Claims (5)
- 맛을 보존하면서 장기간 보관이 가능하도록 제공되는 팩 들이 두부의 제조방법에 있어서,응고제가 들어간 두유를 응고 숙성시키는 제1단계,나머지 물을 탈수시키는 공정에 의해 생두부 원료물을 얻는 제2단계,제2단계에서 얻은 생두부 원료물에 식용유를 혼합하여 파쇄 혼합시켜 유동화시키는 제3단계,상기 공정을 거친 생두부 원료물을 팩에 충진하여 다시 한번 응고 숙성시키는 제4단계를 포함하여 이루어지는 것을 특징으로 하는 팩들이 두부의 제조방법.
- 제1항에 있어서,상기 제1단계과 제2단계공정 사이에 냉각공정이 추가되는 것을 특징으로 하는 팩들이 두부의 제조방법.
- 제1항에 있어서,상기 제2단계 탈수공정은 1차 탈수, 2차 탈수의 두 공정으로 수행되는 것을 특징으로 하는 팩들이 두부의 제조방법.
- 제1항에 있어서,제4단계 공정에서 팩으로 포장된 생두부를 온탕에 팩 째 집어넣어 재차 응고 숙성시키고 냉각하는 것을 특징으로 하는 팩들이 두부의 제조방법.
- 청구항 1 내지 청구항 4중 어느 한 항의 방법으로 제조된 팩들이 두부.
