccionen con los fosfolípidos para crear productos de reacción de fosfolípidos, y (c) separar los productos de reacción de fosfolípidos a partir de la composición de aceite, la composición de aceite restante después de la separación es una composición de aceite desgomada, por lo que durante la etapa (b) la reacción de dicha una o más enzimas de fosfolipasa A procede a una velocidad más rápida de lo que lo haría en la ausencia de dicha una o más enzimas de fosfolipasa C.
